Oatmeal Peanut Butter Banana Cookies

Sundays are the perfect day for baking. I made these oatmeal peanut butter banana cookies that are actually pretty healthy for cookies.

Ryan and I tend to tackle annoying household chores on Sunday afternoons and I find that baking something and smelling the sweet smell of a homemade treat wafting from the oven makes scrubbing or vacuuming a little less miserable.

I don’t mind doing dishes nearly as much when I know that, in 12 short minutes, I’ll be biting into a warm, freshly baked cookie.

I made this batch of oatmeal peanut butter banana cookies last Sunday and wasn’t sure how they would turn out since I was experimenting a bit and was trying to make them relatively healthy by cookie standards.

As I placed the rounded balls of cookie dough on the baking sheet, I sampled my fair share of the dough and had high hopes when it tasted great.

Luckily the cookies ended up being nice and soft and packed with peanut butter and banana flavor.

Description

Tackling household chores won’t be nearly as a challenge if you have these cookies baking up in the oven. Within minutes, you’ll be biting into a warm, freshly baked cookie.


Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/3 cup creamy peanut butter
  • 1/3 cup canola oil
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 1/4 cup old fashioned oats
  • 1/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper or spray with cooking spray.
  2. Mix bananas, peanut butter, canola oil and brown sugar together until relatively smooth. Add egg and vanilla and mix until combined.
  3. In a separate bowl, combine oats, flour, baking powder, baking soda and salt.
  4. Slowly mix oat mixture into banana mixture until everything is combined.
  5. Place spoonfuls of dough on cookie sheet and bake for approximately 10 – 12 minutes.
  6. Allow to cool and enjoy.

    I am making these cookies today, I agree with you that having the house smell of freshly baked cookies makes chores way more enjoyable! I am substituting the PB for Coconut PB Spread. We’ll see how they turn out 🙂

    Very nice! I did a lot of adding things in. I added a little extra flour to thicken up the batter and then tossed in some crushed walnuts, some raisins and chocolate chips. Texture turned out really nice though and good taste too. Cranberries would have worked well too. I wonder if apple chunks and cinnamon would work?

    I was looking for something different to do with over rippened bananas, this is perfect. I added more flour, chocolate chips, cinnamon, and substituted oil with applesauce, and made them into bars. Thank you so much, this is worth entering in our county fair.

    After struggling with eating my (very affordable and healthy) oatmeal, I had an epiphany to bake oatmeal banana peanut butter cookies, and decided to google it to see if anyone else had thought of it, and what their results were.

    Needless to say, I discovered your blog! I haven’t made the cookies yet, but yours look awesome, and seeing your concise, helpful blog has been SO motivating, it’s actually prompted me to consider creating my own blog, something I had resigned myself to being too time consuming and difficult to ever actually attempt.

    Hey, just made these cookies and they are amazing! made them a little to large first time round as didn’t realize they would expand so much in the oven….2nd time made them a little smaller and baked them for 12 minutes, they came out perfect! Cant wait to give them to my family to sample. Thanks!

    My husband owns a fireplace company therefor he has a lot of male employee’s. They love it when I bake cookies for them and this one is a definite “Winner” I however tweaked it a bit, I added unsweetened coconut and choc chips. Thank you for this recipe!!!

    Sorry to be a pain but I don’t think I have self control to have 4 dozen cookies lying around! Any idea how I could cut the recipe in half? Just want to make sure I have the proper modified measurements!?

    Finally made these! I added chocolate chips after the first tray just to add to the incredible oatmeal/banana/pb combination. Plus I’m feelin’ pretty good about these being *kinda* healthy 🙂
