Maple Walnut Pumpkin Spice Loaf

This maple walnut pumpkin spice bread is bursting with pumpkin flavor and naturally sweetened with delicious Canadian maple syrup. Whole grains serve as the base (oatmeal + whole wheat flour) and the fragrant cinnamon, nutmeg and cloves in this loaf make the whole house smell incredible.

I made this bread late Sunday morning after a long morning walk with Ryan and Sadie. As we walked, we started chatting about breakfast and I arrived home in the mood to bake. (What is it about lazy Sundays that always seems to put me in the baking mood?) I grabbed some pantry staples and got to work in the kitchen.

This is a one-bowl recipe, so don’t worry about a ridiculous amount of dishes piling up in the sink. You can also mix everything together vigorously with a fork, so a mixer is not needed either. It’s a simple loaf recipe that we absolutely loved in our house!

Ryan said it reminded him a lot of his all-time favorite two-ingredient pumpkin spice cookies, but I assured him it was much better for him since it didn’t involve the fake ingredients of boxed cake mix and incorporated whole grains, heart-healthy walnuts and natural sweetness from the Canadian maple syrup.

Canadian Maple Syrup

Pure Canadian maple syrup is completely unprocessed and contains beneficial vitamins and minerals, including potassium, manganese, zinc, and riboflavin and contains 54 different antioxidant compounds. Can regular sugar say that!?

This loaf makes a great breakfast (it’s delicious topped with peanut butter or almond butter) and is also the perfect sweet post-dinner treat.

Description

This maple walnut pumpkin spice bread is bursting with pumpkin flavor and naturally sweetened with delicious Canadian maple syrup. Whole grains serve as the base (oatmeal + whole wheat flour) and the fragrant cinnamon, nutmeg and cloves in this loaf make the whole house smell incredible.


Ingredients

Scale
  • 1 cup whole wheat flour
  • 1 cup plus 2 tablespoons instant oats
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Canadian maple syrup
  • 1 cup canned pumpkin
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 teaspoon vanilla
  • 2/3 cup chopped walnuts

Notes

  1. Preheat oven to 350 degrees and spray loaf pan with cooking spray.
  2. Combine flour through salt in a large bowl and stir to combine.
  3. Add Canadian maple syrup to through vanilla to flour mixture and stir until everything is combined. Fold in chopped walnuts.
  4. Pour into prepared loaf pan and bake for 45 – 50 minutes or until toothpick inserted into the center of the loaf comes out clean.
  5. Allow to cool before slicing and serving.

    These look delicious! I will need to try to get some Canadian maples syrup so I can make these this fall! I love that you can put all the ingredients in one bowl and don’t need a mixer. I love baking but hate the clean-up:)

    One can never go wrong with Canadian maple syrup, though I might be a little biased 😉 I always have a litre jug of it in my fridge, I use it in everything.

    Yum! That looks great. I’ve been wanting a reason to get some real maple syrup. There’s definitley a huge price dofference between that and the cheap, high fructose corn syrup stuff. Love the pumpkin towels ( : so cute!

    Just made this and I’m so happy with it. It smells divine and tastes just delicious, has the perfect amount of spice and I especially love the ground cloves in it.
