This recipe for roasted sweet potato wedges with hot honey drizzle is the perfect side dish for those who love a little heat with somethin’ sweet! Thank you to Blue Apron for teaming up with me for this post and allowing me to share this delicious recipe with you!

Roasted Sweet Potato Fries with Honey Drizzle

Every once in a while, I stumble upon a recipe that blows me away both in its simplicity and its flavor. Easy recipes are my favorite and when a no-fuss recipe ends up getting rave reviews from both me and Ryan, I instantly become a fan and the recipe makes it into my not-so-organized recipe folder for future use and inspiration.

This recipe for roasted sweet potato wedges with a hot honey drizzle was one of those recipes!

Roasted Sweet Potatoes with Hot Honey

The recipe appeared in a Blue Apron delivery we received earlier this month that called for the hot honey to be drizzled over chicken and sweet potato wedges and served with a fresh kale slaw seasoned with caraway seeds, celery seeds and ground mustard.

It was the kind of meal that had us wishing we had leftovers to enjoy the following night, so I ended up copying the sweet potato and hot honey drizzle recipe to use as a side dish to serve with burgers on the grill later in the week.

The recipe requires minimal ingredients and minimal prep work but seriously delivers on flavor!

Description

This recipe for roasted sweet potato wedges with hot honey drizzle is the perfect side dish for those who love a little heat with somethin’ sweet!


Ingredients

Scale
  • Two sweet potatoes
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1/4 teaspoon crushed red pepper flakes
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 475°F. Wash and dry sweet potatoes. Halve the sweet potatoes lengthwise; slicing each half into fry-size wedges.
  2. In a small bowl, combine the honey and as much of the red pepper flakes as you’d like, depending on how spicy you’d like the honey to be; season with salt to taste. Set aside in a warm place.
  3. Place the sweet potato on a sheet pan. Drizzle with olive oil and season with salt and pepper; toss to thoroughly coat. Arrange in an even layer, skin sides down, and roast 20 to 22 minutes, or until lightly browned and tender when pierced with a fork. Remove from the oven.
  4. Drizzle with as much of the hot honey as you’d like, serve and enjoy!

    So many great choices to choose from. I think my first choice is barbeque chicken sandwiches. I think many of the fun pasta dishes or gnocchi look amazing too.

    Oh boy! Too many choices..and they seem so easy after a day of swim lessons at the lake! And you know a quick healthy meal is perfect for two young kiddos and hubby arriving home from work!

    I would have to go with Spicy Pork Tacos, Empanadas with Pico de Gallo or vegetable pad Thai!!

    I would love to try the Spiced Pork Tacos with Crema, Pickled Onion & Elote-Style Corn.     These wedges look absolutely amazing! As for the Blue Apron recipes, I’d definitely want to try the veggie pad Thai or the red curry and coconut shrimp stir-fry. Yum!

    My first choice would definitely be the Serrano Pepper and Goat Cheese Burgers, and after that I would love to try the Spinach and Basil Pesto Gnocchi or the Shredded BBQ Chicken Sandwiches. Winning this might actually get my boyfriend to try a few new things!

    The seared cod with spring vegetables and lemon-mustard vinaigrette would be amazing! BUT…how could I NOT want to try the grilled goat cheese and plum jam sandwich . . .Mmmmm!!!

    I would love to try the Spiced Pork Tacos. My husband and I love trying new recipes for our weekly taco Tuesday. Also Sweet Corn season is just starting here and I have been eying some different fun street corn recipes so would love to try that out for the side with this meal!
