S’mores Pancakes

Nothing screams Sunday morning like a lazy pancake breakfast in your pajamas. A good way to make Sunday morning pancakes feel extra special is to add a little chocolate to the batter, right? But something even better that the whole family will devour are s’mores pancakes.

Yesterday morning I was the first one up and wanted to surprise my family with a delicious, comforting breakfast. Judging by the fact that no one left a single bite on their plate, I think I succeeded!

Heart Healthy S'mores Pancaekes

When my sister and I were growing up, our parents took us on camping trips all over Illinois and Wisconsin. We cooked every meal over a campfire and filled our days with bike riding, fishing and exploring. Of course every night had to end with s’mores and my sister and I fell in love with the ooey gooey treat at a young age. (Please tell me some of you out there have tried to make s’mores in the microwave.)

Since my sister shares my affinity for s’mores, I wanted to try my hand at incorporating the flavors from our favorite campfire snack into our morning meal.

Krusteaz Heart Healthy Pancake Mix

I added crushed graham crackers, chocolate chips and mini marshmallows to Krusteaz Heart Healthy Pancake Mix that the company sent to me to try. The end result was delicious! The pancakes were fluffy and packed with flavor.

Description

Nothing screams Sunday morning like a lazy pancake breakfast in your pajamas. A good way to make Sunday morning pancakes feel extra special is to add a little chocolate to the batter, right?


Ingredients

Scale
  • 1 cup Krusteaz Heart Healthy Pancake Mix
  • 3/4 cup water
  • 4 graham cracker sheets, roughly chopped
  • 3 tablespoons semi-sweet chocolate chips
  • 1/3 cup mini marshmallows
  • Optional: Additional graham crackers, chocolate chips and marshmallows for garnish

Instructions

  1. Combine all ingredients and stir until thoroughly mixed. Batter will be lumpy.
  2. Heat griddle to 375 degrees (or heat a skillet over medium heat) and spray with cooking spray. Pour slightly less than 1/4 batter per pancake onto griddle.
  3. Cook pancakes for approximately 90 seconds on each side, until golden.
  4. Remove pancakes from pan and top with additional graham crackers, chocolate chips, marshmallows and syrup if desired and enjoy!

    My college roommates and I used to make s’mores in our dorm oven–we had hall snacks once a week, and s’mores from the oven were usually one of the most popular items 🙂

    The last time I went camping, I came to the campground in my swimsuit. Well, I completely forgot the necessary undergarments to wear after swimming. Needless to say, we had to make a trip to Walmart.

    I went camping a couple of weeks ago. It was the first time camping in over a decade and the first time I went camping with my in laws. It was a blast and of course we had s’mores. We even had s’mores for breakfast. It was kind of amazing.

    I love that Krusteaz stuff. It’s like pancakes for dummies, which is me. Sometimes I add a little bit a funfetti cake mix to it to make birthday cake pancakes. So good!

    Camping in Ireland is hilarious…wet, windy and decidedly chilly. I remember we went when I was 6 for the first time and having to pee in a bucket if we needed to go during the night!

    I love smores and their burnt marshmallowy goodness! Unfortunately they don’t have any graham crackers in the UK so I always make sure to get a few boxes and some marshmallows when I go back home to bring back with me 🙂

    I’m not a huge fan of camping but I do love to hike AND eat s’mores. These pancakes are perfect for me 🙂 This seems like such an easy recipe but a total crowd pleaser. Love it!

    S’mores bring such a sense of nostalgia into my life! We went RV camping a ton when I was a kid (still go a couple times a year!) and we always made s’mores, especially in the fall over a small fire. S’mores bring me right back to my childhood everytime I have one! 🙂

    I have fond childhood memories of Girl Scout camping trips, and have enjoyed camping at Wisconsin State Parks as an adult. What was your favorite WI park? My #1 pick will always be Governor Dodge (in Dodgeville, WI near The House on the Rock)!

    Oh wow these look amazing! I have to agree I pretty much drool over anything with s’mores in then name, but then that is probably because marshmallows are one of my favorite things in the world!

    Yum!!!! I always love chocolate chips added into my waffles or pancakes, but marshmellow and graham cracker?? Ugh this sounds to die for!! Last time I went camping was 11 years ago haha I do have the urge to go again since it’s been so long ago though!

    Dessert for breakfast? I can definitely get down with that! I haven’t been camping in YEARS, but I used to love it as a kid. Although when it comes to s’mores… is it blasphemy to say that I actually prefer simple roasted marshmallows on their own? Golden brown on the outside and gooey on the inside? Ohhh perfection.

    I’d actually never been camping until I met my now fiancé… and we both LOVE to camp now. I think we are planning a trip with his family sometime in March 🙂

    Another s’more recipe that my aunt used to make us that I think you will adore: oat bran (for that healthy addition :)) chocolate chips, marshmallows, and graham crackers. The oat bran is a perfect vessel for melting the chocolate and marshmallows. She used to call it s’more cereal.

    Those s’mores pancakes look so awesome, can’t wait to make them! I have actually never been camping, can’t say I’m bummed about that either. I wouldn’t mind camping in a camper or something, but that would be about the extent of me and camping 😉

    The last time I was camping was this spring when my fiance and I went horn hunting with our four horses. We will be going camping (possibly in the snow) this Friday, Saturday, & Sunday to go elk hunting.

    I absolutely love camping but I haven’t been for years! S’mores are the best, I grew up going to summer camp in Minnesota and was a counselor as well and they were always a huge hit when we were camping out!

    The last time I went camping was a couple summers ago with my brother. While it was a lot of work because we hiked into a back country camping site, it was definitely worth it cause we didn’t see anyone else the whole time we were there.

    I’m a pretty dedicated pancakes-from-scratch kind of girl, but I’ve gotta say, I LOVE Krusteaz pancakes. That was pretty much my dad’s go-to when he made us pancakes growing up, and man oh man did I love them. Making them s’mores-y sounds fantastic!

    Those look awesome! We used to go “Kelly Clan Cabin Camping” cute right? My family and three other families (aunts, uncles, cousins…) would rent out a cul-de-sac of cabins and camp for a week. It was so much fun! We would kayak, hike, cook, play with chalk…. ahhh to be 12 again.

    I love camping! We always do it up with lots of food, booze, big fires and nature hikes. 🙂 On our last camping trip most of the group had a biiiittt too much to drink and I ended up being the only one to get up before noon! I somehow managed to start a fire, brew some coffee and make breakfast for everyone all by myself. I was pretty proud of myself!
