Ricotta Protein Pancakes

Good morning!

Did anyone else’s sleep suffer last night because they stayed up late watching The Bachelor and After the Final Rose? I half-watched the finale (how obvious was it who the winner would be?), but was much more interested in the After the Final Rose show. Did anyone else watch? Thoughts?

Ryan even joined me for a bit of The Bachelor…

I told him Courtney was ahead by 20 points, which wasn’t a surprise since she was the number one seed. I think that if I discuss The Bachelor with him in sports-lingo his interest increases ten-fold.

Workout

Even though the drive to the gym this morning was a drowsy one, once I got going my workout ended up being pretty decent.

I completed the following cardio workout and was nice and sweaty by the end:

elliptical and treadmill workout

I followed it up with some stretching and ab work on the stability ball.

Breakfast

Breakfast this morning was very tasty!

I made a batch of protein pancakes using ricotta cheese, oats and egg whites.

Description

I made a simpler version of my protein pancakes using only 3 ingredients… the outcome was creamy and perfect!


Ingredients

Scale
  • 1 cup oats
  • 1/2 cup ricotta cheese
  • 3 egg whites

Instructions

blend the ingredients with an immersion blender before cooking the thick pancakes on the griddle.

They turned out great! I topped them with a sliced banana and a bit of syrup and dug in.

    I’m not a huge Bachelor fan, but I suffered when I stayed up to watch The Oscars a few weeks ago. Why are the best shows always on so late?!

    I usually love the Bachelor but I just couldn’t get into this season at all. I read the spoiler sites and once I found out who he was going to pick and after the first episode I stopped. I was not a Ben fan. I’m looking forward to Emily as the Bachelorette!

    Keith and I totally watched all three hours of The Bachelor last night. The only thing I can say about Courtney is that her dress at the end was stunning!!!! And that’s all I have ti say about that.

    But how cute were Ashley and JP on After The Final Rose? I really hope they make it!

    Stupid Ben. I was SO irritated when his sister came around to Courtney’s side. I thought she seemed sensible! When she said “I’m blown away,” I was praying that she would continue, “you moron, how can you not see through her?”

    I’m still proud of Emily, and I think it’s so cool that you got to meet her!

    I love that your protein pancakes include real high-protein foods like Greek yogurt, cottage/ricotta cheese, and eggs instead of protein powder. I am going to try the banana bread pancakes this weekend!

    I formerly hated Courtney but after she stopped acting out I don’t really find her irritating. Also I didn’t watch Ashley and JP’s season but wow I turned it off when she came on, I found her wayyyy more annoying than Courtney!

    Sorry I can’t relate to your Bachelor chat – I can’t say I’ve ever watched it! But pancakes – now that IS something I enjoy! I’ve never tried using ricotta because I tend to stick to Greek yogurt and cottage cheese, but that’s a great idea!

    I have a question about your tmill intervals – how do you make the tmill switch so quickly between 4.5 and 9.0? When you 20 seconds at 9.0 do you wait until the tmill actually hits that speed or do you start your 20 second count down from the time you start to increase the belt?

    In the past, when I’ve done intervals on the tmill I feel like I’m always fighting with the speed buttons!

      i usually start increasing the speed about 7 seconds before the “start” of the 20 second interval so i’m running fast by the time the 20 seconds start.

    My husband gives me SO much crap for watching the Bachelor! He thinks I watch it because I like to get swept up in the romance and fantasy dates. I’m like, “Uh…no way! I watch it for the competition and the cattiness!!” 🙂

    I stayed up watching and made it through about half of ‘After the Rose.’ I think that extra sleep would have been the better choice though! I don’t know about anyone else, but as much as I dislike Courtney I feel like her and Ben are made for each other. If that was the kind of girl Ben was looking for, than Lyndzi wouldn’t have been the right choice for him. She seems like an amazing and gorgeous woman, too good for bachelor Ben! Just my opinion! 🙂

    They SHOULD have a scoreboard…and “Fantasy Bachelor” just like they have Fantasy Football. Actually, that sounds disastrous and potentially catty, but entertaining too?

    I get to the gym at 5 am on Tuesdays to teach spinning class and have stayed up to watch the Bachelor EVERY Monday night. I am SO GLAD it’s over! I stayed up til 10:30 last night watching the stupid After the Final Rose.
    I am hurting today, for sure!

    My boyman told me I have to “kick the habit” of watching the Bachelor. hahahaha! I wonder if Ben & Courtney are gonna make it. Somehow, I doubt it. Though they do seem strangely enthralled with each other.

    I looove ricotta and cottage cheese in pancakes. I think Women’s Health has a recipe that I’ve used as a base for over a year (similar to yours!) and usually add some banana or pumpkin just to mix it up a little. These look great!

    I definitely watched The Bachelor but I have to say I thought it was a little boring!

    We all knew who he was going to pick in the end and frankly I was just kind of sick of hearing about him and Courtney.

    Then at the after show you still were left wondering are they a couple or not?

    Ashley and JP totally stole the show with their adorable-ness.

    Nice pancakes cinnamon would be good in them too 😀

    I’m so glad this season is over! I think Emily’s season is actually going to be pretty good–as long as Bentley doesn’t show up! Try getting Ryan to watch Bachelor Pad, since it is competition based my fiancée LOVES it (more than I do) and talks about it like it is the best thing to hit television since Leave it to Beaver.

    Sorry, I’m semi not understanding the running routine….when you get to minutes 5-15 are you swapping between 9.0 for 20 sec. and 4.5 for 40 sec. the whole time? Is that annoying to hit the button on the treadmill so much while you are running?

    Awesome you did 13 on the elliptical for 10 minutes, it’s all I can do to 8 or 9 on the elliptical for that long.

    I havent watched any of the bachelor this season but I did see the women tell all with my sis…OMG drama! I knew he would pick that hussie courtney! Anyway, I just pinned your recipe…we LOVEEEEEEEE your pancakes with protein powder, cottage cheese and egg whites!

    Those protein pancakes look great! I’ll have to try them.
    I’ll be honest, I don’t watch the bachelor, and I cannot get into it. I’m with ryan on needing to be updated with sports lingo to keep me interested! The only guilty pleasure show I have is Desperate Houswives, which has has gotten awful, but Its in its last season so I figure I’ll keep watching it until the end since I started it.

    Omg I’m going to pick up some ricotta just so I can make these! They sound delicious! And oh the Bachelor… of course I watched it but I’m a little frustrated with this season. Knowing who he was going to pick kind of took the fun out of it! And then on the ATFR, it just felt like maybe they were made for each other- I don’t really like either of them! Oh but question for you– this whole time I’ve been reading Ocala pronounced “O-Call-uh” but Ben pronounced it differently– how do you say it??
