Breakfast Comeback

March 18, 2014 by Julie 70 Comments

When it comes to my morning meal, I seem to get super excited about one specific breakfast and eat it over and over again until, one day, I try something new and forget about my one-time favorites.

If you’ve been a PBF reader for a while now, you may remember my obsession with the following breakfasts:

  • Egg, jelly and cheese breakfast sandwiches
  • Yogurt bowls
  • Overnight oats
  • Smoothies
  • Protein pancakes
  • Baked oatmeal
  • Peanut butter and banana sandwiches

Just typing up that list makes me want to bring many of those meals back into regular rotation. Yum!

Another delicious breakfast favorite I forgot about? Oatless oatmeal!

oatless oatmeal

I made a bowl of the oatless oatmeal this morning and topped it with some frozen blueberries that defrosted in no time at all.

While I prepared my breakfast, I also snacked on a handful of roasted sea salt almonds.

Blue Diamond sea salt almonds

A hot mug of chocolate raspberry kiss coffee rounded out the meal!

Today is a busy one for me. Lots of work to do and I’m hoping to have a chance to complete an afternoon workout with one of my coworkers today, too!

Enjoy your Tuesday!

Go home camel

(I figured my fellow Geico camel-loving friends would like that one.)

See ya after lunch!

Questions of the Morning

  • What is one thing you used to make for breakfast all the time that you haven’t made in a while?

Yum, as a fan of overnight oats I’m curious to try these oatless oats! I used to make overnight oats in college after being inspired from muesli when I studied abroad (similar consistency but muesli is a little more pricey than oats!) Lately I’ve been loving paleo banana bread muffins I make ahead every weekend. I recently posted a link in my blog if anyone’s looking for an easy + filling muffin!

I used to be a HUGE toast person for breakfast. I ate toast every single day for years! Now I like to switch up my breakfasts. Right now I’m on a baked apple cinnamon quinoa kick!

Go to breakfast right now is a version of overnight oats, but with cooked steel cut oats, chia seeds, milk and fage with different flavors!! Yum! On the flavor rotation so far, good old peanut butter and banana, raspberry, and ‘carrot cake’. Refreshing and delish.
Also my all time fav that I’ve brought back latele, the egg sammie!!! Butternut bread with a runny fried or pached egg in the middle, yowza!
Now I must go read your post about the egg jelly and cheese sammie, intrigued 🙂

My go-to breakfast is Kashi cereal. I’m guilty of doing repeat lunches. I get obsessed with one thing (right now it’s almond butter sandwiches) and then eat it until I get sick of it and find something new.

I’m with you on the breakfast phase thing… Some of my past breakfast phases: overnight oats, “custard oats”, banana/PB/chia seed/honey on toast, and protein pancakes. My current breakfast phase that I haven’t been able to shake for MONTHS is Gina’s Protein Breakfast Cereal. It’s just so yummy, filling, and easy!

For years, breakfast was a bagel with cream cheese and a cup of tea. Then I went through a long phase where I skipped breakfast. Bad, I know. Now I’m back on the breakfast train and my go to is yogurt (I mix half Greek, half regular to get the taste and consistency I really like) topped with something crunchy, and some sort of carb with a little cream cheese or almond butter.

Breakfast would definitely have to be my most routine meal of the day. I always have a cub of coffee (with cream), a Chobani yogurt, and a banana with peanut butter. I typically work out right after I eat breakfast so I don’t like feeling too full or having something in my stomach that will make it upset. I will admit that I branch out on the weekends with egg scrambles and omelets.

Since my husband and I are doing Paleo/Whole 30 for the month of March, we have been rotating between sweet potato (with some green onions and bacon mixed in) & topped with a fried egg OR big spinach smoothies with half an avocado thrown in there. I do miss oatmeal though, so I will have to try out this non-oatmeal oatmeal 🙂

when it’s cold out i make oatmeal with an apple cut up in it. if you put the apple in with the oatmeal while it’s cooking it gets soft and the juice sweetens up the oatmeal.

right now i’m grabbing what ever is in the break room. that single cup cinnamon toast crunch is kinda calling my name.

They are so perfect for me to grab quickly on my way to work in the morning (although my coworkers and patients don’t particularly like to look at the green goo in my smoothie cup!) On Saturdays and Sundays though you better believe I am making oatmeal pancakes, waffles, or eggs!
