Growing Dumplings

Apparently dumplings grow when you place them in a bubbling bowl of chicken soup! chicken and dumplings 007After preparing a pot of chicken soup, I plopped several tablespoon-sized dumplings into the pot to simmer and cook.

Within minutes the dumplings nearly tripled in size.

To make the soup, I combined the following:

  • Four cans reduced sodium chicken broth
  • Two pulled, cooked chicken breasts
  • Three carrots, chopped
  • Two celery stalks, chopped
  • Approximately 2 c. chopped red potatoes
  • Salt and pepper, to taste

After letting the soup bubble and the flavors distribute for about 20 minutes, I prepared the dumplings, using directions I found on the side of a box of  Bisquick Heart Smart baking mix.

chicken and dumplings 013Though quite large, the dumplings were perfectly doughy and delicious. 

Wedding Box

While the soup was simmering on the stove top, I spent some time sorting through the numerous boxes of crafts, supplies and notes we have leftover from our wedding.

My goal is to get everything to fit into this box:

I have faith!

I want to keep copies of special items like our save the dates, programs, menus, and the like, but will be tossing magazine clippings, invitation ribbons, etc.  

Better get to it!

    You should make a nice scrapbook with the memories (programs, STDs, etc.) and save it to keep with your wedding album.

    I love the chicken and dumplings at Cracker Barrell . . . Right now I have two big rubbermaids (like ginormous ones) full of wedding junk. I’m hoping that the office doesn’t get taken over in the next six months!

    I did the same thing. I saved my most important things from our wedding memories in a box. You can do it! 🙂

    Our family friends used to make us chicken and dumplings anytime we all went on vacation in South Carolina. 🙂 Brings back so many memories! Yours looks absolutely delicious! And what a great idea to keep some of the things from your wedding. 🙂

    That soup looks so good, I love chicken and dumplings! After our wedding I put copies of our programs, save the dates, invites, table numbers, etc all in a shadow box and now it’s on display in our house. It’s a nice way to actually get to look at the stuff you created for the wedding on a regular basis!

    I love chicken dumplings but use cream of chicken soup instead. I agree a scrapbook would be a great idea for everything.
