If you can’t get enough coconut and love quinoa, I think today’s breakfast may be right up your alley.

This hot and creamy dish was a great alternative to basic oatmeal and the punch of coconut flavor was fantastic!

Description

This hot and creamy dish was a great alternative to basic oatmeal and the punch of coconut flavor was fantastic!


Ingredients

Scale
  • 1 (13.5 ounce) can light coconut milk
  • 3/4 cup quinoa
  • 1 thoroughly mashed banana
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsweetened shredded coconut
  • A few small drops of coconut extract (optional for more coconut flavor)

Instructions

  1. Combine coconut milk and quinoa in a saucepan and bring to a boil.
  2. Add mashed banana, cinnamon and nutmeg. Cover and reduce heat, allowing the quinoa to simmer for approximately 15 minutes, or until the coconut milk is absorbed by the quinoa.
  3. Stir in shredded coconut and coconut extract. Pour quinoa into bowls, topping it with nuts or fresh berries if desired.

I think that the banana in this dish gives it the perfect amount of natural sweetness, but if you hate bananas (Ryan cannot stand warm bananas), you can leave the quinoa unsweetened or add a sprinkle of brown sugar.

If you choose to make this ahead of time, you may need to add more milk to the quinoa in the morning to fluff it up a bit.

    This IS right up my alley! I make a big batch of steel cut oats every Saturday morning so I have a good breakfast before heading to the gym. I love the idea of mixing it up and using quinoa – and I have all the ingredients. I had never thought I would love toppings or nuts on oatmeal because growing up we only did milk and brown sugar but I’ve been missing out. Nuts in oats is the best thing ever and I think it would give this quinoa a great texture too!

    I wouldn’t have thought of eating quinoa for breakfast, but that looks sooo good, and I love coconut. I bet it would be great to put toasted coconut on top too (or instead of mixing it all in).

    omg I want to end up with Sean 😉 he seems pretty awesome. I like Ashley a lot (I’m kind of behind so she could have gone home already, idk), but she seems so sweet and genuine. I also love Desiree! She seems really fun.

    I LOVED Lesley. I kind of want to be her best friend. I was really sad to see her go, but they were just so awkward on their date. I like Desiree, but I feel like there’s something “off” about her, and I can’t quite figure out what. I really like Catherine, too!

    Sean’s sister’s blog is hilarious! I love her story about what she was wearing when she visited St. Croix. I’ve really liked Catherine from the beginning – she seems so sweet, low-maintenance, and genuine – and I was worried for a while because she was kinda rollin’ in the background, but she seems to be matching the other girls now! 🙂

    I’ve seen quinoa in breakfast dishes, but this one looks especially amazing.

    And I both love and hate that you’ve given me more ways to be obsessed with The Bachelor. I can tell that website is going to be a definite time suck.

    I was definitely rooting for DC Girl (aka- Lesley). I like Des a lot, but I’m not sure if that’s going to happen- seems like we will find out more next week! I think that, right now, I see Lindsay making it to the end 🙂

    I made something similar to that for breakfast today. It was coconut and banana steel cut oats in the crock pot. SO yummy.

    I absolutely LOVE Mix and Match Mama’s blogs!!! I’ve made a bunch of her recipes (she has quite a few crock pot recipes!) And her Bachelor recaps are awesome. I really love Des, but I think he’ll end up with Ashley (well, she’s my favorite, so I hope so!)

    Great recipe! Thanks for sharing. Oh, and I didn’t know Sean’s sis has a blog. I’m definitely going to check it out. I think I mentioned over here before that I like to read all the spoilers for The Bachelor / Bachelorette, so it’s hard to be unbiased in picking a fave. Aside from Tiera (and a couple of others), though, I think Sean had/has an AMAZING group of girls – like the best group of women ever. They all seem so interesting, funny, friendly, and just down-right sweet.
