I have a perfectly portable and oh-so-addicting snack recipe to share with you guys today!

Spiced Almonds Recipe

Sweet ‘n’ spicy roasted almonds! I think I’m in love.

Once we arrived home from the Girls On The Run 5K on Saturday, Ryan and I knew we wanted to spend the rest of the day outside. The sun was shining and temperatures crept into the low 80s. It was too beautiful to stay indoors so we decided to spend the rest of our Saturday on the lake.

Knowing we’d be boating for hours meant we had to plan ahead and pack plenty of drinks and snacks. I had a bag of whole raw almonds on hand and they served as the inspiration behind this quick snack that took me no time at all to throw together while Ryan filled a cooler with ice, water bottles and more munchies.

Raw Almonds

I tossed the almonds in melted coconut oil and a splash of maple syrup seasoned with cinnamon, cayenne pepper and curry powder.

Description

I tossed the almonds in melted coconut oil and a splash of maple syrup seasoned with cinnamon, cayenne pepper and curry powder. The end result was a sweet and slightly spicy batch of roasted almonds that we could not stop eating. Be warned: These little babies are quite addicting!


Ingredients

Scale
  • 2 cups raw almonds
  • 1 tablespoon + 1 teaspoon tablespoon coconut oil, melted
  • 1 teaspoon maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 300 degrees.
  2. Combine melted coconut oil and maple syrup. Add spices and stir.
  3. Add almonds to spiced coconut oil mixture and toss to coat.
  4. Spread out almonds on a cookie sheet sprayed with cooking spray and roast in the oven for 20 minutes, flipping the nuts halfway through.
  5. Allow to cool and enjoy!

Easy and Healthy Sweet and Spicy Roasted Almonds Recipe

I think these almonds would make a fabulous appetizer addition to a summertime barbeque and would also taste great chopped up and tossed into a crisp salad. Lots of possibilities!

    Love your recipes! I comment on your blog a bit, but I don’t think I’ve ever made it a point to tell you that I have really incorporated a ton of your recipes into me and my husband’s daily lives. It’s been a game changer since I was told I needed to get more protein. So thank you so much for the inspiration!     Sounds great! I do cashews with a little bit of butter, curry, fresh rosemary, cayenne & a touch of brown sugar. This sounds just as addicting.

    I’ve done these before and could NOT stop eating them. My next plan of action is to do the same with chickpeas! I’ve still not embarked on the adventure of roasting those puppies.

    These are so great for snacking – we love toasting our almonds in vanilla bean powder too! Would never have thought to use curry powder though, have to try this one! 🙂

    These remind me of Picard’s Peanut creations (picardspeanuts.com) …

    I like to mix the spicy ones (there are 50+ varieties!) with their “cookie nuts … aka salted peanuts covered with a shell of salted caramel cookie”!

    That recipe sounds delicious! I love almonds and eat them almost daily. Something shocking that I learned today while searching for bags of bulk almonds on Amazon via Amazon reviews and then some googling- so feel free to do your own research- is that in the US all almonds (even “raw” and “natural” ones) are required to be pasteurized. There are a couple ways that is done, but the cheapest involves spraying PPO on them. PPO is a chemical used in antifreeze and has been linked to cancer. EEK!!! Trader Joe’s and Whole Foods do not use PPO, they steam their raw almonds to pasteurize them. But many of the major almond brands like Blue Diamond and Costco brand use the chemical PPO. I don’t post this to scare you, it is just something that I found out today and am shocked that my “healthy” snack is not as healthy as I thought. Also I am sure you would want to know what you are putting in your body while pregnant.

    Hi Julie! I had to share – I made these almonds on Sunday during my meal prep session and my husband and I adore them! I also love how cute the mason jar is for them! Shared with a few of my coworkers who have all asked for the recipe! Yumm!
