Oatmeal Cookie Dough Overnight Oats

But first let’s keep things consistent around here and begin with a morning workout recap.

Workout

Today’s workout began with 20 minutes on the elliptical. I was tempted to just pedal away and take it easy, but instead I cranked up the intensity for 10 minutes with some intervals.

My 20-minute elliptical workout looked like this:

This workout could easily be done back-to-back for a 40 minute session. It made my time on the elliptical go by much faster than usual!

Also, to give you a point of reference for the above workout since I know many ellipticals are very different, the ellipticals at my gym go up to a resistance level of 20. Also, I would guess that the cross ramp setting would be at about a nine for this workout, but my elliptical didn’t have that particular setting option like many do.

I finished up my workout with some strength training before calling it a day.

Breakfast

Breakfast this morning was a bit of an experiment, but one that worked out surprisingly well!

I’ve had a few people email me about a dairy-free option for overnight oats and while I’ve played around with a few recipes in the past, last night I finally created a winner.

This morning, when I took my first bite, I was immediately reminded of oatmeal cookie dough. If that’s not an indicator of a yummy recipe, I don’t know what is!

Oatmeal Cookie Dough Overnight Oats

Description

Per your request, a dairy free option of my original recipe overnight oats!


Ingredients

Scale

3/4 cup old fashioned oats
1 tablespoon chia seeds
1/2 cup unsweetened vanilla almond milk (or milk of your choice), plus a bit more if necessary
1/2 tablespoon honey
1/8 teaspoon cinnamon


Instructions

  1. Combine all ingredients together, stirring to mix well.
  2. Let sit overnight (or at least an hour) in an airtight container.
  3. Stir oats and add another splash of milk if they’re a little too thick. (I probably added close to 1/4 cup of additional almond milk.)
  4. Top with nuts, fresh fruit, granola or desired toppings and enjoy.

Since a few of you were curious about the nutritional information of my original overnight oats recipe, here’s the nutritional breakdown of this recipe:

Fiber! Protein! Talk about some serious staying power. Woo!

Also, for my vegan friends out there, if you omit the honey or replace it with a sweetener of your choice, this recipe could easily work for you as well.

I should also say that while I love this dish, if you’re funny about texture, I must warn you that the oats are very doughy and a bit chewy due to the thickening power of the chia seeds. While I personally love the texture, I know it might not be for everyone, especially those who already have an aversion to basic overnight oats made with Greek yogurt.

I ended up eating my oats for breakfast along with a small banana and a hot mug of coffee.

As you can see, I made sure to take a second to pop off the creepy little nubbin on the top of the banana before eating it. Say no to the nubbin!

Off to cram in a few hours of work before an afternoon committee meeting for the Taste of Ocala.

    Hey Julie! That eliptical workout looks intense – I’ll have to try that! Do you feel like your working through molasses as you’re going through it? Hahah I can just imagine myself looking like I’m going in slow-mo when the resistance is so high!

    On another note, I’m wondering if you could share how you were able to figure out the nutrition stats on your overnight oats?

      of course! i used a recipe calculator i found here: http://recipes.sparkpeople.com/recipe-calculator.asp it makes it really easy to look up all of your ingredients (they even have brand names!) and plug it all in!

    Your recipe for cookie dough overnight oats sounds great! If you want a change try this recipe….it’s my favorite ever and really does taste like cookie dough:

    The night before, mix together oats, Greek yogurt, milk, cinnamon and chias!

    In the morning, stir in peanut butter & vanilla protein powder (and what other else toppings you like…I love adding strawberries & almonds too)!

    I just replenished my Sunwarrior stash so can’t wait for tomorrow morning!

    That oat recipe is interesting, I’m surprised only 1/2 cup of liquid is needed, I usually end up putting in about 1.5! And is that 10g of protein just from the oats and milk or are your toppings included? That’s a lot, which is awesome!

      toppings are not included in the nutritional information. also, i started with 1/2 cup of liquid, but i probably added another 1/4 cup or so this morning to get it goin’!

    I had overnight oats for breakfast also – I made mine with oats, greek yogurt, almond milk, coco powder and raspberries! I think its too funny that you take off the nubbin of the banana – it’s my favorite part!! save them for me!

      Alyssa, I had the same reaction when I first tried them — also in a smoothie. But they’re so healthy and so beneficial I wanted to find uses so discovered if you grind them up (or just buy them already ground) they go down much easier. Or if you add some water and make a slurry they are great to bake with!

    I tried chia seeds for the first time the other day in a smoothie and the texture sort of freaked me out :(…I want to like them! Perhaps I need to try them in oats before I fully commit to disliking them haha. And I love that you take off the banana nub on the top. I used to be the same way about the bottom!

    That looks amazing. I might have to switch it up for tomorrow! I normally don’t add greek yogurt but do add a protein powder to mine. Even the vanilla is just so tart first thing in the morning! I’ve been using Silk Almond Dark Chocolate though and good grief. So.So.So. good.

    I can eat the top banana nubbin, but not the bottom one. But pickles, EW, pass me a knife STAT. No nubs for me!

    I like Almond Breeze’s 1/2 Almond 1/2 Coconut blend for my overnight oats. It has a bit more sugar than I’d like, but it has a yummy taste and gives a bit of a different texture to the oats. Yum!

    The other day I had my first overnight oats! SO glad I did cuz it was in the high 80s! It was so summery and light. I used oats, vanilla almond milk, lemon zest, strawberries, raspberries, and some chocolate shavings- SO good. This is the only way I’ll ever make it 🙂

    I’m eating my overnight oats as we speak. I did mine with coconut milk and added chia seeds. This morning I added a little chocolate protein powder, a dash of cinnamon, a tablespoon of roasted flaxseed almond butter and a cut up banana.

    I could have sworn you used yogurt in your overnight oats. I haven’t just used milk yet but I think I need to try it. I’m always afraid not using yogurt will make them oats too soupy in the morning.

    Not sure if you’ve tried mashing the banana into the oats the night before, but that is THE MOST DELICIOUS way in my opinion! 😛 This vegan one sounds good! And have you tried Oh she glows’ VOO’s?
