Easy Lemon Vinaigrette

It’s summertime which means salads are making a serious comeback in my life. Keeping the oven OFF when the sun is blazing outside is way more appealing than heating things up in the kitchen. For the past week, we’ve had salads or sushi for dinner nearly every single night! This easy lemon vinaigrette is the perfect salad dressing for those summer days.

Fresh Summer Salad

Since we’re currently living in temporary housing, the easier the meals are right now, the better. I didn’t pack any of my kitchenware or cooking supplies (except for a blender), so I’m left to prepare meals with the minimal supplies we have available to us in our temp apartment since I don’t want to go out and buy a bunch of things we already own.

So yes, salads have become a staple in my life right now! There’s nothing easier or fresher out there and I love packing a bunch of fresh, seasonal produce into my afternoon or evening meal.

Strawberry Spinach Salad

Since I have a feeling a bunch of you out there share my desire for ridiculously easy meals, I wanted to share a salad dressing I whipped together for the first time back in Ocala that has resurfaced with a vengeance over the past week.

It’s simple to throw together and contains ingredients you likely have sitting in your pantry right now.

Salad Dressing Basics

It tastes light but creamy and is quite tangy and very flavorful. The perfect complement to a salad packed with fresh summer fruit and crunchy nuts!

Easy Lemon Vinaigrette

Makes approximately 1/2 cup of vinaigrette

Ingredients

  • Juice of 1/2 large lemon (or 1 small lemon)
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon garlic salt
  • 2 garlic cloves, minced
  • freshly ground black pepper, to taste
  • 1 1/2 teaspoons honey
  • 2 heaping teaspoons plain Greek yogurt (2 percent or full-fat preferred)

Directions

  1. Combine all ingredients in a small bowl and stir vigorously until adequately combined.
  2. Pour on top of salad or store (covered) in the refrigerator. (Use within one week.)

    Your salad looks yummy–what all did you put in it? Will you share the details? I am kind of new at making fun salads so any help/recipes you can provide would be of great help to me. I can’t wait to try to vinaigrette recipe.

      Yes definitely!! I am actually planning to do a round up post of summertime side dishes so it will be in that post in more detail! But it was just a base of the spinach topped with strawberries, pears, goat cheese and raw almonds!

    i make a super similar salad dressing all the time, but use dijon mustard instead of greek yogurt. i’ll have to try the yogurt version instead!

      I think you could honestly just omit it!! But I bet sour cream or mayo would work as well though I’m not sure those will appeal to you. I would try it without anything first!

    Looks delicious. I’ve been throwing together a simple dressing with just olive oil, balsamic or white wine vinegar, honey, salt and pepper. Hooray for craving salads in the summertime!

    Vinaigrette dressing is probably MY FAVORITE. I remember when I was pregnant….I was all over that stuff since it was one of the few things that would help the nausea go away. Haha! 😀

    I make this exact salad but I have a little different take on it…I use raspberries instead of strawberries and I use raspberry balsamic vinegar…if you’ve never had it you will really enjoy it!! I also use more vinegar than olive oil, makes it a little less calorie dense so I can use more dressing, he he.

    This looks so tasty! I love that there is no added sugar and it is all healthy and clean! I looked at the back of a salad dressing bottle and the supermarket and was surprised to find that there was so many artifical ingredients and so much sugar!
