Chocolate Pumpkin Smoothie Bowl

Day three with our brand new Vitamix is upon us and you know what that means… Another blended breakfast!

When I started to think about what I wanted for breakfast, only one thing came to mind. Chocolate. Now, how can I eat a big chocolaty breakfast and still call it nutritious?

Smoothie time! I decided to veer from my typical smoothie concoction and instead make a thick and delicious bowl of chocolate fun!

Into the mix:

  • 1/2 can pumpkin, frozen (refrigerated pumpkin would also work)
  • 1 scoop chocolate protein powder
  • 1 heaping spoonful dark chocolate cocoa powder
  • Almond milk (just enough to get everything moving in the blender)
  • 2 pinches xanthan gum (for thickening)

The result was a cold and creamy bowl of chocolate!

I could barely taste the pumpkin and loved the chocolate flavor. Craving successfully satisfied!

I now have a hyperactive dog who needs some exercise to entertain. Catcha lata!

    Pumpkin and chocolate go so well together. I love how chocolatey that looks!! Sounds like the Vitamix is getting broken in quite well 🙂

    mmmmmmm cold chocolate 🙂 i would LOVE to have a vitamix, but the ninja will have to do for now! either way, as long as i’m getting chocolate in my body i think i’ll be OK!

    You can use pumpkin in brownies, too (once you can eat sweets again). Awesome texture.

    I looove smoothie bowls!! This recipe looks great. Do you think cutting down the pumpkin to maybe 1/4 a cup would eliminate the pumpkin flavor? (I just want mine to taste purely chocolatey :D)

    i’m new to your blog! & really enjoy reading it everyday! i was wondering about the xanthan gum…i’ve never tried it, but am seriously thinking about using it in my smoothies. do you know if its safe while nursing? and also for kids to have it as well? thanks!

    I eat pumpkin year round! There is no specific season for me. Okay maybe that’s a lie. Maybe I just eat more pumpkin than a normal person should during the fall.

    This looks just like my breakfast this morning! Definitely satisfies my chocolate/ sweet tooth without the guilt- except I made mine with frozen nanner & in a magic bullet 🙁 one day I will own a vitamix…I plan to be successful haha, or get married and register for one too ( marriage falls under the success category in my opinion!)
