Easy Greek Yogurt Rotisserie Chicken Salad

I had two alternate blog post titles in mind for this one: Chicken Salad That Actually Tastes Good and Chicken Salad for People Who Don’t Like Chicken Salad. (Clearly I don’t consider myself the biggest fan of chicken salad in general.) Growing up, my mom made tuna salad regularly and it was always a personal favorite. We were never really a chicken salad family and it’s not something I gravitate towards at cookouts or parties when it’s served because it always looks so heavy and bland. And then I tried my hand at making homemade chicken salad with leftover rotisserie chicken and flavorful herbs and HOLY COW it was fantastic. This cucumber dill rotisserie chicken salad is SO good!

Cucumber Dill Greek Yogurt Rotisserie Chicken Salad

I used Greek yogurt, dill, green onion and cucumber and the cold and creamy chicken salad was full of texture and fresh flavors and didn’t taste at all like the mayonnaise-laden chicken salad that evokes images of grab-and-go sandwiches that have been sitting out for a questionably long time. It’s packed with protein thanks to both the chicken and the Greek yogurt and the crisp cucumber and dill add a fresh breath of summertime into this lightened-up salad.

Easy Cucumber Dill Greek Yogurt Rotisserie Chicken Salad

This Greek Yogurt Rotisserie Chicken Salad is made with a base of rotisserie chicken – yep, no need to cook your own chicken on a hot summer day! – and is a delicious 10-minutes-or-less dish that tastes great served on a bed of greens, toasted whole grain bread or an old fashioned hamburger bun.

Description

This recipe for lightened-up Cucumber Dill Greek Yogurt Rotisserie Chicken Salad comes together in less than 10 minutes and tastes like summer in a bowl thanks to crisp cucumber and flavorful herbs. Made with Greek yogurt, it’s a protein-packed salad that will fill you up without making you feel weighed down!

 


Ingredients

Scale
  • 3 cups rotisserie chicken, chopped and chilled
  • 2/3 cup full-fat Greek yogurt
  • 1 tablespoon dijon mustard
  • Juice of 1/2 lemon
  • 1/3 cup green onion, chopped
  • 3/4 cup seedless cucumber, peeled and chopped
  • 1/2 cup celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon (dried) dill
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Mix all ingredients together in a large bowl and stir until completely combined.
  2. Store any leftovers in an airtight container in the refrigerator.

Notes

Important note: If you are making this Greek yogurt rotisserie chicken salad recipe ahead of time, wait to add the cucumber until right before you serve it to prevent the salad from getting too watery and preserve the crispness of the cucumber.

I highly recommend using leftover rotisserie chicken (as the recipe notes) in this salad as the depth of flavor is more intense than canned chicken (bleh) or even plain grilled chicken.

I used full-fat Greek yogurt in this recipe to keep it creamy without sacrificing flavor. You could use a lighter version of Greek yogurt but I’d recommend using a 1:1 ratio of Greek yogurt to mayonnaise if you make this swap.

    I’m not a huge fan of chicken salad either and this sounds so good. I do always sub greek yogurt for mayo when making it and love the addition of dill and cucumber. We’re huge dill fans here. Perfect summer meal 🙂

    I’m excited to try this – I don’t love chicken salad (esp vs. tuna), but I want to try this. Your chicken is cut so small too…. I think that might be the key! I always hate getting those big bland chunks in chicken salad! Thanks for the recipe!

      Me too!!! I definitely prefer it chopped up really small. It makes it almost fall apart when you eat it and soak up more of the other flavors. Much better!

    I really don’t like chicken salad either, and this looks delicious! A few months ago I tried a recipe for a chickpea salad that sounds very similar to this recipe and while I liked it, I think the chicken would bring even more flavor to it.

    I’m definitely going to try this! I seriously hate mayo and regular chicken salad and typically make mine with a mashed up avocado instead (which I love too!). I’m always looking for healthy lunches and this looks great too!

    I love dill! Clearly I’ve been missing out by just putting it in scrambled eggs. Great looking recipe, I’m going to try it, but will probably add chopped apples or sliced red grapes. I like some fruit in my chicken salad 🙂

    Oh man, if you’ve only had bland chicken salad or weird chicken salad sandwiches from vending machines, no wonder you haven’t liked it! I’ve only ever eaten and enjoyed homemade chicken salad by my family members – we only use rotisserie chicken, that’s all we’ve ever used! And we’ve always diced our chicken into small pieces, and it’s so so good. We put chopped water chest nuts in ours too (keeps it from getting soggy and gives you a great crunch!)

    Now that you’ve found a way to enjoy it, you can try out some other recipes! We make this one a lot and love it!

    Grating then draining the cucumber is a great technique when making tzatziki sauce and I imagine could be great for this salad, too! Or if you have a juicer, juice the cucumber then you’re left with the flavorful pulp!

    Sounds really delicious! I am sensitive to cucumbers, but I’m thinking jicima, zucchini, or extra celery might be a good substitute. Any other ideas?

    I am a chicken salad lover (without grapes!) but this sounds like a nice change up from the traditional version. Also, Costco’s rotisserie chicken salad is to die for albeit not nearly this healthy.

    I’ve already made this salad twice and both times received lots of compliments! It’s the perfect healthy salad for summer. I used a bit less parsley the second time as I’m not too fond of that flavor and also did not peel the cucumber for a good source of fiber. Thanks for sharing!
