No Bake Breakfast Cookies

Last week, I had a meeting/brain storming session to attend with some of my fellow group exercise instructors and personal trainers at the gym. We were all asked to bring a healthy snack to share and that’s all the encouragement I needed to feel inspired to head into the kitchen and experiment a little bit! That is when these no bake breakfast cookies came about.

I whipped up a batch of my Healthy Greek Yogurt Veggie Dip but also wanted to bring something with a little sweetness to share. I know a bunch of my coworkers teach early morning fitness classes like I do and are always in the market for grab-and-go breakfast ideas, so I figured I’d make a snack that could also double as a breakfast recipe. And these no bake breakfast cookies were born!

Healthy No Bake Cookies Recipe

Though the cookies may look like they’re speckled with chocolate chunks, they are actually made with raw cacao nibs, a super food containing a rich supply of antioxidants, magnesium, fiber (one ounce has nine grams!) and iron.

Cacao Nibs

Cacao nibs are chocolaty, crunchy and give these cookies that chocolate chip cookie taste without the added sugar.

Description

Though the cookies may look like they’re speckled with chocolate chunks, they are actually made with raw cacao nibs, a super food containing a rich supply of antioxidants, magnesium, fiber (one ounce has nine grams!) and iron.


Ingredients

Scale
  • 8 dates (pits removed)
  • 1/2 cup oats
  • 1/4 cup + 1 tablespoon almond butter (or nut butter of your choice)
  • 3 tablespoons unsweetened coconut flakes
  • 1 tablespoon honey
  • 2 tablespoons cacao nibs

Instructions

  1. Combine all ingredients except for cacao nibs in a food processor.
  2. Pulse until a thick “dough” is formed. (Depending on the consistency of your nut butter, you may need to add a little more to get everything to stick together.)
  3. Add cacao nibs to dough and shape into cookies. Refrigerate for at least one hour. Enjoy!

    There is something inherently superior about the consistency of no-bake anything. I guess because cookie dough is better than baked cookies – so why involve your oven in the first place? 🙂

    If I have to grab and go I will usually just grab a protein bar (Perfect Bars and GFBs are my faves!). I toyed w the idea of making breakfast bites this weekend, but when I realized my dried blueberries were bad, I decided to hold off haha.

    I like using cacao nibs, but not exclusively because I don’t like their taste that much. They taste like alcohol to me for some reason and are definitely a little bitter, so I like to combine them with mini chocolate chips to balance it out. Thanks for sharing this recipe!

    LOVE!!! I have a slight obsession with my new food processor so any excuse to use it is a good one and these breakfast cookies look delicious!

    My favorite grab-and-go breakfast is a warmed whole wheat tortilla with almond butter, banana slices, and a sprinkle of cinnamon. Takes 30 seconds to make and I can eat it in the car on the way to work! Yum! 🙂

    I’ve been wanting to try cacao nibs! I’ve been seeing them everywhere lately. I love Belvita breakfast cookies, Larabars or greek yogurt if I’m in a hurry, but I almost always find time to make breakfast…. or my fiance spoils me and makes it for me since he gets up earlier than me 🙂

    Julie- I emailed you a few weeks back, and was curious if you got it? I took a lot of time to write it so I just wanted to make sure it did not get oat in translation. 🙂

    As for these cookies, they sound scrumptious! Especially if they are labeled breakfast cookies. I like knowing I can wake up and immediately grab a cookie!

    These look so good and I love the addition of cacao nibs! I will have to try to make a nut free version (my daughter has a sensitivity). Maybe more coconut and/or coconut butter? What do you think?
    Breakfast is, hands down, my favorite meal of the day so grab and go options make me sad. If I had to pick one though, I would choose a veggie frittata muffin (or two!) with fruit.

    Love these!! I typically make them with or without chocolate. Great idea to use cacao nibs instead. I’ll have to start incorporating those for a bit of sweetness!

    did you use sweetened or unsweetened cacao nibs? I’m trying to figure out which ones to buy because i’ve been wanting to try them for awhile, and am not sure if unsweetened ones would actually taste like chocolate or if they would just be super bitter and gross.

      I used unsweetened, but they are definitely a bit bitter! I actually like REALLY dark chocolate though, so you may be better off with the sweetened version.

    What kind of oats do you use? Have you ever tried substituting the dates with figs, raisins, or dried apples? Can’t wait to try, thanks!

      I used Quaker Old Fashioned Oats and they worked great! 🙂 And I haven’t tried making them with another dried fruit but I think that’s a great idea. If you give it a go, please let me know what you think!

    A girlfriend of mine dropped off some “energy balls” similar to these last week; we recently adopted a baby boy – yayyyy! I can’t tell you how helpful it is to have these types of foods around. Just to grab and eat quickly. If you have a chance to stock your freezer with these, your future self will thank you. :0)
