This recipe for Easy Baked Chicken recipe is incredibly simple and perfect for busy weeknight dinners. It is also a great recipe to prep ahead on Sunday evenings and tastes fantastic as leftovers! Make a big batch of this chicken early in the week so you can enjoy it on top of salads, in wraps or sandwiches all week long! 

Easy Baked Chicken

I am all for recipes that make dinner as easy as possible. This recipe may be the simplest chicken recipe I’ll ever share on the blog! It includes a tasty marinade that can be used for everything from chicken and pork to shrimp and grouper. It’s easy to throw together in the morning and requires ingredients you likely already have at home!

Description

This recipe for Easy Baked Chicken is incredibly simple and perfect for busy weeknight dinners. It is also a great recipe to prep ahead on Sunday evenings and tastes fantastic as leftovers! Make a big batch of this chicken early in the week so you can enjoy it on top of salads, in wraps or sandwiches all week long!


Ingredients

Scale
  • 6 chicken breasts
  • 1/4 cup reduced sodium soy sauce
  • 1/2 cup oil (we used canola oil)
  • Juice of one lemon
  • 1 tablespoon oregano
  • 1 teaspoon garlic salt

Instructions

  1. Place chicken into a one gallon-size freezer ziploc bag.
  2. Add all ingredients to the bag, seal tightly and shake and squeeze the bag so all of the ingredients mix together and chicken is coated in the marinade.
  3. Place bag in the refrigerator until you are ready to bake the chicken (ideally letting it sit for no less than four hours).
  4. Preheat oven to 350 degrees. Remove the chicken from the bag, placing it into a baking dish coated with cooking spray. Discard remaining marinade.
  5. Bake for 45 minutes and serve with your favorite sides!

The recipe is easily adaptable. You can add more soy sauce if you want and play around with the measurements. And think it would be great to change around the spices, using rosemary in place of the oregano or something similar.

Easy Baked Chicken

The chicken was incredibly flavorful and very moist — no dry chicken breasts here! If you decide to give it a go, I hope you enjoy this recipe as much as we do in our house!

      P.S. Seeing that green Fresh Market logo on the chicken reminded me how much I MISS that place! I’m a huge fan of their pumpkin coffee and every fall my Mom sends me a package. Currently enjoying a cup of it right now. 😉

    Nice! My favorite easy way to cook chicken is in the crockpot. All you do is put it in the bottom (either breasts, or thighs, or an entire chicken even!), cover with chicken broth, season and set to low for 8 hours!

    Love this idea! We do this a lot with turkey breast, but no marinade. Although then we are eating it for like 3 days and we start to run out of ideas about how to jazz it up! Getting enough protein for me is always a struggle….

    I really appreciate this recipe because I always have a really tough time cooking chicken. I usually overdo the outside and then the inside still isn’t done. I’ve never understood the whole “cook on the stove and the finish in the oven” thing but I really do love chicken. At least now it’s crockpot season and it’s really tough to mess up crockpot chicken haha

    Baking chicken is so handy! Try sticking some veggies underneath and searing the chicken first (ideally skin on) in butter for a crisp layer and bit colour!
