When I’m looking for new recipes, my main requirement is that a recipe be simple. I am not one who likes to slave away in the kitchen (unless it’s for a special occasion!) and easy peasy recipes that come together in 20 minutes or less are the kind of recipes I frequently gravitate toward week after week. When I found these Thai chicken lettuce wraps in The Fitnessista’s new book, HIIT It!, it was pretty clear to me that they could be assembled in less than 10 minutes.

Description

Thanks to simple preparation, this recipe comes together in less than 10 minutes!


Ingredients

Scale
  • 2 tablespoons nut butter of choice (I used almond butter)
  • 1 tablespoon milk of choice (I used coconut milk)
  • 1 teaspoon tamari
  • 1/2 teaspoon honey
  • 1/4 teaspoon garlic powder
  • sea salt to taste
  • pepper to taste
  • 4 large leaves romaine lettuce
  • 1 cup shredded chicken
  • 1 sliced bell pepper
  • sliced pineapple
  • 1 tablespoon fresh mint
  • 1 tablespoon fresh cilantro

Instructions

  1. In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
  2. Add the chicken and toss to coat
  3. Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
  4. Roll up and eat like a taco

Notes

Serves One (Recipe source: HIIT It! by Gina Harney)

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.

Thai Chicken Lettuce Wraps Recipe

Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!

Fitnessista Book HIIT It

Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.

The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.

Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.

Fitnessista Workout

There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!

HIIT It workout

The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

    My go to is my favourite burrito! I wrap up quinoa, tahini , veggies and avocado in a wheat or brown rice tortilla and press it in my waffle maker for 5 minutes 🙂

    My favorite easy peasy recipe is peanut butter chicken! I just sauté some pepper and then add in a baked/diced chicken, some ginger, and PB2, put it over quinoa or brown rice and boom a perfect dinner!

    Idk that I’d call it a recipe exactly… but I’ve been using rotisserie chicken, shredded and sprinkled with Italian seasonings, and adding it, together with mozzarella cheese and turkey pepperoni, to spinach for a “pizza-like” salad, topped with olive oil and vinegar dressing. Its super-fast!

    My easy go to meal is sautéed veggies (whatever is in the fridge) with sausage over pasta or rice! I can always use more ideas when it comes to simple meals and great HIIT workouts!

    My easy go-to recipe is hummus chicken! Two ingredients, throw it in the oven and you’re done! I’d love to have a copy of HIIT it to help me get on track after having a baby about a month ago!

    My fiance and I are big quesadilla fans and it’s so easy to make! Throw some veggies in them and bam, easy and healthy (depending on how much cheese you add haha!) meal!

    My favorite quick meal is breakfast for dinner! An omelet can hold any random leftovers- black beans, chicken, ground turkey, chopped up veggies… the possibilities are endless.

    Roasted veggies! Pop them in the oven for 30 min ! With lemon and parsley baked chicken! and I would love to win the HIIT book because I’m out of new ideas for HIIT! 🙂

    Favorite recipe is mini italian meatloafs! Instead of using a lof pan use a muffin pan. Cooks in 20 mins and you only dirty one bowl to prep!

    My current go-to recipe is sautéed veggies and half a piece of ham over a bed of salad, with toasted baguette and cheese on the side. Yummy and healthy!

    I just started incorporating HIIT workouts into my routine, and have fallen in love with it. What a great way to get cardio in during the winter! Would love some tips on how to make these workouts more effective 🙂

    I’m totally with you on the pineapple and meat thing- those two should just not go together! The avocado swap sounds right up my alley!

    I have been gravitating towards what I call a “quinoa bowl” for dinners and lunch! Quinoa, sautéed veggies, black beans or garbanzo beans, and whatever spices I’m feeling! Quick and easy, plus it reheats well if I take it to work for lunch.

    I guess my easy weeknight recipe is bison burgers with a little Trader Joe’s seasoning and I would love a copy of that book – I’ve followed Gina’s blog for a long time and it looks like a valuable resource for nutrition and exercise guidance!

    My easy meal is a salad. I just layer the lettuce, veggies, and left over meat from the previous nights dinner. 2 minutes and dinner is served!

