Peanut Butter Crunch Baked Steel Cut Oatmeal

This recipe for peanut butter crunch baked steel cut oatmeal is packed with peanut butter flavor and makes a perfect lazy Sunday morning breakfast. It is a dish that can also be baked ahead and reheated throughout the week for an easy weekday morning meal! I am teaming up with McCann’s Irish Oatmeal® to share this recipe today and hope you love it as much as I do!

Peanut Butter Crunch Baked Oatmeal Recipe

A couple of weeks ago I shared a few pictures of a peanut butter-packed breakfast on Snapchat. It was a photo of a big ol’ tasty slice of peanut butter crunch baked steel cut oatmeal topped with creamy peanut butter and a bunch of you requested the recipe. Since I couldn’t get enough of the peanut buttery breakfast, I knew I needed to make it again and measure everything out so I could share it on the blog.

Peanut Butter Baked Oatmeal Ingredients

Like nearly every recipe I share on Peanut Butter Fingers, this recipe is an easy one! This baked steel cut oatmeal is perfect for whipping up after dinner and baking the night before you want a quick and filling breakfast. It can also be made on a lazy Sunday morning when you have a little more time to sit around, sip on a cup of coffee and enjoy the smell of a slightly sweet and hearty oatmeal breakfast baking away in your oven.

Peanut Butter Crunch Baked Oatmeal

The ingredients include a handful of pantry staples – steel cut oats, peanut butter, cinnamon, maple syrup – all personal favorites that come together to make a breakfast (or morning snack!) I am always in the mood to eat.

Steel Cut Oats

The base of this recipe is McCann’s Steel Cut Irish Oatmeal, a deliciously nutty-tasting oatmeal that is minimally processed with no artificial ingredients. It’s oats at their finest (100 percent whole grain!) and the chewy texture can’t be beat, especially when paired with creamy peanut butter and crunchy roasted peanuts.

McCann’s Irish Oatmeal also recently earned its first Non-GMO Certification from the Non-GMO Project for three of its core products — Steel Cut Irish Oatmeal in the 28oz. Tin, Quick & Easy Steel Cut Irish Oatmeal in the 24 oz. Canister and Quick Cooking Rolled Oats in the 16 oz. Box. Woop!

Peanut Butter Baked Steel Cut Oatmeal

Also, it’s worth noting for anyone out there who might not be a peanut butter fan that I have also made this recipe with almond butter and roasted almonds before and it was still quite tasty! I would imagine you can swap the nuts and nut butter in this recipe for your preferred nut of choice (or a combination of a few!) and the recipe would still yield a wonderful baked oatmeal breakfast! I might just add a little more cinnamon because I think the peanut butter gave the oatmeal a little stronger flavor than the almond butter, so keep that in mind.

Peanut Butter Crunch Baked Steel Cut Oatmeal

Peanut Butter Crunch Baked Steel Cut Oatmeal

Makes four servings

Ingredients

  • 1 1/4 cup McCann’s Steel Cut Irish Oatmeal
  • 1/4 cup creamy peanut butter
  • 1/2 cup unsalted roasted peanuts
  • 1 tablespoon coconut oil (melted)
  • 1 teaspoon cinnamon
  • 1 egg
  • 1/4 cup maple syrup
  • pinch of salt
  • 2 cups unsweetened almond milk (or milk of choice)

Directions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine steel cut oatmeal, peanut butter, peanuts, coconut oil, cinnamon, egg, maple syrup and salt. Stir to combine, taking care to incorporate the thick peanut butter so no large clumps remain.
  3. Add almond milk and stir. (The mixture will be quite liquidy, so do not be alarmed!) Pour mixture into a greased 8×8 baking dish.
  4. Bake for 55-60 minutes or until oatmeal is set and the center is fully cooked. Allow to cool before slicing.
  5. Top with additional nut butter, fresh fruit or Greek yogurt and enjoy!
  6. Store any leftovers in an air-tight container in the refrigerator.

Peanut Butter Baked Oatmeal Recipe

Feel free to top your baked oatmeal with a big scoop of creamy peanut butter, banana slices, Greek yogurt or fresh berries.

    Yum – this recipe sounds delicious!! I’m all out of steel cut oats so I’ll need to pick some up so that I can make this pronto. It sounds like something that could be made in a batch and reheated throughout the week.

    Does this recipe take 2 eggs or is there just an extra entry in the ingredients section? It says “1 egg” twice.

    YAY! I was one of the people who requested via SnapChat so I’m pumped to see the official recipe. And it’s totally getting made! I am also 100% considering throwing in some chocolate chips, because PB + chocolate is my life…or maybe some strawberries…hmm, so much possibility!!! Thanks Julie!!

    Quick question – Steel cut oats would work best right, and probably no quick oats? Only have quick oats on hand right now, but I can grab steel cut if necessary!

    Ooh, girl! This looks delicious. Can you believe I’ve never had steel cut oats? I love oats in general – and chewier things like farro – but I’ve just never purchased it myself. I’m going back to have to change that reeeeaaallly soon.

    This looks and sounds so delicious! I avoid oats bc they upset my stomach, do you think I could do this with quinoa flakes or another type of grain? I’m gluten free due to Celiac disease so I’m a little limited!

      Honestly I have never cooked with quinoa flakes, so I’m not sure! If you give it a try, please let me know how it turns out! Also, I have seen gluten-free steel cut oats for sale before (and they also have them on Amazon), so that might be a good way to go!!

      Steel cut oats are the way to go with this one, only because regular oats would likely yield a fairly runny recipe since steel cut oats soak up a LOT more liquid!     This sounds like a yummy recipe. I feel like it would be torture to make ahead the night before because you would have to smell the deliciousness knowing that you weren’t going to eat it until the next day. Well, I guess nobody is stopping me from eating it that night haha!

    Awesome! We love baked oatmeal and I’ve been wanting to try it with steel cut oats but rarely see any recipes for it. We are obsessed with your PB Oatmeal Cookie Dough overnight oats by the way…essentially the ONLY overnight oats we’ve ever liked.

    Wow!! Peanut butter, steel cut oats, cinnamon, maple syrup. I am so excited to try this recipe, I can hardy wait for Saturday!! My in-law’s kids are staying over this weekend and I love spoiling them with healthy and tasty recipes! (Mostly because they get a lot of “from-the-box” foods at home and very few fresh ingredients…) I think I am going to make this and serve it with a side of fresh berries. I’ll be sure to let you know how much they love it!!

    I made this last night and couldn’t wait to try it this morning. Well…it’s awesome! I didn’t have peanuts so I added some raw sunflower seeds and it worked really well. I used soaked oats because that’s what I do with my oats for nutrition. Due to that I used 1/2 cup less milk. It ended up being ready more quickly than your specified time; the oats are chewy but still cooked enough. Next time I might used the full amount of milk and cook longer to see if it’s softer and if I like it more. Thanks so much for a great recipe that the kids enjoyed as well!

    My three year old helped me make this for breakfast this morning. We doubled the recipe so we could have leftovers for tomorrow. He had so much fun helping and we all thought it was delicious! It was the perfect fuel before spin class. Thanks for a yummy recipe.

    Is it possible to substitute quick cook steel cut oats? If so, would the baking time or amount of liquid used need to be adjusted? Just trying to use what’s on hand versus buying another container of oats. Thanks!

    Great recipe! I made it this morning. While still warm, I covered the top with a layer or peanut butter then sprinkled flax and chia seeds and raisins. My 2 toddlers and I loved it as a “breakfast cake!” Also great for a nursing mama!
