When I’m looking for new recipes, my main requirement is that a recipe be simple. I am not one who likes to slave away in the kitchen (unless it’s for a special occasion!) and easy peasy recipes that come together in 20 minutes or less are the kind of recipes I frequently gravitate toward week after week. When I found these Thai chicken lettuce wraps in The Fitnessista’s new book, HIIT It!, it was pretty clear to me that they could be assembled in less than 10 minutes.

Description

Thanks to simple preparation, this recipe comes together in less than 10 minutes!


Ingredients

Scale
  • 2 tablespoons nut butter of choice (I used almond butter)
  • 1 tablespoon milk of choice (I used coconut milk)
  • 1 teaspoon tamari
  • 1/2 teaspoon honey
  • 1/4 teaspoon garlic powder
  • sea salt to taste
  • pepper to taste
  • 4 large leaves romaine lettuce
  • 1 cup shredded chicken
  • 1 sliced bell pepper
  • sliced pineapple
  • 1 tablespoon fresh mint
  • 1 tablespoon fresh cilantro

Instructions

  1. In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
  2. Add the chicken and toss to coat
  3. Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
  4. Roll up and eat like a taco

Notes

Serves One (Recipe source: HIIT It! by Gina Harney)

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.

Thai Chicken Lettuce Wraps Recipe

Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!

Fitnessista Book HIIT It

Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.

The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.

Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.

There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!

HIIT It workout

The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

    Fav easy peasy meal is probably sweet potato lentil curry or roasted sweet potato topped with black beans, avocado and egg.

    my go to meal is probably either a salad with some sort of meat on top or just a meat and frozen veggie I steam and season really quick.

    I would love her book because it seems as time goes on I am getting less and less time to workout, and since this year’s goal is to focus on strength, her book on hiit workouts would be a great help (also I hope to have some traveling plans this year so that is a bonus!)

    Stirfry is my go to favourite. It uses anything that’s in my fridge / freezer and always tastes different every time I make it so I can never get sick of it

    I have 2 I always go for. First is overnight oats, super easy especially if your always on the go. Second is ground turkey with egg whites and salsa.. currently my lunch for the last week and I’m still not tired of it!

    The HIIT book would be awesome to take to the gym when I want to add a bit more to more workout, or even to work when I know I can squeeze in some time on lunch.

    Quinoa Bowls are my go to, i just throw whatever veggies I have in with the quinoa and some spices. So easy and tasty! I’d love to try to some new recipes and workouts!

    1.My favorite easy go to meal is egg cheese spinach muffins! Bake at 325 for 20 minutes in a muffin pan!! My husband even eats them:)

    My favorite easy peasy recipe is utilizing Morning Star burgers to add to my quinoa pasta mixed with frozen veggies and some tomato sauce – makes for a healthy, quick version of spaghetti and meatballs! I would love to have this book for the yummy recipes you mentioned, but also the HIIT workouts as I recently started doing more interval based workouts at home and would love some fresh ideas 🙂

    What is one of your favorite go-to easy peasy recipes? Chicken parm. Use a pre cooked chicken breast, top with a slice of mozz cheese and mariana and zap it.

    My favorite easy recipe has to be grilling chicken apple sausage and mixing with roasted veggies! I tried roasting my own veggies this winter and was surprised how easy it is! That or slow cooker chili. I’d love to win the book because I am new to cooking and I’m also interested in learning more about HIIT workouts!

    I would love this book because I am interested in doing HITT workout but have no idea where to start. I am limited on time and feel these workouts would be very beneficial to me a few times a week. I don’t belong to a gym so I must be able to wokrout from home.

    My favorite easy recipe is:
    1 egg (easy over), 3 eggs white (scrambled), half an avocado, 1 tablespoon of homemade salsa and some greens.
    It’s the perfect breakfast!

    One of my favorite easy recipes is to chop up some assorted veggies, add in spinach, Rao’s Arrabiata sauce and some capers, microwave for 2 minutes. Add in a small cup of tuna and carb nada noodles, mix up, add in garlic powder, toasted onion powder, a little goat cheese and some freshly grated parmesan. Full of good veggies, high protein, good fat and carbs!

    I have 3 children, so time is of the essence! Quick, effective workouts and easy meals are key!

    A chicken stir fry is my go to I’m too tired to be creative recipe. Load up on frozen veggies and throw some rice in the rice cooker. Add some soy sauce, sesame oil, rice vinegar, brown sugar, and chili oil, and voila!

    My go-to easy meal is 2 eggs over whole wheat toast with smashed avocado. It is quick to make and fills me up! I would love a copy of this book because I have been feeling sluggish and need a work-out routine that is easy and exciting.

    My go-to, easy recipes are one-pot meals. One pot pasta, one pot rice skillet, etc. My favorite: http://www.apronstringsblog.com/one-pot-wonder-tomato-basil-pasta-recipe/. So simple, but healthy and delicious.
