Hummus Hoagies

Night one of New Recipes Week was a success!

Inspired by a recipe from Cooking Light magazine for Hummus “Cheesesteak” Hoagies, I made a fantastically cheesy hoagie, topped with hummus and sautéed sweet onion slices.

The bread made this hoagie extra special. I bought a foot long loaf of fresh, whole grain bread from the Publix bakery today and cut it down the middle. Ryan and I each had half and both raved about how fresh and nutty it tasted! 

After topping the bread with a thick slice of muenster cheese, I placed it in the toaster oven so the cheese would melt while I sautéed a thinly sliced onion in a bit of olive oil.

Once the bread was done toasting, I topped one half of the hoagie with hummus before folding the bread together.

The hoagies were enjoyed with a spinach salad topped with strawberries, walnuts and pomegranate dressing.

After dinner Ryan and I took Sadie on a 30 minute walk.

During the first half of our walk, we got caught in a sun shower which actually felt quite nice and offered sweet relief from the heat that is already kickin’. Summer is here in Florida!

Plans for this evening include watching The Bachelorette (YAY!) and sorting through the scraps of paper with various workouts jotted on them that have taken over my gym wristlet.

I love keeping a variety of workouts in my teeny gym bag but my current stash is out of control and I cannot zip my wristlet!

When I’m feeling indecisive at the gym, having a plethora of workouts at my fingertips really helps to motivate me. I simply dig through the wristlet until I find one that jumps out at me. I don’t need that many workouts, so I’m hoping to toss about half of the ones you see above and regain control of my wristlet.

    The best thing about my job is that I can just make up workouts and go with it. Except when they fail and 20+ people are looking at me like I am cray cray.

      A ‘sun shower’ is when it rains when the sun is shining. It’s a regional term and a lot of places don’t really have a word for this…

    I always have hummus wraps, but I’ve never thought to put it into a hoagie form! Looks so delicious, especially with the sauteed onions… can’t wait to try this out!

    I always find workouts online and just a picture of it on my phone haha 🙂 That way I head off to the gym and just have the picture in front of me instead of having to carry an extra thing around.

    I should really pick a wristlet to use for the gym. Instead I stuff everything I need in the pockets of my sweatshirt but a wristlet would be MUCH easier. And leave me with less of a risk of losing something…haha!

    This is such a good idea! I started the idea of making a new recipe each night, too! Thanks for the idea, and I started with a rosemary pork dish, with roasted potatoes and green beans. And, I’m going to make the recipe you suggested with sweet potatoes, caramelized onions and goat cheese!!!

    I love the idea of a wristlet gym bag! I have workout papers all over my car…and it’s driving my husband crazy! This is definitely the solution I’ve been looking for. Also…those hoagies look crazy simple and delicious! Definitely making it into my week! Thank you for so much inspiration 🙂

    I keep a little, mini notebook in my gym bag to write stuff down. Especially what the trainer does with me. Seems to work.

    Yummm just ate some hummus! My current obsession is TJ’s 3 layered hummus, with roasted pepper, garlic, and zesty cilantro hummus. All 3 flavors are delish!

    Recently I started taking pictures on my phone of all my workouts and created a separate file for them. So if I want a certain workout while I’m at the gym, I just have to take a look at my phone and it’s right there. So easy!

    I was never really excited about Hummus. I tried it several times, but I guess the blandness just didn’t allow me to want to eat it a lot, but the other day I found a Chipotle Hummus and now I am in love. It has a bite to it but still has the creamy hummus taste. Love it. Do you have any recipes for a chipotle hummus?
