Pumpkin Breakfast Quinoa

When Ryan and I returned home from the gym this morning (I did my beat boredom interval workout), I headed into the kitchen to make an autumn-inspired morning meal. I decided to make pumpkin breakfast quinoa which is high in protein and has some fall flavor.

High Protein Pumpkin Breakfast Quinoa

The pumpkin and banana I used in this dish made this dish extra creamy and comforting. Oh how I wished I had some of those incredibly fragrant roasted cinnamon pecans to sprinkle on top!

I always associate those unbelievably delicious nuts with musicals. It seems like every theatre I visit sells them during intermission, so when the lights come up halfway through a musical, my mouth starts watering and I find myself on an all-too-intense hunt for cinnamon roasted pecans.

Description

I decided to incorporate pumpkin into my high protein breakfast quinoa for a little fall flavor. The pumpkin and banana I used in this dish made the breakfast quinoa extra creamy and comforting.


Ingredients

Scale
  • 1/2 cup quinoa (I love Feed Adam quinoa)
  • 1 cup milk (I used 2 percent)
  • 1 very ripe banana, mashed
  • 1/2 cup canned pumpkin
  • 1/2 teaspoon pumpkin pie spice
  • 2 egg whites
  • 1 scoop vanilla protein powder (optional)

Instructions

  • Combine quinoa, milk, mashed banana and egg whites in a pan on medium heat.
  • Increase heat to medium high and, stirring constantly, allowing mixture to thicken (approximately 10 – 15 minutes)
  • Fluff quinoa, reduce heat to low and slowly stir in pumpkin and pumpkin pie spice
  • Add protein powder and an additional splash of milk if needed
  • Divide quinoa into two bowls and enjoy

        I made this exactly as the recipe is written and figured up the calories at 375 per serving.
        It was really filling and my husband, who is not a quinoa fan, even yummed about it. I will be making this again for sure!

    oh gosh that looks delicious! And the banana and pumpkin sound like they make it nice and creamy! Did you use 1/2 cup cooked or dry quinoa? I’m assuming dry but I wanted to double check!

    I had it for breakfast this morning. I am not a big banana person so I sub that for 1/2c pumpkin, add pumpkin pie spice, and some berries that melt right in… and eat a side of egg whites for more protein…but truly, it is SO SO comforting, creamy, delicious and screams fall!

    Thought you might enjoy it in the breakfast mix!

    YUM-O!! {channeling Rachael Ray, much?!} This sounds like a perfect, healthy autumn breakfast. And a good way to use up the 7 {yes, seven} cans of pumpkin my husband keeps asking about – as in, why the H do we have so much pumpkin in the pantry? Haha

    Ohhh I know exactly what you’re talking about in regards to the roasted cinnamon pecans… My husband put a package of them in my stocking last year for Christmas, and it was the best stocking stuffer ever!

    This looks awesome! I usually really dislike the taste of quinoa, but I love the taste of pumpkin and some vanilla protein powder. Maybe that will be enough for me to not taste the nutty part of quinoa that I don’t like.

    Just found out I have celiac’s andddddd am lactose intolerant so I tried Joelle’s paleo oatmeal earlier this week (because you had been raving about it). I’ve had it twice this week and made a pumpkin version today. Looks like this! I’ll need to give yours a try.

    so here’s a silly question for you – what do you do with your leftover yolks when you use just the whites? I like to scramble mine up and give them to my doggy (she LOVES it), but maybe there’s something equally productive to do with them?

    i’ve been seeing lots of quinoa-transformed-to-breakfast ideas in the blog world lately…also, random/hilarious that cinnamon reminds you of musicals. i think it reminds me of this fall-ish vanilla cinnamon body wash i used for like a whole year in high school?

    I love pumpkin anything, especially this time of the year, this sounds great! Even could switch it into a savory dish with a sprinkle of salt + paprika?!

    P.S. I’ve tried to add egg whites to my oats/ quinoa in the past and they’ve turned into almost a scrambled consistency… Any tips or tricks?!
