BLT Salad

Hello there and good morning to you! I hope the rest of your Wednesday went well! Our Wednesday evening was a nice combination of semi-active and relaxing. Once Ryan and I arrived home from work, we took Sadie on a chilly 30-minute evening walk before heading home for dinner. On the menu last night was a fresh, flavorful BLT salad from the Skinnytaste cookbook! (<—Highly recommended.)

Gina’s blog post earlier this week reminded me of the delicious-looking BLT salad I previously dog-eared in her cookbook. It sparked a craving and I am pleased to report that the salad tasted fantastic!

I followed the recipe almost exactly, but doubled the amount of avocado because Ryan and I are avocado fanatics. I also added a bit more light mayo to the “dressing” that comes together simply by combining sliced Roma tomatoes with light mayo, salt and pepper.

We enjoyed our salad with fresh cornbread (an odd combination, yes, but also quite tasty) and agreed it’s a recipe worth making again and again. I think it would be a fabulous addition to a summertime BBQ!

Today

On the agenda for today is more teaching + working! But first, I’m doing my best to assemble a bunch of paperwork to submit to NASM to keep my personal training certification active!

NASM recertification

Every two years, NASM Certified Personal Trainers are required to submit continuing education credits to keep their certification alive and stay on top of their game.

My work day will begin at 9 a.m. when I teach an indoor cycling class, so it’s time for me to boogie!! Have a great Thursday!

Question of the Morning

  • Where do you usually go to find new recipes? Cookbooks? The internet? Blogs?

When I’m looking for new recipe ideas, I will often Google certain ingredients I have on had to see if there are any fun new ways to use them that sound appealing. If I’m going to really sit down and make a meal plan, I love flipping through my cookbooks. There’s something I adore about curling up on the couch, holding a cookbook in my hand and finding new recipes to try!

    Even though I have a million cookbooks, I typically get most of my recipe inspiration from skinnytaste! It’s my go-to website when I need meal ideas.

    Blogs and Pinterest are my go-tos for recipe. If I see a recipe that looks good when I’m reading a blog, I’ll save it to my Pinterest. Then when it’s time to plan meals for the week I just look through my food board and all the recipes I want to try are in one place.

    I turn to Pinterest a lot! I have a board for recipes I’ve tried and liked, so if I’m ever stumped I have a go to recipe! I really like Skinny Taste too! I’ve never made a recipe I didn’t like, and it’s also a big hit with my husband! Congrats on Piyo!

    I was looking through a new cookbook on the couch last night! My boyfriend’s mom gave each of the couples a cookbook at Christmas and thought we could go back and forth about recipes throughout the year. A nice way to bond about food even when you live long distance. Your salad looks great!

    I usually use pinterest. But I also love looking through old cook books to find new inspiration. I love making older go-to recipes a bit healthier!

    Love that salad! Gina’s book is one of my favorites. Usually when looking for recipes, I turn to a few staple cookbooks, Pinterest and blogs.

    Also…this was a great reminder for me to begin compiling my CEU documentation for my NASM cert as well!

    I LOVE perusing through my cookbooks for new recipes. Pinterest can be a good resource, but there’s just something about flipping the pages of a real book 🙂 the salad you made looks delicious!

    Often times I get my recipes from the internet and other blogs. I do miss holding and looking through real cookbooks though. That salad looks awesome!

    New food ideas are usually garnered from Pinterest and other blogs. My favorite food blogs are Iowa Girl Eats and Gimme Some Oven. I do have several cook books that I used before Pinterest. I need to be more diligent with using them.

    I love pinterest but there’s just something about cookbooks that I love! I love that you posted a BLT salad because I was already planning on having that this weekend haha! But I wasn’t quite sure what to do for the dressing and now I know. I have some homemade mayo I made last weekend that will be perfect 🙂

    Gina at skinnytaste is my go to gal. Love her and her cookbook. I want to make this salad but am going to swap out the mayo ( don’t like it) for light sour cream. It works in deviled eggs and tuna so why not? ?!

    I have a big collection of cookbooks, but most the recipes I try these days come from blogs. It’s great to see all the different photos of the food, as well as comments about what worked and what didn’t in a recipe.

