I was busy making 16 dozen of these bad boys with my mother-in-law and her mother.
My mother-in-law’s house was taken over by Christmas cookies. Ryan helped out, but had to tap out early due to cookie dough overload. I was the next one down for the count. (We digested to the tune of Kindergarten Cop. Love that movie.)
Apparently sampling the dough and finished product runs in our mini-family. 😉
We hung around, chatting and enjoying Thanksgiving leftovers with Ryan’s mom and her boyfriend before hitting the road to my parents’ house in the early evening.
As we were heading to St. Pete, we got caught in a downpour. Once the rain subsided, a gorgeous complete rainbow could be seen. At one point there were two rainbows… a double rainbow! Ryan reacted like this guy. 😉
Once we arrived at my parents’ house, Ryan made some “Ryan’s surprise” cocktails and we hung out, playing a couple of rounds of Jenga before sitting down to Thanksgiving round two! Check out the gorgeous sweet potato casserole that my sister made: We called it an early night after watching Dave Chappelle’s stand up (quality family fun… listener discretion advised 😉 ) and chatting for a bit.
This morning I awoke craving more sweet potato casserole from last night’s dinner.
- 1 c. mashed sweet potato casserole
- 1/2 c. whole wheat flour
- 1/2 c. all purpose flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 2 eggs
- 1 1/2 c. milk
- Combine all ingredients and stir until fully mixed
- Spray griddle or pan with cooking spray and pour batter onto surface
- Flip pancakes when the top begins to bubble and the bottom is slightly browned
- Cook for another couple of minutes until the other side is golden brown
- Top with syrup, fruit or powdered sugar and enjoy
If you do not have leftover sweet potato casserole on hand and wish to make these pancakes, you can easily use mashed sweet potatoes in place of the mashed sweet potato casserole, though I would recommend adding brown or regular sugar to the batter for some sweetness.
Now we’re all feeling quite full!
My mom, sister and I have plans to go to Jazzercise together in an hour. Let’s hope I digest a bit before then and don’t completely cramp up! 😀
