Thai Chicken Lettuce Wraps

Description
Thanks to simple preparation, this recipe comes together in less than 10 minutes!
Ingredients
- 2 tablespoons nut butter of choice (I used almond butter)
- 1 tablespoon milk of choice (I used coconut milk)
- 1 teaspoon tamari
- 1/2 teaspoon honey
- 1/4 teaspoon garlic powder
- sea salt to taste
- pepper to taste
- 4 large leaves romaine lettuce
- 1 cup shredded chicken
- 1 sliced bell pepper
- sliced pineapple
- 1 tablespoon fresh mint
- 1 tablespoon fresh cilantro
Instructions
- In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
- Add the chicken and toss to coat
- Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
- Roll up and eat like a taco

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.
Simple, right!? And oh-so-delicious!
Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!
Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.
The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.
Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.
There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!
The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

My go to is always a big old grilled chicken salad. It takes little time and effort to throw everything together. Oooohhhh I want this book! I have been trying to integrate more intervals into my workouts and need some more ideas…I also need some new recipe inspiration!
My favorite quick meal is crumbled sausage sauteed with chopped sweet potatoes and kale with some sriracha and honey on top. I’ve been reading Gina’s blog for years now and would love to get a copy of her book.

One of my favorite easy recipes is the Perfected Chickpea Salad from the Oh She Glow’s cookbook. I eat it on salad, with quinoa or on crackers or chips. It’s SO good! Sometimes I change up the flavors for something different. Smoked hot paprika is an awesome addition!
My go-to for a quick and easy recipe is quesadillas with a Mediterranean twist! I use a whole wheat tortilla and fill it with olives, feta, onion, oregano and tomatoes. Comes together in about 5 min and always hits the spot! I would love to win a copy of the book for new workout ideas to mix up my routine!

My husband and I both enjoy broccoli, quinoa, and cheddar cheese quesadillas! I top mine with greek yogurt and he leaves it plain. They come together quickly and fill you up better than regular quesadillas.

My favorite easy, tasty recipe is for bbq chicken wonton cups. As long as I have the ingredients on hand, it only takes about 15 minutes to assemble and bake!

One of my favorite simple go-to recipes is Crockpot Chicken Enchilada soup. Crockpots are the simple dinner MUST HAVE! Easy recipe: The faux Chipotle bowl – microwave brown rice, any greens on hand (romaine, spinach), black beans (or frozen veggie steamers), salsa, avocado and cheese.

My go to easy meal is ground meat with tessamae’ marinade/dressing mixed in served with roasted veggies. Easy and quite delicious!
I would love to read more about Gina’s background and all of the diets and fads she tried that failed. My favorite easy recipe is salsa fish. Bake some fish with salsa on it and put it on top of black beans. So good!

Her book looks awesome! I definitely think I’m realizing as I get older, and life gets busier, I need workouts like those! I need something quick, efficient, and not boring! Right now all I do is run, so I’d love something that could teach me to love throwing other workouts into the mix!

Right now my go to quick recipe is cubing up some chicken breasts and then dumping them in a saucepan with a whole jar of pasta sauce. I put the lid on and it all cooks together in approx 15 minutes. I also sometimes throw some veggies in there as well to steam while it is finishing up cooking. It’s super fast and easy!
I want to win her book bc I have been seeing it everywhere and think it would be an awesome addition to my collection! I am also studying for my NASM test and am planning to start coaching at a local gym in the next few months, so anything that can help me I will take!
My favorite quick and filling recipe is the 3 ingredient pancake: one egg, almond butter, mashed banana. Top it will some goodies like crushed walnuts and a little maple syrup…what’s better?

I love greek yogurt with fruit, and I d love copy becaue I’m in a workout/diet rut and I need some inspiration! I’ve heard great things about her book.
Actually, one of my go-to recipes (I make it 1x per week b/c my fiancé loves it as well and it makes easy to grab lunches!) is your BBQ Meatloaf! We do all kinds of ground meat – turkey, chicken, beef etc. and I’ve pinned and recommended that recipe to a lot of co-workers! I know it by heart now so prep takes less than 10 minutes and then it’s in the oven baking away.
I love to throw vegetarian gumbo in the slow cooker and then just eat it for dinner after the slow cooker does all the work!! I just started getting serious about losing the baby weight and this book sounds like the perfect way to keep it going!

Go-to easy meal would have to be chicken stir-fry…just throw chicken and whatever veggies I have on hand into a skillet and add sauce and rice!
I’ve had my eye on the book to help with travel and at-home workouts – I do really well when I can get to the gym and stick to my routine, but I struggle when I’m traveling or unable to make it to the gym and I think having these workouts would help immensely!
I love making any type of soup!
I love a quick chicken or egg salad. My quick and dirty version is chicken, greek yogurt, siracha, salt & pepper. That’s it. I usually top it with some sliced veggies on a piece of toast rather than dicing them to put in the salad itself.
Quesadillas have never let me down either.
I heat up a can of black beans with cayenne pepper, cumin and oregano and top it with a quickly sauteed zucchini and some greek yogurt.
This book looks great. For an easy go-to recipe I take a tortilla, fold it in half, place on a cookie sheet, throw on some marinara and a bunch of veggies, put it in the oven and there you have it, “pizza”.

When I get home from the gym, I am usually starving and don’t have much time to waste. My go to meal is half an avocado, shredded chicken (that I prepped earlier in the week), cut up celery and peppers mixed together and then either stuffing it in a wrap or putting it on top of a bed of spinach.

I don’t know if it really counts as a “recipe” but my husband and I love burrito bowls (term used loosely) for an easy and simple meal. We use quinoa as the base, roast some veggies seasoned with chili powder, smoked paprika, salt, pepper, and a little cumin, heat up some black beans with cumin. Portion each component into bowls, top with shredded cheese, salsa, and avocado
