Ryan and I awoke in the mood for pancakes, but wanted pancakes with a little more staying power than basic ‘cakes. Since we were out of oatmeal, most of my favorite protein pancake recipes were out, so I grabbed the almond butter we had on hand, figuring I could incorporate it into pancakes in some way to add protein and healthy fat to our breakfast.
I kept things very simple with the pancakes and use minimal ingredients. I was pretty shocked when they ended up being a huge hit in our house.
An added and unexpected bonus?
They’re both gluten-free and Paleo friendly for those of you out there who might have some dietary restrictions.
Makes six medium-size pancakes
Ingredients:
- 1 cup almond flour
- 1/4 cup almond butter
- 3 eggs
- 1 tablespoon honey
- 1 teaspoon cinnamon
Directions:
- Heat griddle or pan to medium heat, spray with cooking spray or add a bit of butter so pancake batter does not stick
- Add all ingredients into a bowl and stir until everything is completely mixed together
- Pour batter onto griddle and allow to cook until bottoms start to slightly brown, about three minutes
- Flip and continue to cook until other side slightly browns, about two to three minutes
- Top with desired toppings and enjoy
These pancakes are dense and incredibly filling. I topped mine with syrup and crushed almonds and loved them!
Sunday in the Sun
After breakfast, Ryan and I ran some errands and during our trip to the grocery store, somehow this ended up in our cart.
Ryan threw Breyer’s Oreo birthday blast ice cream in our cart and I didn’t even realize it until we got home. Talk about a very pleasant surprise!
The birthday cake base of the ice cream tasted a lot more like funfetti frosting than cake batter which I absolutely adored. I hope Breyer’s plans to keep this as a “limited edition” flavor fall through and that it becomes a permanent staple. Yum!
After our ice cream break, things got a bit more productive. Ryan and I cleaned, vacuumed and headed outside for a few hours to wash our cars and entertain Sadie.
We made sure to refill Sadie’s kiddie pool before we got started on the cars which made her quite happy.
It’s HOT today and Sadie spent a lot of time in the water.
Before going back inside for a late lunch, Ryan and I beat the heat by jumping in our pool and cooling off.
Getting wet before heading inside was a smart idea because hot food became a lot more appealing and we ended up enjoying a delicious lunch.
- Chicken sausage
- Cannellini beans
- Brussels sprouts
- Red and green pepper
- Zucchini
- Olive oil + Garlic Salt
We’re both on board for a relaxing second half of our Sunday that will surely involve some time in front of the television watching the Olympics. I also have some serious reading to do if I hope to finish the PBF Book Club book of the month by August 1!

Love cooking with almond butter! Great way to incorporate healthy fat into your meals! Do you think they would turn out with coconut flour instead of almond flour? Maybe if I add a few more eggs since coconut flour soaks everything up like a sponge making it very thick. Ill play around and let you know.

Gosh, I wish I could get my dog to go in a kiddie pool! He LOVES to swim so I figured he’d love a kiddie pool. I bought one at the beginning of summer and he won’t go in it. I get in it to coax him in and he just barks and barks at me. If I throw his ball in, he’ll jump in, grab his ball and jump out, all in one swift movement! Sometimes I wish you could talk sense into your dog and show them pictures of other dogs doing the things your dog is scared of! lol.

Oh man…how perfect!! I am such an almond butter fan that I bet these are fantastic! In the afternoons lately I have been making your protein brownie. I cut it in half and top one side with a full tablespoon of almond butter and the other half with a full tablespoon of coconut butter. It is so good (and messy!) I am thinking of making these with half almond butter/half coconut butter!!

Oh my goodness these look SO good! I’ve been making protein pancakes for awhile now, but there’s just something about them that doesn’t quite satisfy that pancake carby-craving. I am definitely going to try making these next time!!!
