Diner Breakfast

September 26, 2011 by Julie 63 Comments

This morning’s breakfast tasted like it was straight out of a diner!

eggs and hash 005

I think it was the breakfast potatoes. I’ve made hash browns before, but I used a package of shredded, frozen potatoes. This was my first attempt at real breakfast potatoes and they were pretty darn easy to make.

I used some of the peeled, chopped potatoes that I had leftover from last week’s shepherd pie and sautéed them with diced onion in a bit of olive oil, seasoned with garlic salt.

eggs and hash 006

Two fried eggs and a honey wheat English muffin rounded out the meal.

Workout

Today’s breakfast was the perfect post-workout fuel.

I worked up quite an appetite at the gym. Once again I set out to conquer 100 squats in a row and powered through until I finished the very last rep.

I loaded up a 45-pound bar with 30 pounds of weight and was nice and sweaty by the end.

I like having mini strength-training goals to work towards. I am not really a big-time goal setter in the gym (I blame it on my lack of competitive drive), but it is a great feeling to reach mini milestones. For some reason I have it in the back of my head that I’d like to be able to do 100 squats in a row at 100 pounds. I know that will take a lot of time and work to build up to that weight, but it’s something to strive for in the future.

Today’s leg workout included the following exercises:

  • 100 squats
  • Deadlifts
  • Lunges
  • Step ups
  • Hamstring curls
  • One-legged leg press
  • Split squat with exercise ball

The Return of Blog Talk Tuesdays

I took two weeks off from Blog Talk Tuesdays but plan to post one tomorrow. To be honest, I’ve been putting off some of the later topics because I feel like they’re more intense and involved and I want them to be very thorough, so if you have any questions you’d like to see addressed, please feel free to ask away.

Here are the remaining topics I have on my list to cover:

  • Blog readership
  • Blogging organization
  • Blogging and money
  • Freelancing

If I’m leaving out a topic that you’d like to see featured, just let me know!

Be sure to follow PBFingers on Instagram and Facebook!

I'd love to connect with you! I am always so grateful when you let me know you tried one of my recipes or workouts and tag me in your photos or updates. Thank you so much!!!

delicious looking breakfast. diner hash browns are one of the best things you can get from diners! i noticed you added onion to them- thats definitely key! i had eggs myself, with spinach and onion, and i tried morning stars veggie bacon for the first time. as much as its appearance makes me laugh (due to how “fake” it looks), it actually hit the spot!

I love breakfast potatoes and I never think to make them for myself… but so easy! Haha. And blog readership is definitely a topic I’d want to hear about. Also, maybe the move to your own domain? I think I’m ready to make the switch (especially since on blogger I can’t respond to comments, and connecting with people is the whole reason I started my blog!) but I’m really nervous about the technical stuff – not my forte.

Hey julie, I just wanted to share with you what I learned in my med school class, as I’m a first year med student.
One egg yolk has 250mg of cholesterol, and the daily recommended intake is about 300mg
Though they are the good cholesterol and also have a ton of protein and other good stuff packed in, its probably good to limit egg yolk intake to one…
Just watching out for your health, thats all 🙂

Are your classes also talking about the studies that keep coming out about how dietary cholesterol has very little to do with the amount of cholesterol in our bodies? I’m truly curious, because more and more keep coming out and I wonder how often medical classes and books are updated.

Its basically like a “stationary lunge squat” Push your back into the ball against the wall and make sure your front knee doesn’t go over your toes. You can also do a regular squat leaning against the ball. Do them to a slow count and I feel the burn!

I’m so excited you’re bringing blog talk Tuesdays back! I love them!

I don’t know if these have already been covered, but as a new blogger, I was wondering:

-How/where are the best places to promote your blog.
-How to get ads set up on a blog. I have a google adsense account but am not sure what to do with it, how to find advertisers, and where to place them on my blog.

And that breakfast looks amazing! I love breakfast potatoes.

i started incorporating squats, but am not anywhere close to 100… yet! for some reason, squats hit me in day-after soreness more than any other exercise. i swear i could do 400 bicep curls (ok probably not) and 20 squats would leave me in more pain!

love the restaurant-style at home breakfast 🙂

I am definitely with you on the idea of focusing on one body part, arms or legs, and I am making a workout schedule right now based on it! thanks for the inspiration (and the workouts!) I am gonna try and conquer the 100 squats tomorrow…When I was playing soccer in college, I was able to max out at 212 lb squats! I never wanna go back to that, but I know I have the strength to do 100 at least! I’ll let you know when I can NOT walk on Wednesday!

They always want sample work and even as a journalism major, I never had anything really published per say so it’s tough to start somewhere. Would just like a variety of ideas. Hey Julie! I was noticing how you’ve replaced your body pump classes by focusing on one body part at a time. If you’re anything like me, not having an instructor help move you along and the company of fellow class members can make workouts a bit blaahh day after day. So, I thought I’d share some recent info I found out from a personal trainer (I too am making the switch to split workouts). Although body pump is a good class for people to learn the basic exercises it’s more of an endurance/cardio workout than an actual conditioning workout. I was told you will get better results, leaning out and toning, when you concentrate on the individual body parts…. who knew?! I can’t speak on experience yet, but I’m giving it a shot!
    Enjoy your day 🙂
