Avocado and Shrimp Salad

Recipe coming your way in a second! First, let’s recap today’s workout.

After working through the morning at Starbucks, I took a mid-day breather and headed to the gym for a cardio workout. My 50 minute workout looked like this:

  • 20 minutes stair master
  • 10 minutes elliptical
  • 10 minute cardio and abs circuit
  • 10 minutes elliptical

Hopping around made the workout fly by!

After my time at the gym, I headed home and immediately threw together a fantastic lunch.

Lunch

There’s something about the flavor of cilantro that simply screams fresh. I adore the herb and the punch of flavor it provides to salsa and other dishes like my garam masala chicken. I know it tastes like soap to some people, but I am a cilantro lover through and through!

This afternoon, I made a delicious lunch that centered around cilantro, avocado and shrimp.

Sliced Avocado

Avocados are on sale at my local grocery store and I bought a bunch earlier this week. So far all of the avocados I’ve used have been perfectly ripe. The avocado I used in this salad added the perfect amount of creaminess to the dish.

Description

There’s something about the flavor of cilantro that simply screams fresh. I adore the herb and the punch of flavor that it provides to dishes. This salad came together quickly and hit the spot!


Ingredients

Scale
  • 1 avocado, sliced
  • 1/2 tomato, chopped
  • 1 ear of corn, kernels removed from cob (raw)
  • 1/4 cup chopped scallions
  • 1/2 tablespoon lime juice
  • 1/2 teaspoon olive oil
  • 1/8 teaspoon salt
  • 1/4 cup chopped cilantro
  • 1 cup (6 ounces) shrimp, chilled, peeled and deveined

Instructions

  1. Combine avocado through cilantro
  2. Add shrimp to avocado mixture and stir until shrimp is lightly coated

This salad was simple to make and totally hit the spot. I loved all of the different textures and flavors. I will be making this again soon!

    I love it but my boyfriend hates it.. he’ll never go to Chipotle with me because of the cilantro lime rice they use in their burritos. He got it once and has been scarred ever since!

    That shrimp salad looks incredible but sadly, I’m on the cilantro-haters team. It actually makes me physically ill, and my mom never believed me until she read an NY Times article that said that Julia child couldn’t stand it, either! So at least I’m in good company 🙂

    We love it so much that we grow fresh cilantro! Funny this post came up because just yesterday we had our Taco Tuesday (on Wednesday) and were so disappointed because our fresh cilantro was very devoid of flavor. I wonder what went wrong!?

    Anyway, it really disappointed us because the guacamole just didn’t taste right without the strong flavor of cilantro!

    I make a similar recipe, but use it in a shrimp taco! I take a mango, 2 avocados, jalapeno, scallion, lime juice, cilantro, salt and pepper. I then cook shrimp in some olive oil, red pepper flakes, and cayenne pepper. Take some corn tortillas, add the shrimp, then top with salsa. Delicious!!!

    I’m always hit or miss on cilantro. Sometimes I love it, and other times it really turns me off. I think it depends on the dish!

    Julie, THANKS for posting this! I’m doing Medifast, and this fits PERFECTLY in line with the “lean and green” meal that I have for dinner…and it combines some of my absolute favs. You were inspired to post this! I’m in the midst of law school finals and want to eat everything in sight (stress!) but this is a much better choice. Thanks again!

    I love cilantro although here in Australia we call it coriander but I believe you guys call coriander something different than what we do.

    Abhor cilantro … I’m allergic to it and every kind of parsley and it’s so hard to find meals in restauarants that aren’t buried in it. And if they miss a flake I end up in hives the size of silver dollars.
    Now everything else in salad is awesome – love raw corn!

    LOVE cilantro! I even put it in my smoothies occasionally (mango, pineapple cilantro is a delicious combo btw!) Plus, um, hello – chipotle rice anyone? 🙂

    love it! have you every bought the potted herbs at publix? i’ve gotten cilantro and basil—they’re only like three bucks, which ends up being cheaper than buying it packaged—-especially when its a gift that keeps giving 😉

    I love cilantro! I had a plant of it but it died in the fall. I think I need to get another one for my garden. Nothing better then homemade salsa with fresh cilantro! I also have been putting it in my salads!

    First of all, that looks delicious! And, CONGRATS! I never realized how much I would LOVE teaching group fitness. I bet you get asked to sub for a circuit class–great way to make new clients and learn. I LOOOOOOOOOOOVE teaching circuit class–motivating others and working out too!

    YUM! I had something very similar the other night! Next time chop up a mango and add it in – it adds SO MUCH 🙂 Also congrats on teaching! I teach Pilates one evening a week and I love it!

    i’m sort of confused as to how this is a recipe though? the picture looks yummy but the directions don’t really make sense, it’s like there are steps missing
