If you’re anything like me, you don’t care to pour a ton of time and energy into side dishes. This is me to a T, and yet side dishes are often my favorite part of a meal. So you can imagine how happy I am when I discover a delicious side dish that is ridiculously easy to prepare and doesn’t require a ton of time in the kitchen. I think that’s cause for celebration! Celebration in the form of simple cinnamon roasted butternut squash?

Easy Cinnamon Roasted Butternut Squash

Okay, so I think we’ll stick to cake and ice cream when it comes to celebrating with food, but this side dish received rave reviews in our house on Sunday night.

With only four ingredients, it comes together in no time and since I have a giant sweet tooth, I couldn’t get enough of the pop of sweetness from the sprinkling of brown sugar.

And the cinnamon! Ohhh, cinnamon, you smell just as good as you taste!

Simple Cinnamon Roasted Butternut Squash

Description

With only four ingredients, this side dish comes together in no time and since I have a giant sweet tooth, I couldn’t get enough of the pop of sweetness from the sprinkling of brown sugar.


Ingredients

Scale
  • 2 1/2 cups of pre-peeled and cubed butternut squash
  • 1 tablespoon coconut oil
  • 1 teaspoon brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees
  2. Melt coconut oil in the microwave in a large, microwave-safe bowl (approximately 25 – 30 seconds)
  3. Add brown sugar and cinnamon to the coconut oil and stir
  4. Toss butternut squash in the cinnamon sugar mixture until thoroughly coated
  5. Pour butternut squash onto a cookie sheet sprayed with cooking spray
  6. Roast for approximately 25 to 30 minutes, tossing halfway through
  7. Allow to cool slightly before eating and enjoy

Easy and Delicious Cinnamon Roaste Butternut Squash

Using pre-cubed butternut squash is key to the simplicity of this recipe, though you could obviously peel and cube your own squash.

If you give it a go, I hope you enjoy this dish as much as we did in our house!

    This looks so good! I might try it with grilled chicken on Wednesday 🙂 I just posted a recipe for “cheesy tomato spinach rice” and it is so good and also super easy to make (only takes about 10 mins total if you start with a frozen pouch of rice)! I’m just like you, love side dishes – but don’t have a ton of time to spend cooking them.

    Could you use regular olive oil instead of coconut oil? I am not a fan of coconut and have been scared to try it.

    Love this recipe! Do you cook with coconut oil often? I’ve never used it but I guess it makes more sense than olive oil (my go-to) in this recipe because of the sweetness.

    I love roasted green beans as a side. A little olive oil, garlic powder, salt, and pepper- then viola! (And a sprinkling of parmesan because why not?) Simple, healthy, and delicious!

    My go to side dish for dinner is creamy green beans. I steam green beans (often the fresh steam-in-bag ones sold in the produce section) and then mix them with a mixture of mayonnaise & spicy brown mustard (1# of green beans, 2T. mayonnaise and 2 t. mustard). I got the idea from Eating Well magazine/website – the original recipe calls for Dijon mustard, but I prefer spicy brown.

      We buy our fresh cubed squash at Costco! It’s so yummy! We love using our Super Wave Oven and only sprinkle cinnamon on it when we cook it. So easy and such a delicious leftover veggie to eat for lunch the next day.

    I am so with you on the easy side dishes. I can’t tell you how many times I’ve finished my main course and been ready to serve it and then realized I don’t have my side dish ready. Ugh. This is one of those quick recipes that would even work at the last second!

    Yum! I do this with sweet potato cubes and add a little raw honey to the mix. So good! To make it even easier and to save dirtying a dish, submerge the jar of coconut oil in warm/hot water for a minute and it melts. =]

    Hey Julie, I was just wondering what type of cancer your mom had.
    We found out last night that my mom has ovarian cancer and just curious….trying to look for ideas, reasons, thoughts, etc.

      I am so sorry to hear about your mother’s diagnosis. I know how helpless and scary a cancer diagnosis can feel and I wish I could give you a hug in person right now. My mom had breast cancer. I can tell you that once we had a plan of action, I felt a lot better. The diagnosis is scary, but moms are tough people and will put up one heck of a fight! Once we knew my mom’s surgery date and her chemo/radiation schedule, I felt like we were actively fighting the cancer and that made the process a little easier (though still obviously not easy). If you are ever looking for ways to make your mom feel loved during this time, please don’t hesitate to email me. I’m always happy to share ideas about things that my family did to try to make my mom’s treatment a little easier and make her feel very loved and cared about throughout everything. xoxo

    I just bought some squash to make a knock off of Paneras autumn squash soup and I find them extremely difficult to prep! I would go for pre packaged all the way! I’ll have to try your recipe with the leftovers!

    I make roasted butternut squash weekly! However we follow a (mostly) Paleo lifestyle so instead of the brown sugar I use raw maple syrup with the sprinkle of cinnamon. Me and my husbands favorite side dish…….he always says the flavors remind him of French toast 🙂
