Fiesta Frittata

November 11, 2014 by Julie 724 Comments

Jump to Recipe·Print Recipe

Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!

Fiesta Fritatta

A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.

Pete and Gerry's Organic Eggs

The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.

Pete & Gerry's Eggs

Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.

Fiesta Frittata Recipe

To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

  1. Whisk eggs together in a large bowl. Add black beans through garlic salt.
  2. In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
  3. Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)

Fiesta Frittata Easy Recipe

We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

If you decide to give this recipe a go, I hope you enjoy it as much as we did in our house!

I love that the prompt has a thought provoking question such as why we should support small family farms that know how to properly care for their hens. I don’t eat meat because I have a problem with the way we treat livestock as if they are a product rather than a living organism. unfortunately I still support these malpractices through eggs because I need the protein and nutrition these easily provide. I love eating organic locally grown eggs.

I love small family farms because they are independently owned and operated. I like knowing that the farmers know their livestock or their produce and take pride in living the farming lifestyle and feeding themeselves and others with the bounty of the Earth.
Small producers can ensure their flock is healthy and a healthy hen produces good, safe and fresh eggs for us to enjoy!

I love having eggs on pretty much everything! Fried eggs over hash browns or pancakes… or even fried eggs on cheeseburgers or over rice 🙂 YUMMM! I think it’s awesome to support local family farms that give the chickens a natural environment. I always appreciate ethical treatment of animals. It makes me feel a lot better about the food I buy 🙂

I grew up with Friday nights being frittata night. Mom would use up most of the left over in the frittata, it would be different every week … now we get most of our eggs locally ….our local egg lady will deliver to my in laws home for 5 family’s and we all pick them up there (and my in laws get to see everyone at least once a week)
