Mini Fridge Gross Out

When I was in college I lived with the same awesome roommate, Laurel, sophomore through senior year. Despite having a meal plan at our sorority house, Laurel and I had a mini fridge in our room for extra snacks and other food we wanted to have at our disposal.

(Apparently this is the week of college throwback photos? And yes, this was another themed social. Laurel doesn’t wear faux-fur capes or felt dresses in her day-to-day life.)

Our mini fridge was pretty bare bones. On more than one occasion I remember laughing because Laurel would mention that we had two things in our fridge… one was hers and one was mine. Her food item was always something normal. String cheese. Turkey.

My food was always a little more random. Sauerkraut. Liverwurst. <—Don’t hate. Beets.

Well, my affinity for those three foods still lives on and today I made a sandwich for lunch this afternoon that I’m pretty sure would horrify Laurel since she never quite understood how I could eat pickled beets right out of the jar.

A hummus and beet sandwich. (“Hummus! Hummus! I got the hummus!”)

Initially I had plans to make a grilled veggie sandwich with hummus, but I was feeling much to lazy this afternoon and didn’t want to dirty up my new griddler.

Yes, this lunch was born out of my lack of desire to do dishes.

Along with my sandwich, I also had tomatoes dipped in gobs of hummus (apparently I was feelin’ the hummus today) and Greek yogurt sweetened with honey that I ate most of while I was preparing my sandwich.

    Everything I eat is delicious and not weird at all! 😉 I get really funny reactions from people when I dip baby carrots in peanut butter. So good!!

    Love, love, love pickled beets. My favorite is to throw a couple jars in a container with some hard boiled eggs for a few days. Then sliced up the egg and throw some mustard on it and eat with the beets. The eggs are also really good on a sandwich with mustard. My husband thought we were nuts when we first served this p to him….now he loves them

    I am nowhere near a picky eater…I like pretty much everything. But, my son LOVES oreos and orange juice. I’m sorry but….gross!!!

    Sardines, all the way.. I used to be so annoyed defending myself of why I eat them, but now I just don’t care. They’re so healthy, inexpensive, and I actually CRAVE them (that’s probably the weirdest part! haha) I also used to eat liverwurst sandwiches growing up and loved them. I should try one again now since it’s been about 20 years.. it may push sardines out of the #1 spot!

    I love refried beans, cold, out of the can. They smell absolutely awful but taste great to me. haha.

    BEETS are totally that food for me. There is a restaurant in Denver that serves a BEET sandwich that I think is the greatest.

    It’s served on foccacia bread with roasted beets, onions, sprouts, grilled zucchini, and a yummy aoili. I swear, “The Champ” is my favorite sammie ever. If you’re ever in Denver, seriously you must have it at Watercourse Foods. 🙂

    I LOVE beets too! I especially enjoy them when i boil them and peel the skin off myself..they are so much better then canned but i can’t hate on canned beets either!!! I actually like to eat spicy ahi handrolls in the morning! It’s basically just ahi tuna marinated in a spicy mayonnasie sauce wrapped with rice and nori (seaweed)! They are amazing cold!

    I love brown rice and mustard. Whenever I have leftover rice in my refridgerator, I always miz in a few spoonfuls of high-quality mustard and eat it cold. My room-mate thinks i am absolutely nuts….but any carb is really just a portal for mustard!

    This post reminded me of my mom..she loves beets and liverwurst (well, not together), haha. I like sauerkraut- a lot of people seem to not like it. I also could eat oatmeal for every meal, and pumpkin right out of the can…people in my “real life” don’t really understand that :).

    Hey Julie!

    I love canned tuna with mayo mixed in. I eat it with a spoon. my bf thinks it is disgusting. I also love pickled beets with cottage cheese.

    And, this isnt gross, just really weird: if I eat rice I MUST put a dollop of sour cream on top.

    Plenty of food I eat sort of horrifies people, although I’m sure it wouldn’t horrify you, or most healthy living bloggers. I love pretty much anything pickled, especially kraut and beets. Yum! I also love almost any veggie, which plenty of people don’t seem to, and all beans. I have a lot of friends grossed out by beans – I don’t get that… They’re cheap, full of protein, creamy, flavorful…I could go on! 😉

    I am with you on the beets! I <3 Beets! A food combo that I LOVE and other people think is weird is turkey, strawberry jelly and cream cheese stuffed in a pita. It is the BEST thing ever!

    I’ve been on a kick trying new-to-me [and probably weird-to-them] combo’s lately… Don’t knock it till you’ve tried it?!

    I love cottage cheese- I know a lot of people don’t because of a texture thing but it just tastes like yogurt to me…

    This post made me lol, and think of MY college roommate, LAUREL! My Laurel, however, loved beets and I was the nay-sayer…So funny. Not only did we have a randomly stocked min-fridge, but we also had a toaster over in our dorm room in which we would bake things… cookies, cinnamon rolls, etc. for late night snacking 🙂 Oh the culinary genius of college students.

    okay, so came across your blog via pinterest and running songs (started running about a year ago and this nov marks my 3rd half- RNR in Savannah-where i live)- just wanted to let you know when i couldnt enjoy your blog anymore—-you go and quote friends!!! Awesome…im pretty sure we would be bffs if in the same city!!! “He stole my essence”!!! Thank for sharing all your advice…my coworker loves your protien pancakes- she too started running recently.
