Avocado Toast + A Giveaway

During the month of December, things felt a little more hectic than usual around our house. Between traveling, working and getting ourselves organized for Christmas, I found myself slacking a bit when it came to preparing well-rounded meals. Cereal and oatmeal were enjoyed for lunch and dinner a handful of times which isn’t a big deal, but I knew I would feel more satisfied if I ate meals that were a little more nutritious.

Avocado Toast

This avocado toast is easy to make and packed with healthy fat and fiber!

Agave Mustard Avocado Toast with Agave Mustard

After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!

Here is the recipe, shared with Chef Richard Blais’ permission:

Avocado Toast with Agave Mustard

Ingredients

  • 2 ripe avocados, shelled and roughly chopped
  • 4 slices whole wheat bread, toasted
  • sea salt to taste
  • 1/2 lemon or lime, juiced
  • cilantro or parsley leaves, a few pieces
  • Agave Mustard:
  • 1/3 cup mayonnaise
  • 1/2 teaspoon cinnamon
  • pinch cayenne
  • 1 tablespoon agave nectar
  • 2 teaspoons Benefiber
  • 2 tablespoons warm water
  • 1/2 teaspoon turmeric

Directions

  1. Mix Benefiber and water and then combine with mayonnaise
  2. Add remaining agave mustard ingredients and reserve agave mustard
  3. Simply mix the avocado with the salt and lime juice and top on the toasted bread
  4. Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime

Avocado Toast with Cracked Pepper

As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

    On my way to work I consumed a juice I made using carrots, a lemon, an apple, and celery hearts. Once I got to work I ate a boiled egg and half a banana. I feel great from my satisfying breakfast! 🙂

    I made healthy green juices for the week using: 2 green apples, 1 cucumber, 1/2 lemon, 1/2 inch ginger and 4 kale leaves (per juice). So yummy and happy to start off the new year on a healthy note!

    Yum! I started my day with an almond butter protein smoothie, and now I’m replacing my typical morning diet soda with a cup of hot tea! 2014 is all about small changes to eat cleaner for me.

    Hi! The last healthy thing I ate was overnight oats with Breakfast. They had old fashioned oats, Greek Yogurt, Chia Seeds and unsweetened vanilla coconut almond milk!

    Right now I’m eating my salad for lunch. It has mixed baby greens & spinach, yellow bell pepper, cucumber, cherry tomatoes, clementine, avocado, and is topped with homemade honey mustard dressing. I love winter citrus salads!

    After I slam my morning coffee, I plan on making a green smoothie using spinach, frozen berries, almond milk and a banana. I gotta Nutribullet for Xmas and this will be my first time using it. Yahoo!

    The last healthy thing I ate was this morning’s breakfast…a small bowl of grapes, blackberries, and raspberries along side a breakfast sandwich consisting of a whole wheat english muffin, egg whites, fresh zucchini slices, goat cheese, and pesto. Yummm!!
