This butternut squash soup is deliciously creamy, vegan and dairy free. Your whole house will smell fantastic as you prepare a batch of this comforting soup!

Butternut Squash Soup Recipe - Vegan and Dairy Free

The onset of slightly cooler temperatures in Charlotte has me feeling way too excited for fall. Bring on pumpkin-flavored everything, apple cider, beautiful leaves and crisp, chilly autumn air! I am ready!

With cooler temperatures comes warm, comforting dinners in our house. When it’s 90 degrees outside, it can be hard to get excited about soup or chili or hearty crock pot meals, but now that fall is nearly upon is, homemade soups and stews will surely become a staple in our house. And when I can incorporate some seasonal flavors into the mix, that’s all the better!

Butternut Squash Soup Recipe

Butternut squash is a personal favorite. It’s a slightly sweet, nutty-tasting squash packed with fiber, potassium, vitamin A and vitamin E. It’s absolutely delicious and wonderfully comforting when pureed into a homemade soup.

Cubed Butternut Squash

This soup is full of vegetables and absolutely bursting with fall flavor. Preparing this soup will make your house smell like Thanksgiving!

It’s vegan and dairy-free, but still quite creamy and satisfying. Pair it with a side salad and you have a tasty meatless meal that simply screams fall!

Description

This butternut squash soup is deliciously creamy, vegan and dairy-free. Your whole house will smell fantastic as you prepare a batch of this comforting soup!


Ingredients

Scale
  • 1 teaspoon olive oil
  • 1 small onion, diced
  • 2 celery stalks, diced
  • 1 large carrot, diced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon rosemary
  • 6 heaping cups peeled and cubed butternut squash
  • 2 cups Silk Unsweetened Almondmilk
  • 2 cups reduced sodium vegetable broth
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Chives or roasted pumpkin seeds for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot. Add onion, celery and carrots and cook until onion becomes translucent, about 4 minutes. Add thyme and rosemary and toss to coat vegetables.
  2. Add remaining ingredients and bring to a boil. Reduce heat and allow soup to simmer for approximately 40 minutes.
  3. Use an immersion blender to puree soup until it is thick and no chunks remain.
  4. Top with fresh chives or pumpkin seeds and enjoy!

    So tell me, did you peel and cube the butternut squash? I always feel like I’m going to chop off my finger or break my knife when I work with butternut squash. I’ve given up and buy pre-cubed or frozen. Any tips???

    This is another favorite(and super easy) butternut squash recipe that I’m sure you could use Silk instead of regular milk!

    Hungary is full of butternut squash right now and I love to use it whenever wherever I can! Substituting it for pumpkin in desserts and soups is probably my favorite fall activity! 😀 I must try this recipe now!

    Yum! Butternut squash soup is one of my all time favorite comfort foods, and I love that it fits into the Meatless Mondays challenge too! I’m living in the tropics right now, so these sorts of fall favorites don’t get cooked very often, but I can’t wait until I’m back in a place where I can enjoy the changing seasons.

    This looks fantastic! It’s still in the 90s here in Denver, but I have been making fresh sweet potato fries non-stop. The second it gets a bit cooler, and I’m willing to make more warmer foods, this will absolutely be a part of the repertoire! Yummin’!

    Julie, try adding a Granny Smith apple , peeled and diced and cook it in with the squash. It adds a lovely flavour. Got the recipe from the chef at Chateau Lake Louise. Did Sadie do well with her surgery?

      OOOH!!!!! I am definitely doing this next time! Sounds amazing! And thanks so much for asking about Sadie. She is recovering well and ended up having three lumps removed. We should hear back from the vet with her results by Friday. <3

    Mmm this soup looks so delicious! and I love My Silk unsweetened almond milk, I use it in everything! I love buying the pre-packaged butternut squash from Trader Joes. It is already cut up and everything, makes cooking with it so much easier!

      Yes! I think a high-powered blender would work, but you may have to do it in batches since it makes a lot!

      If you’re interested, you can buy an immersion blender for under $20 at Walmart! (Mine broke last week so I just bought a new one.) Not the best quality, but if you’re not sure if it’s worth the investment it’s an easy way to test it out!

    I have never cooked butternut squash before, but this recipe seems simple and delicious! I’m still in denial that fall is almost here…where did the summer go!!?? Also, how was Sadie’s surgery? I hope all is going well with her and the results are negative–she seems like such a sweet pup!
