This recipe for chocolate peanut butter chia seed pudding is a delicious dairy-free dessert made with fiber-rich chia seeds, creamy peanut butter and cacao powder and is sure to satisfy your sweet tooth in a healthy way. Chocolate Peanut Butter Chia Seed Pudding Recipe

Chocolate and peanut butter are a match made in heaven. I find myself pairing the two together on an almost daily basis. Chocolate peanut butter smoothies. Dates topped with peanut butter and a sprinkle of chocolate chips. Cocoa oatmeal with melted peanut butter. Chocolate peanut butter banana soft serve.

So why not chocolate peanut butter chia seed pudding!?

I’ve shared a handful of chia seed pudding recipes on the blog before and feel like I am continually playing around with different flavor combinations and ingredients. I think it’s time we gave chocolate and peanut butter the chia seed pudding spotlight.

Chia seed pudding has been a favorite of mine for years. I love it for breakfast, a mid-morning snack and dessert and this chocolate peanut butter chia seed pudding has quickly become my go-to recipe. You can change things up and use your favorite nut butter in place of the peanut butter, but I like to keep it classic and typically opt for creamy or crunchy peanut butter.

Description

This recipe for chocolate peanut butter chia seed pudding is a delicious dairy-free dessert made with fiber-rich chia seeds, creamy peanut butter and cacao powder and is sure to satisfy your sweet tooth in a healthy way.


Ingredients

Scale
  • 1/4 cup chia seeds
  • 2 tablespoons + 1 teaspoon cacao powder
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon peanut butter (plus more for topping)
  • 1 1/4 cup unsweetened coconut milk

Instructions

  1. Combine all ingredients in a small bowl and stir together
  2. Refrigerate until mixture thickens, approximately two hours (or overnight)
  3. Stir chia seed pudding, top with a drizzle of melted peanut butter and enjoy

    I’d love to try out some of the healthy foods! We have Wegman’s up north, which has great organic, natural options, but can be limited!

    AND…my gym has an eating program, where we share recipes and ideas for better eating habits. A friend and I love tweaking chia pudding recipes. and have discovered that replacing half of the milk with kefir (plain or flavored) adds an extra protein punch and creaminess to the recipe! Over the fall, I found pumpkin spice kefir (OH MY GOSH) and threw in extra pumpkin puree, spiced it up, and threw walnuts on top. Game. Changer.

    I would load up on chia seeds (I use them for overnight oats but still haven’t tried chia seed pudding yet!), multivitamins and melatonin (a must have for me for decent sleep)

    I would love to stock up on my smoothie essentials such as chai seeds, ground flax seeds, goji berries and peanut butter so I’m all ready for heathly smoothie when our first born arrives in April! Smoothies are such a quick and easy way to get lots of essential nutrients and having a stockpile of the ingredients on hand would be helpful with a new baby on board!
