Coffee Date + Overnight Oats

Hello! Today is the first day of fall and I think Charlotte got the memo. As I drove to Pure Barre this morning, it was 58 degrees which may not sound that cold, but it felt quite chilly to this Florida girl!

I had plans to meet up with a new friend at the 6 a.m. class today. Chandra recently moved to the Charlotte-area from San Diego and we’ve been emailing back and forth a bit after she reached out to me through the blog. Chandra actually tried out my Pure Barre studio a couple weeks ago and fell in love with it. We finally got around to making plans to attend the same class and get coffee together afterward this morning.

Another cinnamon dolce cappuccino for me! (They are the best and I love how many of you are quickly becoming as obsessed as I am with this drink! We should start a club.)

While we sipped our hot drinks, we chatted about moving, our new lives in North Carolina, Chandra’s recent wedding and other odd and ends for an hour. Before saying our goodbyes, we made plans for more Pure Barre and coffee dates in the future. I can already tell Chandra is a lot of fun and I’m looking forward to hanging out with her again soon!

Breakfast

Once I made it home, I grabbed the breakfast I prepped last night from the fridge.

I added a little more milk to a bowl of overnight oats and topped them with almonds and a drizzle of honey for some sweetness.

About 30 minutes later, I wanted a little something extra and assembled a small snack plate of three Natural Delights Medjool dates topped with peanut butter and cinnamon.

P.S. BIG congrats to my dad and Team Navy Jax for completing a 160+ mile bike ride from Jacksonville to Daytona and back on Saturday and Sunday last weekend. I’m so impressed and very proud!

    Today I went with an Americano with one pump cinnamon dolce and a splash of milk. So good! I like that it is just slightly sweet, not over the top.

    So glad you are experiencing some feelings of Fall! It is my favorite season and here in NC, we can really have some beautiful fall weather. This week looks very “fall-ish” before temps warm up a bit more toward the weekend. It sounds like you guys are loving NC so far and I am happy that you are and able to share some wonderful things about our great state on your blog!!

    Your date + PB mixture reminded me of when I did a Whole30 challenge with my work and I used to eat Sunbutter with dates. Have you ever tried Sunbutter?! It became a new addiction for me!

    Alright, I’m slowly becoming convinced to try that cinnamon dolce cappuccino. I’ve been loving the pumpkin spice flavored coffee from world market. It’s chilly up here in VA this morning and I’m loving it!

    Consider me already signed up for the Cinnamon Dolce Cappuccino club! (I already had 3 this past weekend…) Those dates look AWESOME! I’m never sure how to eat them, but now that’s all I want after seeing that amazing picture!

    I love having a Pure Barre workout buddy – my friend Kendall goes with me and at least once a week we grab coffee before heading back to office (we also work together!) – last week, we had a S’more’s Latte from a local French bakery – now I have her hooked on them! (Don’t worry – Cinnamon Dolce Cap’s are next!)

    I used Dates and Almond Butter as my fuel for during my last half-marathon. It was quite tasty…despite being a hot mess to deal with while running =).

      i’m pretty sure they have the sugar-free version of the cinnamon dolce syrup, since i do the skinny cinnamon dolce lattes once it starts to get cooler! it’s a trade off to do sugar free vs. regular sugar obviously but it would save on the calories 🙂

    I bet you’re going to love seeing the seasons change now! NC sure does fall right. See if you can get over to Asheville in the next few weeks to catch the leaves. Also might be worth planning a ski trip to Sugar Mountain for after thanksgiving. Both are only about an hour and a half from Charlotte.

    I usually go for vanilla when I want flavor in my latte. Mostly because “cinnamon dolce” is just too many syllables to bust out pre-caffeine! 🙂

    Do you drink regular milk or any kind of special milk like goat milk or almond milk etc? I wish I could drink milk but I can’t seem to do it!

      I love almond milk, so at home that’s usually what I drink or use in recipes. At Starbucks I just get regular milk though. 🙂

    I’ve never done overnight oats but yours look delicious with the honey and almonds. I’ve been on a chia pudding streak lately, but with the recent fall-like days we have had in Richmond, I think I need to give the oats a try! Definitely screams comfort:)

    I love Medjool dates but I wish I could find pitted ones around me! I hate trying to get the pits out. I make homemade almond butter and slather it all over them. They make a great snack!

    Im going to visit some inlaws in Raleigh next month and we already have a trip to the Pure Barre studio set up since the ones around me are all too far away. I cant wait!!
