Pineapple Mint Sangria

I have to be honest with you guys. This pineapple mint sangria recipe was born out of procrastination and a little bit of laziness. But sometimes the universe works in mysterious ways and last-minute creations end up surprising us and working out better than we ever anticipated. That was absolutely the case with this pineapple mint sangria!

A couple weeks before Chase’s first birthday party, I went on a Pinterest pinning spree and pinned a myriad of recipes, craft projects and decor ideas for his You Are My Sunshine themed party. One of the first drink recipes that popped out at me was a recipe for pineapple mojito sangria. I love mojitos – they’re my go-to cocktail in the summertime – and the addition of pineapple to the sangria recipe gave the drink a yellow hue that worked perfectly with our bright and cheery sunshine theme. I was instantly sold!

Pineapple Mint Sangria Recipe

The day before the party, I bought everything I needed to make the sangria and yet, when the party rolled around, it was the very last thing I made before guests arrived. When something is left to the last minute on party day, cutting corners seems to be the name of the game, so I omitted the more involved steps of the recipe that called for muddling mint with 1/2 cup of sugar and lime slices.

I decided to cut the sugar and lime from the recipe completely and we were left with a batch of pineapple mint sangria that ended up being a huge hit! I had multiple guests ask me for the recipe during and after the party and everyone said the same thing… They liked how the sangria was refreshing but not overly sweet. My biggest complaint with sangria is that it can sometimes taste like a total sugar bomb, so omitting the 1/2 cup of sugar from the initial recipe ended up being a great decision because we were left with a batch of sangria that let the flavor of the wine, fresh mint and pineapple juice shine through.

Mint Pineapple Sangria

I wanted to share this recipe with you guys today in case you have a party coming up or a craving for a glass of refreshing, summery sangria hits you on a hot summer day. It’s a great recipe that I couldn’t resist making again last weekend because we loved it so much. It’s like summer in a glass… with a little kick of rum and wine-induced fun.

An added bonus? It’s easy to double or even triple for a large crowd!

Description

This recipe for pineapple mint sangria is the perfect not-too-sweet sangria recipe for summer parties when you want to sip on a refreshing glass of sangria but don’t want to feel like you’re drinking a cup of sugar. Fresh mint, white wine and pineapple juice give this recipe a festive, summery flavor!


Ingredients

Scale
  • 1/2 cup white rum
  • 1 750-ml bottle sauvignon blanc
  • 3/4 cup pineapple juice
  • 1 cup chopped fresh pineapple
  • 4 cups lemon lime soda
  • 1 large bunch mint leaves, stripped from stem

Instructions

  1. In a large pitcher, add the fresh pineapple and pour the wine, rum, and pineapple juice over the top.
  2. Add fresh mint leaves and stir. Add lemon lime soda.
  3. Pour into glasses and garnish with additional pineapple slices and mint leaves, if desired. Enjoy!

    My whole side yard is mint! That’s a LOTTA mint. If anyone needs mint, let me know! I love to share. The mint looks so pretty with this drink and makes it look so fresh =) Very nice visual appeal.

    oh this is the perfect summer drink! Put mint in any drink and I’m sold. I make faux-mojitos by just mixing lime, mint and soda water together. Perfectly refreshing! 😀

    I always pin all these fun summer drinks and never make any of them because they seem too complicated. But this recipe seems easy enough! I love a not too sweet sangria and never thought of adding pineapple, YUM!

    Such a great call! I completely agree that sangria can be way too sugar filler – it sometimes tastes like I’m drinking dessert!

    Love that this can be made last minute, too. I have a recipe on my blog right now for Froze’ (Frozen Rose), but you definitely have to plan ahead a bit. This is the perfect alternative for when guests randomly pop by! (One of the neighborly perks I love about Denver. 🙂 )

    After not drinking from pregnancy and currently nursing a newborn I don’t really miss alcohol as much as I thought I would, but this recipe sounds delicious! I’m going to have to try it soon! And I love how it calls for simple “white rum”… It’s silly, but sangria recipes that call for random flavored alcohol make me not want to make them since I feel like I’ll never use the alcohol again.

    I am thinking of making this for 4th of July this weekend– if I wanted to sub out the lemon lime soda, do you think lemon lime seltzer would work?

      You definitely could! I would just be prepared for it to not be very sweet at all, as the lemon lime soda definitely adds sweetness to the drink that I do think adds flavor!

    This pineapple mint sangria looks so refreshing and perfect for summer entertaining! The combination of pineapple juice, mint leaves and lime slices sounds delicious. I love that it uses lighter liquors like white wine and gin to keep it from being too heavy.
