Blue Apron Love

First things first, I think we need to talk about last night’s dinner.

Oh my gosh, I am loving Blue Apron meals. They are so ridiculously delicious and Ryan and I have yet to make one we haven’t enjoyed. This was one heck of a good Christmas present from my husband, that’s for sure!

When we know we’re going to take the time to prepare a Blue Apron meal, Ryan and I really look forward to cooking together and eating what we know will be a fantastic dinner.

Last night we made Bangaladumpa Upma Koora, a Nepalese dish centered around asafoetida, a spice cultivated from the sap of a plant in the fennel and carrot family.

On a base of small white creamer potatoes, we poured a hot and flavorful mong dal and tomato paste base enhanced with curry leaves, onion, ginger, red chilies, lime and more.

We opted for the vegetarian Blue Apron meal option since I am already comfortable making meals centered around meat or fish. I wanted to explore vegetarian cooking and love the flavors of the Blue Apron meals. Each meal is so different and still 100 percent delicious and filling. YUM.

Breakfast

Today began a lot like yesterday, mainly because I felt so darn good after drinking my green smoothie in the morning. It set my day in motion in the best way and I felt more energetic than usual at work.

So today I figured I’d begin my day in a similar way!

Today’s smoothie was nearly identical to yesterday’s green smoothie, but I added chia seeds to the mix and sprinkled some on top as well.

I copied yesterday’s breakfast even further when I ate some Brazil nuts and a hard boiled egg on the side. Whatever works!

Workout

Before breakfast, Ryan and I drove to the gym for a 5:15 a.m. workout.

After a 10 minute warm up, I used my phone to complete another Nike Training Club app workout. On the agenda for today was the 45-minute advanced Fast and Furious workout that incorporated a lot of squats, lunges and core work.

I am beginning to wonder if I will ever think one of the NTC workouts are easy because so far they are kicking my butt in the best way.

    If I had a family or was in a rut on what to cook I would love to try blue apron, for now I love making my own experiments in the kitchen, plus I am usually just cooking for myself so if they fail its ok, lol!

    I have never heard of Blue Apron but I love the idea behind it. We have a place locally where you can go and make meals there to bring home and freeze. They give you a list of all the choices, you pick which ones, go to that station and assemble your meals, then wrap them up, take them home, and freeze them. I’ve had lots of friends do it and they love it because it’s quick and gives them a chance to try some different kinds of foods – but since they are assembling the dishes themselves, they can leave off certain things they don’t like and make it a bit more tailored to their family’s taste preferences.

    My sister has not had a good experience with Blue Apron! They either don’t get delivered until 9PM or the produce has gone bad! I’m glad you had a good experience with them!

    That sounds and looks really good! I’ve never done any sort of meal delivery service, but I’ll often buy the pre-made salads, meats, and potatoes behind the counter at Lucky’s or something like that 🙂

    That dinner looks awesome, I don’t know what half of things you mentioned are and I think that makes it even better. I have never tried the delivery service and I doubt I will. I am a creature of habit and I love going to the grocery store!

    I’ve never heard of Blue Apron, but that dish does sound good!! I think some Sausage on top would taste great!! Yay for workouts that kick your butt!! I love adding in new workouts that your body isn’t use to. My goal is to do this more often, I love feeling tired, or like I’ve put some work in after I’m done 🙂

    Wow, that Blue Apron meal looks awesome. I’ve never tried a delivery service like that, but with my schedule I think I need to! I love the NTC app too! The new update has some new workouts, including a kettlebell one I’m excited to try.

    I’ve never tried a mail delivery meal service before, but I would most definitely be into it. Blue Apron is totally new to me, so I look forward to checking them out because those meals certainly look tasty!

    I use the NTC app too for my workouts and I agree! They kick my butt every morning.

    Also, I’ve never tried any sort of meal service but your dinner looks delicious. I may have to ask for my birthday now.

    I think a meal delivery service would be awesome & so convenient! But I’m pretty frugal sooooo that probably would not be in my budget 🙂

    I haven’t but I love finding new recipes and tastes! I recently started a food challenge with my siblings where we pick a new meal/dish every week to try. It’s so fun because they pick recipes I would have never thought of! The challenge has also been fun for my husband because we love to cook together!

    There is a place by me similar to Blue Apron only you go to the store/kitchen, pick out the recipes you want to make and go around and pick up the ingredients needed for it. All the ingredients are already portioned for you.

    I have never tried Blue Apron. Is it pretty healthy? That would be my only hesitation. We eat pretty lean and green most of the time – can you select meal options when you sign-up?

    I love the concept and the idea of getting it!

      You are able to view the meals they’re planning to send you before you have them shipped, so if something doesn’t appeal to you, you can just skip it. I’ve found that the vegetarian-based dishes have a great mix of veggies, beans, lentils and whole grains for the most part. (I think we’ve only had two meals with white pasta… which also tasted amazing. 😉 )

    I love love love to cook so maybe it would be nice to try out Blue Apron for convenience and to spice some things up. I would probably still have to make something separate for my daughter (14 months) but I think you have convinced me 🙂

        I would love to see a post on how you get to bed early. I got up for a 6am workout today and feel so.much.better but it’s hard to get my husband to go to bed early when he wakes up at 7:30 and we usually just see each other from 7/8-bedtime. Seems like you and Ryan have a good routine! And it helps he works out at the same time! Any tips would be great!

    First of all, I LOVE the NTC app, which I learned about from you. I’ve been using it for a few months now, and I can feel a change in my fitness level. I like the idea of Blue Apron, of just getting exactly the ingredients you need and exact, step by step instructions. If it had been around before I learned to cook, I would have tried it, and probably would have started cooking sooner. Now, after years of trial and error, I’ve figured out how to cook everything, but the help in the early years would have been great.

    First time I hear of Blue Apron, but that meal looks delish, and as long as a meal involves trying new spices I’m willing to try it! The NTC really makes me sweat every time I try it! So far I like it, I even tried it because I saw you recommend it. I don’t regret it, so Thank you 😀

    I have loved the nike training app for a LONG time. I just recently updated it…(by accident) and now the set up is a little different and it makes you download the workouts and save them…for some reason none of them will download for me 🙁 super bummed! It just stops in the middle going on a few weeks now… have you had any problems with this?!?! Would love to know if it the app or my phone or if anyone else has had issues?!

    What blender do you use?? (I keep searching your blog and can’t find anything)

    I finally overwhelmed my single serving blender — which I LOVED for the ease and quick clean-up — but think I need to upgrade so that I can safely blend up my frozen fruits, etc.

    I have heard of Blue Apron! There is also Plated, which is similar. I think it’s a fantastic idea to basically have your meal already prepared!

    I certainly can’t pronounce the name of that Blue Apron dish, but I sure could eat it! Looks so yummy! I’ve been loving the NTC app ever since I downloaded it via your recommendation. And I’m totally with you, I haven’t done a workout yet that hasn’t kicked my booty and left me not wanting to do another one anytime soon. 😉 But I must be a glutton for punishment because I keep going back for more!

    I finally downloaded the NTC after reading you talk about it so much and youre right…its awesome! I wish my gym had more room so I could do them more often. We have a weight area and a classroom thats always full of people. Not ideal!

    Ive never tried a meal delivery service or blue apron but by the looks of your delicious meal I might just have to cave in and give it a try. Or try and recreate something similar because you have sparked a craving for curry!
