Curried Sweet Potato Salad

This recipe for curried sweet potato salad is delicious and easy to make! Throw it together quickly for a fantastic side dish that’s flavorful, slightly sweet, full of texture and fresh ingredients!

On Saturday evening, Ryan, my father-in-law and I sat down to a fresh and flavorful meal at the Artisinal Dish in Ocala. It’s easily one of my favorite local restaurants and I know that anytime I order something off the ever-changing menu, I’m in for a treat.

The sides prepared at the Artisinal Dish are often the highlight of the meal and this was the case on Saturday evening. After one bite of the curried sweet potato salad, I said, “I must recreate this at home!”

Curried Sweet Potato Salad

Normally I find potato salad kind of blah. It really does nothing for me. Cold potatoes? No thanks. But the curried sweet potato salad was another story.

It was flavorful, slightly sweet, full of texture and fresh ingredients.

I asked the owner of the restaurant for a list of the ingredients and she kindly shared them with me, explaining that the chef often plays around in the kitchen and likely added other things to the salad as well.

When I set out to recreate the dish, I started with her list but made a few alterations and additions. The result? An absolutely delicious side dish that Ryan and I agreed will be one we make to bring to summer barbeques this year!

Description

This recipe for curried sweet potato salad is delicious and easy to make! Throw it together quickly for a fantastic side dish that’s flavorful, slightly sweet, full of texture and fresh ingredients!


Ingredients

Scale
  • 2 pounds sweet potatoes, peeled and cut into cubes
  • 1/4 large red onion, diced
  • 3/4 teaspoon curry (You may want to start with 1/2 teaspoon and increase to taste. We love a strong curry flavor!)
  • 1/2 cup + 2 tablespoons light mayonnaise (For a healthier dish, you can try using plain Greek yogurt.)
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh cilantro, chopped (or 2 teaspoons dried cilantro)
  • 3 tablespoons chopped walnuts
  • 3 tablespoons dried cranberries

Instructions

  1. Place sweet potatoes in a large pot and cover with cold water. Cover with a lid, bring to a boil and cook until tender, about 12 – 15 minutes
  2. Drain sweet potatoes and place in the refrigerator for approximately 30 minutes, until slightly cool
  3. Stir together remaining ingredients until evenly mixed
  4. Pour curry mayonnaise mixture on top of sweet potatoes and toss to completely coat the sweet potatoes
  5. Refrigerate until curried sweet potatoes are cold and enjoy

    oh that looks/sounds absolutely delicious! i bet the curry with the cilantro and dried cranberries go really really well with the sweet potatoes. i have to admit i always bring the dessert to bbq’s, side dishes are just not my forte.

    Probably caprese salad or fruit salad. Nobody ever says no, and they’re so easy to make! However, if we want to be completely honest, then I’d say a 24-pack.

    My favorite is a sweet and sour coleslaw (no mayo) with uncooked Ramen noodles and flavor packet mixed in the dressing. Everyone always wants the recipe. It is delish and light and fresh w/o the heavy mayo. Plus, it’s different as many people bring the mayo side dishes

    This looks amazing. I definitely need to try it! My favorite side to bring to a BBQ is either veggie kebabs (to be grilled) or corn, black bean and avocado salad. I love the idea of currying up a classic American BBQ!

    I usually bring a fruit salad or a hearty grain salad- this option assures that I’ll have a filling option if I’m the only veg there and there are limited options.

    Growing up my mom always made good potato salads…cold on sunday evening potlucks with leftover meats, etc. She always made 3 kinds but made them with coleslaw dressing and white potatoes: A mustard salad, a beet salad, and a basic potato/veggie salad. Good stuff.

    I completely agree that potato salad is usually quite blah, but this curried sweet potato one looks delicious. Although, I’d probably say that about anything containing curry or sweet potatoes! For summer barbecues, I usually skip side dishes and bring dessert, chocolate chip cookies are always a hit 🙂

    I usually bring a jell-o fluff salad – it goes over very well.

    Call me crazy but I’ve never actually had curry – I see it in so many recipes I want to try but never have yet. Is it spicy? This dish just might be the one I try it in!

    i’m not a huge potato salad fan either but you may have sold me with the curry part! last summer i made a really good 3-bean dish with a little bit of gouda cheese and that was my fav side dish!

    Have you ever had cheese slaw? oh.my.gosh. It’s awesome. I am pretty pumped to try this though, I love sweet potatoes. I bet it would be fantastic with butternut, too. We also take ratatouille or hummus to events but if we don’t want to cook, my favorite trick is to buy or make a dip and then buy a boule, hollow it out and put the dip in. It looks homemade but is super simple and no one has to know.

    I gotta agree with the above comment on the booze – always the most popular “side dish.” 😉 I just grilled over the weekend and made a delicious fresh squeezed strawberry lemonade, which would go great with vodka!

    I also made two of my other side dish for the grill out: foil pack potatoes (easy easy easy) and grilled guacamole with fresh tortilla chips. Both were a hit!

    My fave side dish…hmm…I think it’s a tie between cole slaw (I swear, my mama’s is the best…haven’t had another cole slaw that tops it!) or fruit salad. I just think all of the colors are so fun and summery haha!

    Best BBQ side dish: Macaroni Salad. The sad thing is I make a huge bowl of it and pretty much eat the entire thing myself…my peeps always get mad at me for that lol 🙂

    I love sweet potatoes so this looks awesome! My fav BBQ side dishes to make are baked beans or loaded baked potato salad – I don’t like ‘normal’ potato salad, but this one is red potatoes, mayo or miracle whip, sour cream, scallions, shredded cheese & bacon. Yum!

    So, I’ve been reading your blog for the past month and I have been totally inspired by you! I was kind of excited to answer your question of the day! This past weekend we made a “garden” pasta salad. It was amazing. It had veggies like cucumber, tomato, and bell peppers, with some pasta of course, and even some peaches thrown in! Then tossed in a Parmesan vinaigrette. It also calls for chicken, but it was a side so we wanted it to be light. It also recommends putting cheese stuffed tortellini. That with the chicken would make it a great meal! I’ve been trying to incorporate sweet potato into my diet more, so I’ll definitely be trying this!

    I’m not one for a regular potato salad, either, but throw sweet potatoes in the mix and I’m interested. And I just LOVE the combination of curry powder with sweet potatoes. This sounds like a winner to me! I wonder if I could sub avocado puree for the mayonnaise.. I guess I’ll find out soon enough!
