Hummus Scrambled Eggs

July 3, 2012 by Julie 53 Comments

This morning I amped up the flavor of my scrambled eggs with a little somethin’ special.

Hummus!

I stirred a single serving Sabra hummus cup into three scrambled eggs while I let a chopped yellow squash and broccoli soften on the stovetop in a bit of olive oil.

I eventually combined everything for a yummy bowl of hummus scrambled eggs!

The hummus added a little punch of flavor to the eggs.

I am a fan!

Before signing off for the morning I have a couple of things to share that I figured I’d condense into a fun little roundup:

  • Best Body Bootcamp Registration: Tina’s Best Body Boot Camp registration is now open! A few of you asked me to share when Tina offered another boot camp program on her website and the time is now! I am all signed up and can’t wait to participate in the 8-week program again. The boot camp will run from July 23 through September 16.
  • Happy Birthday Allie! Allie’s adorable fiancé Mark emailed me yesterday to tell me about Allie’s special birthday today, so big HAPPY BIRTHDAY wishes are coming your way!
