Oatmeal Cookie Pancakes

Today was one of those Sundays where one breakfast simply won’t do.

After my smoothie this morning, my friend Laurel came over for a while and filled me in on her engagement and we discussed wedding planning until she had to leave for Jacksonville. Once she left, Ryan and I were both feeling a little hungry, so breakfast number two happened!

How good do those look?

I made the pancakes by playing around in the kitchen and experimenting a bit.

This is not the exact recipe since I just threw some stuff together, but the basic ingredients included:

  • 1 c. old fashioned oats
  • 1/3 c. whole wheat flour
  • 2 tbsp. brown sugar
  • 1 tbsp. chia seeds
  • 1 tbsp. flax seeds (or another tbsp. of chia seeds – don’t omit!)
  • 1/2 tbsp. baking soda
  • 2 tbsp. melted butter
  • 1 c. milk

I mixed everything together with a hand mixer before cooking the pancakes on a hot griddle (sprayed with cooking spray) until they were brown.

After topping them off with syrup, it was pancake-eatin’ time!

Oh man, these were good! They almost tasted like oatmeal cookie pancakes!

Gym Pics + Fro Yo Date

After breakfast round two, Ryan and I cleaned up around the apartment before heading out to our friend Ben’s gym (the same gym where we held the Blogger Boot Camp!).

We didn’t swing by Ben’s gym to work out though. We were there on a mission. Ryan is in the process of creating a workout website detailing different workouts every day. He has the framework of the site in place, but needs photos and other aesthetic things completed before officially launching the site, so we snapped some pictures of him going through five of the different workout routines he created.

I love the premise of his site since I am constantly looking for new workout ideas and scanning the internet for websites with quality workouts. I think he still has a bunch of things he wants to hammer out before his site is up, but I’ll be sure to keep you guys posted!

Since I was Ryan’s designated photographer, he rewarded me with fro yo after we were done!

My cup included pralines ‘n’ cream and peanut butter frozen yogurt, topped with Reese’s Pieces cereal, peanut butter M&Ms, whipped cream. Clearly I couldn’t resist a few bites before snapping a picture.

After enjoying our respective cups of frozen yogurt, we walked to The Fresh Market, located nearby to pick up some grillin’ goodies for this evening.

Once we arrived home, we curled up on the couch for a good hour to read Divergent together.

So far we are both loving it. It’s a really quick read and we’re almost exactly halfway done, so we’re anxious to wrap it up soon!

And now it’s BBQ time! Gotta go!

    Those look amazing!!
    I was out of flour this am and just food processed a cup of oats and it actually worked really well as a sub.

    O wow, how fantastic do those look! I always love having two breakfasts. That’s usually how my day goes… oats in the morning and a smoothie a few hours later. So jealous that you had FroYo this morning, I have been craving FroYo all day, but the place is just too far!

    First of all, those pancakes look outrageous. I need to try those this week! And the concept of Ryan’s site sounds awesome—I’m always looking for workouts to switch up my routine, so I look forward to seeing what he comes up with!

    Wow, where is that frozen yogurt from?! I love that you had cereal in your frozen treat… that’s a genius idea!!

    Of course after my crazy weekend of eating (deep dish pizza, Chicago style hot dog, chicken and waffles, turkey leg, nachos), I really don’t need any fro-yo… I need some lettuce haha! 😉

    Awesome weekend breakfast 🙂 I think some of the things you and Ryan do like “date night” and reading together is so great. You remind me a lot of myself when you’ve discussed needing your own space sometimes and when you’ve discussed fearing that you guys were living as roommates. My boyfriend and I are moving in together this coming September and I’ve already voiced some of those same fears. It’s great to hear some tips on what keeps you guys happy! I’m going to pitch the “reading together” idea I think :). P.s. Congrats to Ryan on the site!

    Those pancakes are so delicious! I’m totally a fan of multiple breakfasts, especially on weekends. I think I could eat cereal for all my meals and not feel guilty, but I do my best to stick to one bowl a day! 😉

    Aughhhh what to do?? I know I’m making pancakes for breakfast tomorrow. I already had a recipe in mind, but this one looks soooooooooooo good. Doggone. I’ll save this one for later. Do you think they’d work without the flax/chia seeds?

    Yay for Ryan! I did his cool shoulder move at the gym the other day and loved it. I am totally feelin’ it now! I’m sure that he will be able to help a bunch more people, too.

    I loved Divergent! I wanted to pace myself so that I could read it across the week we were at the beach, but that didn’t happen. I read it our 2nd day there after finishing The Girl in the Steel Corset (which is also a really good read) and finished it that day! I was so upset because it was so good, but now I’m waiting for Insurgent and I really don’t mind rereading it. It’s even better the second time around.
