Cheesy Broccoli Quinoa

I love quinoa. Ryan, on the other hand, is not 100 percent sold. He says it has a weird “earthy” flavor which is probably what I like most about it! Well, that and the fact that it’s a complete protein, offering all of the essential amino acids! Quinoa is healthy and can be made to be tasty by adding some flavors. This cheesy broccoli quinoa is one of those recipes that will make anyone love quinoa!

Since both of us agree that the quinoa is a great thing to include in our diet from a nutritional standpoint, we still eat it a fair amount in our house. Earlier this month, I took some time in the kitchen to prepare a quinoa-based dinner that I thought Ryan would actually enjoy quite a bit since the quinoa flavor was all but hidden thanks to the delicious cheesy flavor from a handful of Swiss cheese wedges.

We ended up enjoying this dish so much that I’ve made it two times since: Once as a side dish and I made another batch to have on hand in the refrigerator so I could scoop some out for lunch or as an easy snack option that’s a little more substantial and yummy than my typical snack fare.

Description

I took some time in the kitchen to prepare a quinoa-based dinner that I thought my family would actually enjoy quite a bit since the quinoa flavor was all but hidden thanks to the delicious cheesy flavor from a handful of Swiss cheese wedges.


Ingredients

Scale
  • 1 cup quinoa
  • 1 (14.5 ounce) can reduced sodium chicken broth
  • 1 1/4 tablespoons olive oil
  • 1/2 large sweet onion, diced
  • 2 cups broccoli, roughly chopped
  • 4 cloves garlic, minced
  • 5 wedges of The Laughing Cow Light Swiss Cheese

Instructions

  1. Heat olive oil in a medium-size pot over medium heat. Add onion and garlic, stirring constantly until the onion is soft and translucent. Add quinoa to pot and toast for 90 seconds, stirring quickly and regularly.
  2. Add broccoli and broth to pot and bring temperature up to a medium-high heat until it begins to boil. Reduce heat to medium and allow everything to simmer, stirring every other minute or so, until most of the broth is absorbed.
  3. Add The Laughing Cow creamy Swiss light cheese wedges and stir until the cheese is melted and the quinoa and broccoli are coated.

This recipe is rather versatile when it comes to what veggies you wish to incorporate. If you aren’t the biggest broccoli fan, perhaps spinach or cauliflower might be a better fit? Play around and change it up a bit! I hope you enjoy this recipe as much as we do in our house!

    This reminds of my favorite quinoa recipe – Quinoa Mac & Cheese! I make it pretty regularly, and the left overs are great for lunch. It’s similar to your recipe, but it’s baked. Here’s a link:

    I like quinoa and the nutritional aspects that it adds to the diet. However, my husband is not 100% on board either. However, last winter I found a recipe for Vegetarian Quinoa Chili that my we BOTH enjoyed!     Great recipe! I’m not sure if you do this since you didn’t list it in your recipe but you’re supposed to rinse the quinoa well before cooking it – there’s a bitter (maybe it’s the “earthy” flavor that Ryan doesn’t like!) coating that needs to be washed off before it gets cooked. Just an FYI! This certainly helped me when I starting dabbling in quinoa recipes. : )

    Just made this for lunch for the week – used the Queso Fresco Laughing Cow (it’s what I had on hand) and frozen broccoli (just threw it in with quinoa to cook). It’s delicious! Easy, too 🙂

    I made this tonight and it was amazing! I added a bunch of different spices and wanna try adding some pumpkin next time but it was so delicious! ! I have leftovers for lunches and I can’t wait to eat it!

    I know this is an older post, but I just have to comment that I made this last night for the first time and we LOVED it. My husband doesn’t care for either broccoli or quinoa and he was scooping thirds onto his plate and asking when I can make this again. Score! I like that it is healthy but also a hearty side dish for cold nights. Thanks so much for this recipe!

    I’m always iffy about quinoa recipes, but always looking for ways to really enjoy it. I made this last night for a dinner guest, and it was crazy good. 10/10, will make again.
