I’m not one to discriminate against any cookie out there, but if I had to pick a favorite, it would be oatmeal chocolate chip. These flourless chocolate chip cookies from Chocolate Covered Katie really do take the cake.

It’s as if chewy oatmeal raisin cookies and buttery, mouth-watering chocolate chip cookies had a love child and it resulted in the most perfect cookie on the planet. Yes, I really do love oatmeal chocolate chip cookies that much. And thanks to the beautiful and talented Katie, I recently discovered a flourless chocolate chip cookie that rivals any oatmeal chocolate chip cookie recipe out there.

The cookies jumped out at me as I was flipping through Katie’s gorgeous new cookbook, Chocolate-Covered Katie.

Katie is a fellow blogger and friend of mine who happens to be the mastermind behind about a billion delectable dessert recipes that are (usually) somehow good for you. Sweet treats dominate her cookbook and 80 beautiful recipes are featured in six different chapters. As I curled up on the couch on Sunday afternoon and paged through her cookbook for the fourth time, I dog-eared a handful of recipes. When I realized I had everything on hand that I needed for the flourless chocolate chip cookies, it was time to bake!

And bake I did on a chilly Sunday afternoon. So how many cookies are left from the batch I made yesterday? Four. Ryan and I clearly loved these cookies a little too much.

Description

I recently discovered a flourless chocolate chip cookie that rivals any oatmeal chocolate chip cookie recipe out there… The cookies jumped out at me as I was flipping through Katie’s gorgeous new cookbook, Chocolate-Covered Katie.


Ingredients

Scale
  • 3 cups rolled oats
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/4 cup sugar
  • 1/4 cup vegetable oil or melted coconut oil
  • 4 to 6 tablespoons milk of choice

Instructions

  1. Preheat oven to 375 degrees. Lightly grease two baking sheets and set aside.
  2. Blend together oats, brown sugar, baking soda and salt in a blender or food processor until evenly combined. Place in a large mixing bowl and add chocolate chips, sugar, oil and 2 tablespoons milk.
  3. Stir together to form a dough, very slowly adding more milk if the mixture is too dry to form a dough.
  4. Using your hands or a cookie scoop, roll or form into balls. Place onto prepared sheets and press the balls to flatten.
  5. Bake for 6 minute. The cookies will look undone at first, but this is what you want; the cookies continue to cook as they cool.
  6. Remove from oven and allow to cool for 10 minutes before removing from the sheets. Store leftovers in a covered container at room temperature for up to three days.

    I would have to say any dessert with fruit. Cherry Pie, Lemon or Raspberry tarts…. However, my second favorite would be cookies so I am going to have to try out this recipe!

    I go nuts for anything with chocolate in it! Ice cream gets me going too, but I am in love with the healthier alternative of frozen banana ice cream with a few chocolate chips thrown in :).

    I just adore Chocolate Covered Katie’s website! Her recipes are amazing! I am a huge sweets person, if there is chocolate involved count me in. One of my favorite desserts is to take warm homemade cookies and make ice cream sandwiches with them. Combines 2 of my favorite sweets, ice cream and cookies! Hope i win the cookbook!! <3

    I love Katie’s blog! I’ve always been a warm and gooey treat kind of girl, which is why I’m so obsessed with chocolate. I enjoy a good ice cream cone, but warm chocolate is my favorite!

    Since having to go gluten free I haven’t been able to find a chocolate chip cookie that isn’t full of ingredients I can’t find. I can’t wait to try these. Chocolate chip cookies are hands down my favorite dessert.

    I have a giant sweet tooth! And I am trying not to have too much sugar. I do love chocolate chip cookies and since trying to be gluten free and dairy free ?..kettle corn is my go to snack when I need something sweet

    Soft serve frozen yogurt is my Achilles heel! I love it so much that when one of the shops around me has 32oz pre-made packs on a buy 1 get 1 free sale, I clear out my standing freezer and STUFF it with them!

    Ice Cream and Smores Bars are my two favorite desserts!! I usually have any excuse to make either one. I made smores bars the other day, using peanut butter cookie dough. I put a layers of cookie dough on the bottom of pan. Then I put a layer of marshmallows, chocolate chips, graham cracker crumbs, and melted PB over the top. Lastly, I put another layrer of cookie dough on top and baked in oven. It was sooooo good I ate almost the whole batch myself.

    Definitely an ice cream lover… I have been known to eat it even in the dead of winter! I do love baking cookies on a chilly night though, I would LOVE to see all of the other recipes she has in her book.
