Whole Wheat Pasta with Salmon

Tonight’s dinner had me sweatin’!

I wasn’t overheating because dinner was spicy. I was hot because I had the oven and stove going simultaneously and our house is 80 degrees since we have yet to use the air conditioner.

The added heat from the stove top and oven did a number on the temperature of our kitchen and I was quite toasty as I prepped dinner! I better buckle up, because it’s only going to get hotter in Florida from here on out.

Though I used the stove and the oven, dinner wasn’t particularly difficult came together quite easily in less than 20 minutes.

I made a  bowl of whole wheat pasta with salmon, feta cheese, green beans and spinach. (You better believe I wilted the spinach using my fancy new trick!)

The meal tasted fresh, wholesome and was nice and filling thanks to fibrous vegetables, hearty whole grains and protein. Oh baby!

Whole Wheat Pasta with Salmon

Serves One

Ingredients:

  • 2 ounces whole wheat rotini pasta
  • 1 handful fresh spinach
  • 1 cup chopped roasted green beans
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • Pinch of salt
  • 2 tablespoons feta cheese
  • 3 ounces cooked salmon

Directions:

  1. Cook pasta according to package directions.
  2. Rip fresh spinach and place at the bottom of a colander. Drain cooked pasta over spinach to wilt the leaves. Transfer pasta and spinach back into pot.
  3. Add green beans to pasta. Stir in olive oil, lemon juice and salt.
  4. Sprinkle pasta with feta cheese.
  5. Flake salmon with a fork and add to pasta. Stir to combine and evenly distribute all ingredients.

After dinner, Ryan and I entertained Sadie  and now we’re off to curl up on the couch and catch up on our latest favorite show, New Girl, that we DVRed last night.

    Oh my gosh, I love New Girl! I started watching because I’m a big Zooey Deschanel fan, but all of the characters are really hilarious! I hear you on the overheating kitchen issue – I’m on the 3rd floor of my apartment building and don’t have A/C, and turning the oven on in the summer is not fun. I just started thinking that I should compile some recipes to try out this summer which don’t require the oven!

    Looks like an awesome, healthy dinner! As a dietetics student I had to make one comment though. Salmon is not exactly a lean protein; it’s packed full of fat! Healthy omega 3 fat though, which you all know. 🙂

    I love New Girl – we’ve watched it since it premiered, and get huge laughs all the time – Zooey is adorable – as are the rest of her roommates. I haven’t seen last night’s episode yet – waiting on the hubs to get home to watch it 🙂

    I love New Girl! I watched it last night and I am watching it again on my DVR right now. Yea, I’m kind of obsessed. Schmidt is the funniest character on tv and I want Nick & Jess together! Enjoy the episode and I really want to try your pasta recipe. It looks super yum! 🙂

    I love New Girl its my favorite show right now hands down! I wish it was warmer here, the sun finally came out today and we made it to about 43 degree – which feels really warm compared to what it has been!

    LOVE that show. People used to tell me I looked like her and now they ALWAYS tell me that because I have the same name as her character. I love singing the theme song. “who’s that girl, it’s Jess!” But instead of Jess I say me…..yup, I’m a dork.

    I keep forgetting to DVR that show. I watched it once and it was hilarious! I have become a fan of canned salmon lately, I think I like it better than tuna.

    I love Zooey but she’s too dumb for me in that show. Or maybe it’s naive. Something about her character bothers me. But I love the guy that played Leo on Veronica Mars. So good to see him in something again!
    Ok, and I loved Justin Long in that show too. But I swear I don’t watch it even though it really sounds like I do. Hee! 🙂

    Such a great show. Some really interesting commentary about how it portrays women.

    It’s written by a woman, did you know that? I love how they’ve started to get all meta about Zooey’s “quirky” image. Some great writing.

    That pasta looks delicious! Salmon and veggies sound right up my alley. Our kitchen gets super hot too when we have both the oven and stove on. Really just either can toast us up really quickly!

    Julie!!!! So, this is random, but I saw your sister yesterday in Publix!!!! It was so crazy, and I feel like such a creeper, haha. She was standing next to me in an aisle, and I’m like “why do I think I know—-ohhhh Julie’s sister!” Haha. But I hope she likes Bradenton/Lakewood Ranch! I know I emailed you with suggestions on places to live a few months ago, and I thought it was pretty awesome she was in my/the area!

      no way!!! how cool! her job has her going to various grocery stores in that area a lot! she was actually just transferred to the st. pete area though, so she won’t be there too much longer. very cool!

    I am loving on New Girl! I thought I was the only one…my sister said I was stupid for liking it, so I thought well looks like I won’t be telling anyone I like that show! Thank goodness there are others. I heart Schmidt, I want him to live with me. How entertaining would that be.
