Summer Salad Recipes

Summer is the perfect time to enjoy light, refreshing salads that are easy to prepare and full of flavor. Salads are a staple in our household during the warmer months and I love the way they incorporate so many different textures, flavors and ingredients. If you think salads are boring, I’m convinced it’s because you’re either not making the right salads or you’re not using enough “fun stuff” to give them lots of flavor and interest. Hopefully I can help ya out with today’s blog post!

Whether you’re looking for a quick lunch, a side dish for your barbecue, or want to make a delicious salad for a potluck, the salad recipes you’ll see below are recipes worthy of any occasion, whether you’re enjoying a casual family dinner, packing a picnic or hosting a summer cookout with friends. The salads below feature a variety of ingredients and different types of summer salads, including everything from fresh greens and vibrant vegetables to one of our favorite summer pasta salads, some grain-based salads and more.

  • Tropical Salad with Citrus Vinaigrette

Tropical Salad with Citrus Vinaigrette

If you love a pop of sweetness in your salads, this tropical salad will be right up your alley. Fresh greens are topped with ripe summer berries and, if you’re craving more protein, it’s also delicious topped with grilled chicken or salmon.

  • Chickpea Salad

Chickpea Salad

The fresh dill in this recipe gives it a wonderful summertime flare. It’s great on its own for a light lunch or served as a side with turkey burgers or fish.

  • Cilantro Shrimp and Avocado Salad

This is, without a doubt, one of my favorite recipes that I’ve ever shared on PBF! It simply screams summer!

  • Edamame and Black Bean Salad

Edamame and Black Bean Salad

This salad comes together in less than 10 minutes and requires minimal chopping. It’s perfect for prepping ahead and bringing to work for a flavorful lunch and also makes a great side dish for summertime barbeques. It’s always a hit!

  • Asian Crunch Salad

Healthy Asian Crunch Salad with Broccoli Slaw

To keep this on the lighter side and add a punch of protein, this salad uses Greek yogurt instead of mayonnaise. The fresh broccoli slaw and sliced almonds give this salad its crunch while golden raisins and fresh orange slices add some sweetness to the mix. An added bonus? It tastes even better the next day so you can prep it ahead of time.

  • Spinach Salad with Easy Lemon Vinaigrette

Fresh Summer Salad Recipe

To make this salad, top a bed of fresh spinach with strawberries, raw almonds, apple and goat or feta cheese before drizzling everything with the super-simple homemade lemon vinaigrette dressing. Yum!

      I think it looks delicious too! Julie what protein do you think would pair well with this? I want to bring it in for lunch but need an extra something on the side to keep me going. Grilled shrimp maybe…?

    I read the title of this post and started singing my own “I’ve got that summertime summertime salad!” sooooooo that means two things: I’m excited about salads, and also my brain is ready for the weekend.

    I want to try this Asian salad! Also, I’ve been throwing strawberries in ALL my salads lately and just recently saw a recipe for strawberry salsa, love it!

    I love salad. And we’ll put pretty much anything on a salad. Left over taco meat, left over meat sauce from spaghetti, left over pulled pork…I think you see the trend 🙂

    Yum! These all look so good I’ll have to try them soon. I keep getting stuck in a salad rut, I find one I like and then make it for weeks on end. These are all really different than what I’ve been making and I’m excited to try them and branch out a little!
