When I’m looking for new recipes, my main requirement is that a recipe be simple. I am not one who likes to slave away in the kitchen (unless it’s for a special occasion!) and easy peasy recipes that come together in 20 minutes or less are the kind of recipes I frequently gravitate toward week after week. When I found these Thai chicken lettuce wraps in The Fitnessista’s new book, HIIT It!, it was pretty clear to me that they could be assembled in less than 10 minutes.

Description

Thanks to simple preparation, this recipe comes together in less than 10 minutes!


Ingredients

Scale
  • 2 tablespoons nut butter of choice (I used almond butter)
  • 1 tablespoon milk of choice (I used coconut milk)
  • 1 teaspoon tamari
  • 1/2 teaspoon honey
  • 1/4 teaspoon garlic powder
  • sea salt to taste
  • pepper to taste
  • 4 large leaves romaine lettuce
  • 1 cup shredded chicken
  • 1 sliced bell pepper
  • sliced pineapple
  • 1 tablespoon fresh mint
  • 1 tablespoon fresh cilantro

Instructions

  1. In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
  2. Add the chicken and toss to coat
  3. Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
  4. Roll up and eat like a taco

Notes

Serves One (Recipe source: HIIT It! by Gina Harney)

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.

Thai Chicken Lettuce Wraps Recipe

Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!

Fitnessista Book HIIT It

Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.

The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.

Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.

Fitnessista Workout

There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!

HIIT It workout

The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

    My go-to is a super quick wrap. I use the Joseph’s flax wraps with hummus, mustard, turkey, and some veggies and I’m good to go!

    This book sounds perfect for me. I am a newlywed and am having a hard time incorporating exercise into my new routine. All of the workouts I used to do seem so boring to me now. Plus I always looking for new healthy recipes, especially now that I have someone else to cook for. Please pick me!

    My go to is shredded salsa chicken in the crockpot with fresh cilantro. You can pretty much do anything with it from soup to putting it over rice and making enchiladas. Absolute easy peasy yumminess! HIIT is my go to work out and we have a love hate relationship. Would be great to get some more HIIT workout ideas….

    This book sounds great & very informative. My go-to quick & easy meals would gave to be breakfast for dinner (usually eggs with lots of veggies, salsa & avocados & a toasty English muffin on the side) or a snack dinner with an assortment of crackers, hummus, cheese, salami & olives – yum!

    I love eggs for dinner- burritos, frittata, fried, any you like ’em! I’m very intrigued by Gina’s book. With my work schedule I’m always in need of an efficient workout that can be done anywhere. Plus, I’m dying for that famous macaroon recipe… 🙂

    Eggs! Scrambled, fried, in an omelet. On super busy days I’ll eat eggs for at least two meals of the day :/
    I’m trying to save money for the next few months which means no gym. The at home workouts in Gina’s book would be perfect for that!

    My favorite go to easy recipe is Ragu Traditional spaghetti sauce with pasta and steamed broccoli mixed together!

    And I want to win HIIT! IT because I know I need to switch up my workout routine that consists of the same cardio and 2 strength training workouts haha. and this book looks awesome to help me do so!

    my easy meal is anything in a crock pot. I would love this book because HIIT is my best method of working out. I have a 2 year old, one on the way and no gym membership so HIIT is what I do!

    My favorite easy peasy go to recipe is veggie chili! Maybe not in the summer time haha, but it’s my favorite in the winter. Just throw some stuff in a pot and let it simmer – nothing is so easy!
    I would love to win this book because I recently found my love for HIIT workout classes at my gym, I certainly think this book is right up my alley! I also have a love for a whole foods diet which sounds similar to what she has, with the exception of meat, but I’m a vegetarian so I can easily find substitutes!

    I like just cooking a simple hamburger and adding toppings like tomato and avocado for a simple meal. Usually some broccoli on the side too. I want a copy of Gina’s book so I can learn more HITT style workouts as I have recently been trying them out.
