I’m not one to discriminate against any cookie out there, but if I had to pick a favorite, it would be oatmeal chocolate chip. These flourless chocolate chip cookies from Chocolate Covered Katie really do take the cake.

It’s as if chewy oatmeal raisin cookies and buttery, mouth-watering chocolate chip cookies had a love child and it resulted in the most perfect cookie on the planet. Yes, I really do love oatmeal chocolate chip cookies that much. And thanks to the beautiful and talented Katie, I recently discovered a flourless chocolate chip cookie that rivals any oatmeal chocolate chip cookie recipe out there.

The cookies jumped out at me as I was flipping through Katie’s gorgeous new cookbook, Chocolate-Covered Katie.

Katie is a fellow blogger and friend of mine who happens to be the mastermind behind about a billion delectable dessert recipes that are (usually) somehow good for you. Sweet treats dominate her cookbook and 80 beautiful recipes are featured in six different chapters. As I curled up on the couch on Sunday afternoon and paged through her cookbook for the fourth time, I dog-eared a handful of recipes. When I realized I had everything on hand that I needed for the flourless chocolate chip cookies, it was time to bake!

And bake I did on a chilly Sunday afternoon. So how many cookies are left from the batch I made yesterday? Four. Ryan and I clearly loved these cookies a little too much.

Description

I recently discovered a flourless chocolate chip cookie that rivals any oatmeal chocolate chip cookie recipe out there… The cookies jumped out at me as I was flipping through Katie’s gorgeous new cookbook, Chocolate-Covered Katie.


Ingredients

Scale
  • 3 cups rolled oats
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/4 cup sugar
  • 1/4 cup vegetable oil or melted coconut oil
  • 4 to 6 tablespoons milk of choice

Instructions

  1. Preheat oven to 375 degrees. Lightly grease two baking sheets and set aside.
  2. Blend together oats, brown sugar, baking soda and salt in a blender or food processor until evenly combined. Place in a large mixing bowl and add chocolate chips, sugar, oil and 2 tablespoons milk.
  3. Stir together to form a dough, very slowly adding more milk if the mixture is too dry to form a dough.
  4. Using your hands or a cookie scoop, roll or form into balls. Place onto prepared sheets and press the balls to flatten.
  5. Bake for 6 minute. The cookies will look undone at first, but this is what you want; the cookies continue to cook as they cool.
  6. Remove from oven and allow to cool for 10 minutes before removing from the sheets. Store leftovers in a covered container at room temperature for up to three days.

    ICE CREAM any day, any weather! Even on a rainy and wet day like today is here, give me a bowl of moose tracks or coffee heath bar ice cream and I’m perfectly happy 🙂

    Oatmeal Chocolate Chip cookies are my absolute favorite as well! My Whole Foods has the best ones I’ve had… I ate one yesterday! I also don’t mind when they throw butterscotch in the mix. Yum!

    I love reading Katie’s blog! Have yet to try a recipe, but maybe this will be the catalyst. I LOVE ice cream. Eat it nearly every day. I make sure to build in that sweet treat for myself to keep a balance!

    Those look so good! I ALSO have every ingredient, so I may end up making these before the day is out!

    My favorite cookie is chocolate chip and I think my favorite sweets in general are cookies, brownies, and dense (but not dry) cheesecake. Im not a huge fan of pie or cake, but those other ones will get me every time!

    Ice cream is usually my favorite, but my body doesn’t agree with my taste buds on that one so much anyone so warm, soft cookies are my favorite. I love CCK and really want her new cookbook!

    For years I was an ice cream junky. Then I ate WAY too much of it while pregnant in 2013. I “claimed” it helped with the heartburn 😉 I think I burnt myself out on it, because I think I’ve had it twice since I had my son. Lately, my go too treat is just a little piece of chocolate. Hersey Kisses or Miniatures are my favorite! OH…and Andee’s mints!!!

    My mum makes the best Emperial cookies. They are the white fluffy cookies with Jam in the middle and white icing. I doubt there is any way to make them not so decadent! This cookbook looks so great, I love Katie’s website, she has such great ideas.

    CCK has some of the best sweet treat recipes, I’d love to win a copy of her book! When it comes to more frequent sweet treats, I enjoy a few squares of dark chocolate, but when it comes to a once and a while sweet treat indulgence my favorite is carrot cake!

    Brownies are normally my favorite but I haven’t mastered how to make them healthy. Although I do add quite a bit of caramel and make them “turtles”! That could be it!

    I go through phases about what my favorite sweet treat is! For the past year though, it has definitely been ice cream! I think that I could eat ice cream every day if I was given the opportunity. It’s just so tasty and always hits the spot.
