I have a fresh, produce-packed chickpea salad recipe to share with you guys this afternoon, but first let’s recap the day!

Dill Chickpea Salad

After I published my morning blog post, I drove to work to teach TRX. Shout out to Lindsay for posting a TRX vide on Instagram yesterday! I try to cycle through various TRX exercises in my class so class regulars don’t get bored, but I totally forgot about the squat reach with a row until she posted the video yesterday. I made sure to incorporate it into today’s workout, so thank you, Lindsay!

While I was teaching today, one of the class participants asked me if I had a ring tied to my shoe for good luck. (Do people do that?)

Confused, I looked down and realized that I forgot to put the ring I double-knotted to my shoe before this morning’s workout back on my finger when I was done.

Do you guys wear rings when you work out? I will typically wear my wedding ring because it’s comfortable and I’m so used to it, but I often take off the ring I wear on my right hand. I forgot to remove it at home before the gym this morning, so I tied it tightly to my shoe since I didn’t bring a bag with me and didn’t trust it in my jacket pocket. Whatever works!

Lunch

Once lunchtime rolled around, I inhaled the chickpea salad I prepped (and photographed) yesterday in the break room before I had to head out to a Taste of Ocala meeting where I ordered a fabulous cappuccino.

But let’s back up and talk about the chickpea salad because it was way too good not to share.

Description

Colorful, fresh, delicious and nutritious! It’s super easy to throw together in a flash!


Ingredients

Scale
  • 1 15-ounce can reduced-sodium chickpeas, rinsed and drained
  • 1/2 large cucumber, chopped
  • 1 pint cherry tomatoes, quartered
  • 1/2 red bell pepper, chopped
  • 1/2 orange bell pepper, chopped
  • 1 celery stalk, diced
  • 3 tablespoons olive oil
  • Juice of one lemon
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 3 teaspoons freshly chopped dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Combine chickpeas through celery
  2. Mix together olive oil, lemon, honey, dill
  3. Pour olive oil dressing over chickpea mixture and toss to coat
  4. Add salt and pepper and stir
  5. Enjoy immediately or store in the fridge until ready to eat

Notes

I think this salad would also taste delicious with salmon or pulled chicken. Yum!

    I know this is a weird question. And I find it weird that I’m even asking it BUT….. what do chickpeas taste like???? I’ve never had them nor hummus. :O

      Kind of like canellinni beans if you’ve had those…they’re very neutral and plain and will take whatever flavor you put in them. They’re packed full of protein!

    Oh yea, I don’t wear any rings when I workout, or any jewelry for that matter. Granted I don’t have a wedding band or engagement ring so I’m not sure what I’d do with that!

    I always tie my apartment key to my shoe laces when I go for an outdoor run 🙂
    I hate leaving the door unlocked and usually don’t have pockets in my workout gear. Works like a charm

      My husband did that too until he realized he was locked out of the house when he left his running shoes inside the house (as he was coming back from work). He did it twice too!

    That salad looks so good! I can’t wait to try it! I can’t wear any jewelry when I work out; it just feels weird. However, if I’m going for a run after work and have nowhere safe to put my engagement ring, I’ll wear it. But the whole time I’m glancing at my finger or touching it to make sure it’s still there!

    I’m going to have to try that squat reach and row move tomorrow! TRX is definitely my favorite fitness equipment as of right now. I love how it can make bodyweight exercises a little (or a lot) more challenging!
    The chickpea salad looks SO delicious and refreshing, and it’s really making me crave springtime weather. Gahhh.

    I also keep the rings on my left hand (they’re not wedding rings, btw) and take of the one on my right hand. Something about wearing it while I workout just feels weird!

    Yum! I make a variation of this salad quite often with feta cheese. Adds a nice salty, creamy pop!

    i cannot wear any jewelry when i work out. the minute i get home i have to strip everything off; work clothes, makeup, jewelry, hair goes up, face gets washed. i’d probably injure myself by hitting myself in the face with my ring hand.

      Same here! I am a clutz and if I left my wedding rings on, I would probably find a way to hurt myself with them. Or jam my fingers and not be able to get my rings on. So yes they come off before working out!

    I don’t wear any jewelry when I exercise. I can barely stand my hair in a ponytail while I exercise, so working out with earrings or a bracelet or rings would be too much. And, I would worry that I would lose them!

        Oh, I totally said that the wrong way! I absolutely cannot wear my hair down or even in a pony while exercising. It’s got to be up in a tight bun so it won’t fall out mid-burpee! So sorry!

      I’m not Julie, but I think instant oatmeal is healthy as long as it’s not the flavored kind. They tend to have a bloated ingredient list and unnecessary added sugar, in my opinion.
      I personally don’t buy the packet instant oatmeal because I can get more for my money with the container of quick oats and just add my flavors; i.e. walnuts, blueberries, almond butter etc.

    Chickpeas are my go to snack/lunch on the go idea. So tasty. I don’t tie rings on my shoes but do tie house/car keys while running 🙂

    That salad looks tasty and I look forward to trying it out this spring. I never wear jewelry to the gym and almost always take off my wedding rings when i clean house or do dishes. My mom had her wedding band fall down the drain when she was young. The plumber was able to retrieve the ring but her experience has served as a cautionary tale.
