Asian Crunch Salad

On Sunday morning after church, Ryan and I went out to breakfast at a local diner. I left full from the fabulous fluffy pancakes I ordered, but since pancakes never seem to fill me up for long, I found myself feeling hungry within two hours of our late morning breakfast date. Ryan and I swung by the grocery store on our way home from the diner, so I had lots of fresh produce to use to create a healthy and filling early lunch. I wanted something light but nutritious and ended up combining lots of different flavors and textures to create a veggie-packed Asian crunch salad.

The salad was simple to throw together and didn’t require a lot of effort to prepare. Ryan was also a big fan!

We ended up having a little leftover and I actually liked it even more when I dug into it at dinnertime last night since the flavors had some time to develop. I think this salad would make a fabulous side dish for a summertime barbeque!

Description

I wanted something light but nutritious and ended up combining lots of different flavors and textures to create a veggie-packed Asian crunch salad. This salad would make a fabulous side dish for a summertime barbeque!


Ingredients

Scale
  • 1 (5.3 ounce) container plan nonfat Greek yogurt
  • 1/4 cup light Asian dressing
  • 1 12-ounce bag broccoli slaw
  • 2 oranges, peeled and sliced
  • 1/2 cup slivered almonds
  • 1/2 cup golden raisins
  • 1/2 cup chopped green onions

Instructions

  1. Whisk Greek yogurt and Asian (or ginger) dressing of your choice together until blended
  2. Combine remaining ingredients in a large bowl and pour salad dressing on top
  3. Toss until everything is coated in the dressing
  4. Garnish with additional almonds and green onions if desired

    You should add raw Ramen or chow mein noodles for some more crunch! So yummy!!

      Totally agree with it!! It already feels like there aren’t a lot of young people here, and most people we know that are around our age or in their early 20s are married with kids already!

    That sounds absolutely delicious! And it is so versatile…in a wrap, over a bed of lettuce, on a bun… I make an Asian Noodle recipe that I love! It sounds similar…linguine noodles, celery, green onions, diced chicken, stirred in with Asian dressing. Mmm! Definitely a fan of that flavor combo!

    I caught up on your blog before leaving work today and stopped to get everything at the store to make this salad for dinner. It is delicious and such a great mix of flavors. I couldn’t find Asian dressing so I went the greek route and used Greek dressing and also added some feta cheese & kalamata olives. This was my first time having broccoli slaw. Thanks for sharing and inspiring my dinner.
