Bubbee’s Glazed Carrots

The ultimate side dish: Glazed carrots elevated with the perfect combination of sweet + salty flavor thanks to crisp bacon, melted butter, cinnamon and brown sugar. Who knew carrots could shine so bright!?

Glazed Carrots Recipe

I will never forget my first Thanksgiving with Ryan’s family. As we were getting ready for the big meal, I asked Ryan about his favorite Thanksgiving dishes and shock and awe followed when the first thing out of his mouth was “Bubbee’s carrots.” His grandmothers carrots!? CARROTS? With stuffing and pumpkin pie strutting their stuff on Thanksgiving, who says carrots are the star of the show!? Ryan. But, you guys, he wasn’t wrong.

Bubbee’s carrots are something special. Something dripping in butter and cinnamon and bacon kind of special.

Glazed Carrots Recipe

I very quickly learned that Ryan’s mother and grandmother were the masters at whipping up the ultimate comfort food. Their recipes are the kind of recipes that make you constantly exclaim, “Oh my gosh, this is SO GOOD” and “I need this recipe!!” Ryan’s grandmother, Bubbee, owned and ran her own restaurant for years so she clearly knows a thing or two about delicious food… the kind of food that makes it impossible to resist seconds or thirds or, okay find, sometimes even fourths. We miss her deeply but making her glazed carrots every Thanksgiving keeps her memory alive and helps us feel a little closer to a woman I will always remember as a smiling spitfire who loved books and hated it when I blogged about “all that fitness stuff.” She was the best and so were her carrots!

To make Bubbee’s glazed carrots, you will need the following:

  • Carrots
  • Cooked and crumbled bacon — extra crispy!
  • Onion
  • Spices: Cinnamon, salt and pepper
  • Brown sugar
  • Butter

It’s an all-star line up of ingredients, I’m telling ya!

Ingredients

Scale
  • 4 cups carrots, peeled and sliced into long strips (julienne), lightly steamed
  • 8 slices bacon, cooked (crispy!) and crumbled
  • 3 tablespoons onion, minced
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 tablespoons brown sugar
  • 1/3 cup butter, melted

Instructions

  1. Combine carrots, bacon, onions, cinnamon, salt and pepper in a one-quart casserole dish
  2. Sprinkle with brown sugar and butter
  3. Cover and bake at 400 degrees for 25 minutes

    I love stuffing and have tried different recipes the last several year and all of them are let-downs…I end up thinking Stove Top would’ve been better. This one looks really good and I’m going to try it for Thanksgiving this year! Thanks for sharing!!!

    Is Ryan Jewish? I haven’t heard you mention Hanukkah before, but Bubby (or Bubbee) is typically Jewish. Just curious!

    I was looking for a good Thanksgiving carrot recipe for the Friendsgiving I’ll be attending next weekend. Thanks!

    I love the stuffing recipe and I love that it has no meat! Would it be fine to omit the poultry seasoning? Or actually seasoning doesnt actually have meat in it….

    So because Im a military wife me and all my friends are far from home so we are doing Thanksgiving together and I am doing stuffing!!!

    I am totally doing this stuffing recipe but with adding apples and cranberries to it 🙂 Thanks for sharing.

    You know I’m going to try these recipes. I tried your homemade chicken soup recipe tonight, and it was delicious!! Even my hubby, a self proclaimed “meat eater” loved it.

    The stuffing sounds soooo good! I think my mom makes pretty much the same thing, but adds raisins and chopped granny smith apples and it is de-vine!! We all love the extra crunch with the celery and onions too!
