Gluten-Free HERSHEY’S “Perfectly Chocolate” Chocolate Cake

Valentine’s Day is this Saturday and I think that means we could all use a little somethin’ sweet in our lives. This gluten-free Hershey’s Perfectly Chocolate cake recipe is the perfect treat for a special occasion.

And if that something sweet is a slice of decadent homemade chocolate cake with rich, fudgy frosting, that’s all the better, right?

Gluten Free Chocolate Cake Recipe

A few months ago, I had the pleasure of flying to Hershey, Pennsylvania to visit The Hershey Company headquarters. (Yes, the town is named after the founder of The Hershey Company.) During my time in Hershey, I ate a ton of chocolate which was obviously a highlight of the visit, but I also had the chance to provide feedback to the company about some of their recipe development projects, one being this incredible gluten-free chocolate cake.

When I recapped my trip to Hershey on the blog back in July, a bunch of you requested the recipe for this chocolate cake once it made it through HERSHEY’S Kitchens testing process and was approved for public release. Well, my friends, that time is now and I am thrilled to be able to share it with you today!

This recipe is not only relatively simple for a made-from-scratch cake, but it’s also moist, rich and incredibly delicious. And please don’t opt for store-bought chocolate frosting. HERSHEY’S “Perfectly Chocolate” Chocolate Frosting is the best and I could not stop licking the bowl once I was done frosting the cake!

Gluten Free Chocolate Cake Recipe

Gluten-Free HERSHEY’S “Perfectly Chocolate” Chocolate Cake

Prep time: 21 Minutes

Makes 12 servings

Ingredients

  • 2 cups sugar
  • 1-3/4 cups gluten free all-purpose baking mix
  • 3/4 cup HERSHEY’S Cocoa
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • “PERFECTLY CHOCOLATE” CHOCOLATE FROSTING (recipe follows)

Directions

1. Heat oven to 350°F. Grease two 9-inch round baking pans; dust with cocoa.

2. Stir together sugar, baking mix, cocoa, salt, baking powder and baking soda in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour into prepared pans.

3. Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool 5 minutes; remove from pans to wire racks. Cool completely. Frost with “Perfectly Chocolate” Chocolate Frosting.

Homemade Gluten Free Chocolate Cake Recipe

Gluten-Free HERSHEY’S “Perfectly Chocolate” Chocolate Frosting

Makes 2 cups frosting

Ingredients

  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup HERSHEY’S Cocoa
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Directions

1. Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount of additional milk, if needed. Stir in vanilla.

Note: Always read labels of each ingredient to ensure that they are gluten-free prior to use.

    As a resident of PA this makes me happy! Glad you were able to come up and visit Hershey! It’s sad I live so close but it’s been so long since we’ve been there, sigh, I could use some chocolate world in my life hopefully this summer!

    This looks delicious! As a person who is gluten free due to Celiac disease I appreciate your note on the bottom about checking each ingredient to be gluten free. You can never be too safe and some products are subject to cross-contamination at the production level and therefore aren’t GF even when you would think they are, so it’s very important to do your research!

    Going to try this out on Saturday for my Valentine!

    That cake looks so good!! I have a question–gluten free all purpose baking mix–could this be substituted for flour if gluten does not bother you? I’m semi new to all the ‘new-er’ baking ingredients, I’m not quite sure what “all purpose baking mix” consists of or what it could be substituted for…

      Hi liz!! If you visit Hershey’s website, they have a non gluten free version you could make that uses regular flour!

    What a great way to start out the day! That cake looks AMAZING! It’s so cool you got to go to Hersey’s headquarters! My dad grew up in PA and always brags about hanging out at Hersey Park. I still have yet to go, but it is certainly on my list!

    My mom has been using this recipe for years (non gluten free version) and it’s the only chocolate cake recipe I’ll use! I actually have two frozen chocolate cakes in the freezer. 🙂

    I was recently diagnosed with celiac disease, and I was just thinking about how today is the first birthday in my life that I wont have a double chocolate cake, but now that may not be the case! Not that you planned it, but thank you for sharing this recipe on my birthday!! 🙂 I cant wait to try it!

    Anyone ever heard of replacing the water with coffee? I hear it increases the flavour of the chocolate without the actual taste of coffee. I wonder how it would work with this recipe??
    The cake already looks so moist, I’d be worried to ruin it! 😛

        It is!! I’ve tried it with amazing results in a chocolate-peanut butter cake! It’s so simple! Like replacing water with 7UP in a pie crust.
        I don’t know how it works, but it just made the chocolate flavour stand out without overpowering the PB…
        Mhmmm… I feel a baking extravaganza coming on!!

    I am not a huge cake fan in general but that looks pretty delicious. My mom makes cakes as a side business, so I got spoiled to her cakes but also got pretty burnt out on them in general since they were always all over the house!

    Yay! I am SO excited about this post!! Their original recipe has been my go-to chocolate cake for years, and I thought I’d never get to enjoy it again after finding out about my wheat allergy!

    I have an important question for you. Did your all-purpose GF baking mix have xantham gum in it? Some do and some don’t, but it is typically required for baking to act as a binder. Thanks in advance!!