    One of my favorite easy recipes is chicken or pork stir fry. I buy frozen stir fry veggies and add lightly seasoned chicken and soy sauce for the perfect fast and healthy meal.

    I want to win a copy of HIIT It! because sometimes I lack motivation when planning my workouts which ends up in me moseying around the gym wasting time. I would also like to learn more about HIIT workouts and regularly add them in to my gym rotation.

    Omelette (or a scramble, since I can never get the foldover part). My lazy dinner nights of eggs, veggies, hummus and pita chips!

    I’ve fallen into the constant-cardio trap and I need something to snap me out of it. Not only is it exhausting, it’s not producing the results I want! I want some HIIT workouts so I actually look forward to the gym!

    1.What is one of your favorite go-to easy peasy recipes?
    Saute lean ground turkey meat — mix with sauces or spices to your desire, my recent favourite is adding tamari soy, teriyaki and sriracha hot sauce and a bit of honey to sweeten it — and then serve over a bed of brown rice or just some stir fried veggies (such as bell peppers, spinach, broccoli, bok choy — really whatever is in your fridge). It’s so simple, lean and filling!

    2. Why do you want to win a copy of HIIT It?
    I want to win a copy of HIIT It because I get stuck in food ruts — eat the same thing over and over, even if I love what I am eating, I think it’s good to change things up. I feel HIIT It will not only help me with my cooking ruts, but it will also help change up my current workout rut!

    1. Salsa verde chicken. Grab a rotisserie chicken and a jar of salsa verde and it’s the easiest thing in the world.
    2. Right before Christmas I found out I was pre-diabetic and I have really been working hard to revamp my eating and workout habits.

    1. Pork carnitas! Throw boneless pork shoulder, onion, orange, and spices into a crockpot, leave it for 6-8 hours, and you have tender pork carnitas for a burrito, tacos, or a burrito bowl!

    2. I usually only lift weights, but should get some cardio in. An HIIT book would be great to squeeze in some cardio work!

    My favorite easy-peasy go-to recipe is super weird, but I like it haha.
    QUINOA BOWL
    1/2 cup cooked quinoa
    2 slices of turkey bacon
    1/2 cup of broccoli
    1/8 cup shredded mozzarella
    hot sauce
    It’s easy, tasty, and (if the quinoa is already made) it only take about 5 minutes.
    I would love to win the HIIT IT! book! I actually just saw it today at Barnes and Noble for the first time, and I was in a hurry so I didn’t have time to buy it, but I am so interested and I would love to have it! I need more HIIT workouts and clearly I need some real recipes since my go-to recipe is quinoa and random stuff in a bowl haha!

    my go to quick meal is buffalo chicken lettuce wraps in the crockpot! 🙂
    i would love this HITT book but im a pe teacher and like to switch up my workouts for my kiddos so they dont get bored and i love all the ideas i can get! 🙂

    My favorite easy peasy recipe would have to be the Maui Wowie Chicken from the LoonySpoons cookbook. Even though you are adverse to adding pineapple with meat this one pot dish is seriously delicious! All it requires is one big pot, chicken breast, a bunch of fresh veggies chopped up , quick cooking brown rice and of course pineapple tidbits! So fast, so easy and so so yummy!
    The HIIT book sounds like something right up my alley! I really enjoy those types of workouts and it would be great to reference Gina’s book for new workout and recipe ideas!

    1.What is one of your favorite go-to easy peasy recipes?

    My favorite go-to recipe is quesadillas. There are so many different kinds and options. I like to pre-cook some chicken for the week on Sunday to have on hand. I shred or cube the already cooked chicken, add some bbq sauce, avocado, onion and cheese, and grill on my panini press. Serve with a side of veggies and its a quick delicious meal!

    Another awesome giveaway!!!

    1. Anything in the Crockpot! It has literally changed my life because the last thing I want to do after getting home from work is slaving away in the kitchen or waiting an hour (or two) while its cooking. I just throw everything in the Crockpot in the morning then when I get home, it’s time to eat!

    2. I really want to learn more about nutrition. I grew up in a household where I was allowed to eat anything I wanted and never truly learned what a healthy, balanced meal looks like. I think this book would help me immensely!