    I usually either hop on Pinterest and type in the main ingredient I want, OR, I dig through the cookbook that my family gave me when we got married, it’s loaded with recipes from family, friends, and bridal party members! 🙂

    I went through a huge cookbook phase bc I also LOVE collecting books in general, but then I found that it is much easier to just peruse the internet. I will buy cookbooks from people I really support, but in book form I am left with a finite number of recipes and then it just sits on the shelf.

    I like using a mix of the internet and cookbooks. I often pin a bunch of recipes throughout the week and then over the weekend when I am making my meal plan go back to them and chose a few to add to the schedule based on the ingredients I already have.

    I used to Google or turn to Pinterest for recipe inspiration. I’m trying to turn into a “real” cook (lol whatever that means?), so I asked for a Barefoot Contessa and Pioneer Woman cookbook for Christmas and have been focused on making their tried-and-true recipes lately. They definitely DO NOT disappoint!

    I love flipping through cook books either to find an exact recipe or just to get ideas for meals. I love your idea of googleing recipes for ingredients you have on hand. I’m trying to get better about using what I have at home, so this is an awesome tip!

    I use Pinterest, blogs, and a few recipe books that I have handy. Especially my Mom’s recipe book that she gifted me two years ago. It contains her recipes as well as some from my Grandma. Fun fact: My Grandma never wrote down her recipes, so while my Mom was learning how to cook from her she wrote down the recipes at the same time. It’s definitely the recipe book that I treasure the most.

    I’ve made a lot of recipes I found on Pinterest that have turned out great! I also started checking out cookbooks on my Kindle that look good.

    I love flipping through my cookbooks, too. Too often, though, they’re too complicated for me (I’m a lazy cook) so I just end up looking at the pretty pictures and putting it right back on the shelf. For my wedding (3 yrs ago) we got the Williams Sonoma couple’s cookbook and I have yet to make anything from it!

    I use instagram the most. I follow SkinnyTaste, Lean Green Bean, etc and then I ‘like’ anything that looks good or easy and then I’ll browse through my past ‘likes’ to pull ideas from. I also bookmark them in a Recipe folder if I see them on blogs.
    I now avoid Pinterest like the plague. There is a lot of great ideas, but its just too much fluff. I feel like its quickly turning into a lot of spam. Or I type in “healthy recipes’ and all it is junky food: “light” mac and cheese, “light” brownies, “light” milkshakes… and still nothing with actual veggies.

    Cooking has never come natural to me so I thrive off of good food blogs and Pinterest recipes. I love Ali’s blog, Gimme Some Oven and Skinnytaste, too! The recipes never disappoint and my weekly menu usually has recipes from one or both of those blogs. On a side note…if you like lemon and are looking for something to shake up plain yogurt – my husband and I just went to this awesome B&B for our anniversary and they served this delicious lemon curd for breakfast that I would add to the plain yogurt (along with a little of their homemade berry jam, granola, and fresh fruit) and I was hooked. I thought for sure the recipe was some family secret so when I asked I was mentally preparing to be denied, but it turned out that it is a simple recipe from Ina Garten.     Lately, mostly Pinterest is where I get my recipes. HOWEVER! I have to print them out or else “out of sight, out of mind” haha. So I have a HUGE 3 ring binder with clear sheets and I keep my recipes in there. Then I can just pull out a page/recipe, take it to the store with me if I need ingredients, and wipe it clean if – when! – it gets dirty when I’m cooking. 🙂

    I get a lot of my recipes from emilybites.com! I loosely follow Weight Watchers, and her recipes are the perfect “lightened up comfort foods” that are easy and affordable.

    I alternate between the internet and my collection of cookbooks/recipe clippings. When I’m actually cooking I prefer to work from a hard copy in an attempt to save my laptop from further abuse!

    One of my goals for 2015 is to make more recipes from cookbooks instead of turning to the internet all the time. I have some great ones by Nigella Lawson and Mark Bittman whose books are really fun to read in addition to having great recipes.

    I also made that same Skinnytaste salad earlier this week with hard boiled egg instead of avo (I’m allergic 🙁 ) and blanched asparagus — delicious!
