Whole Wheat Pasta with Salmon

Tonight’s dinner had me sweatin’!

I wasn’t overheating because dinner was spicy. I was hot because I had the oven and stove going simultaneously and our house is 80 degrees since we have yet to use the air conditioner.

The added heat from the stove top and oven did a number on the temperature of our kitchen and I was quite toasty as I prepped dinner! I better buckle up, because it’s only going to get hotter in Florida from here on out.

Though I used the stove and the oven, dinner wasn’t particularly difficult came together quite easily in less than 20 minutes.

I made a  bowl of whole wheat pasta with salmon, feta cheese, green beans and spinach. (You better believe I wilted the spinach using my fancy new trick!)

The meal tasted fresh, wholesome and was nice and filling thanks to fibrous vegetables, hearty whole grains and protein. Oh baby!

Whole Wheat Pasta with Salmon

Serves One

Ingredients:

  • 2 ounces whole wheat rotini pasta
  • 1 handful fresh spinach
  • 1 cup chopped roasted green beans
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • Pinch of salt
  • 2 tablespoons feta cheese
  • 3 ounces cooked salmon

Directions:

  1. Cook pasta according to package directions.
  2. Rip fresh spinach and place at the bottom of a colander. Drain cooked pasta over spinach to wilt the leaves. Transfer pasta and spinach back into pot.
  3. Add green beans to pasta. Stir in olive oil, lemon juice and salt.
  4. Sprinkle pasta with feta cheese.
  5. Flake salmon with a fork and add to pasta. Stir to combine and evenly distribute all ingredients.

After dinner, Ryan and I entertained Sadie  and now we’re off to curl up on the couch and catch up on our latest favorite show, New Girl, that we DVRed last night.

    I LOVE New Girl- I watched it on the flight to and from Dubai and it was such great entertainment…no one else seems to have heard of it though! Is it popular in the US?

    Zooey is pretty adorable in that show. 🙂 I forgot to tell you, I tried your walnut oatmeal date balls, and they were fantastic! Tasty and a real energy boost!

    I don’t know how you don’t have your air on right now! I live in Gainesville, and the humidity and mugginess of the house without air during the day is just stifling! I don’t know how you do it.

    80 degrees?! It’s in the 50’s where I live right now. We had a tease of 70 degree weather last week and now it’s pretty chilly here.

    Wait..you don’t use the A/C? I am a Florida girl and couldn’t imagine not having my A/C on all the time…except for the few cold days a year. I’m in S. FL so I know its a tad cooler up by you, but I went to UF and I know the heat in the middle of the state! How do you function?!?! LOL

    If you like New Girl you should also check out Happy Endings. It’s on ABC on Wednesday nights. It’s probably one of the funniest and most underrated shows. I cry laughing almost every week!

    I love New Girl; I started watching because I’m a huge fan of hers since Elf. Modern Family still takes the cake though; that show is hilarious! 😉

    We’ve been watching New Girl and while it certainly isn’t our favorite show, we get a few laughs out of it. I kind of really liked Justin Long as her boyfriend! I’m not so sure about Fancyman, but at least he’ll class up their group a bit. Maybe.
