Coconut Ginger Curry Brown Rice Bowl

My love affair with coconut milk continues and last night I made a dinner that centered around the creamy, flavorful milk. I made a coconut ginger curry brown rice bowl which is tasty and also vegan.

Coconut Ginger Curry Chickpeas

I actually used light coconut milk in the dish but it still tasted decadent!

I jotted down the ingredients and measurements of everything as I cooked just in case our dinner ended up tasting good enough to share and I realized that this dinner is both vegetarian and vegan. And delicious!

Description

I loved the blend of flavors of ginger and curry and the crunch from the chopped cashews. This meal was also quite filling!


Ingredients

Scale
  • 1 13.5-ounce can light coconut milk
  • 1 15-ounce can chickpeas, drained and rinsed
  • 1/2 large onion, diced
  • 1/2 tablespoon olive oil
  • 3 cups broccoli florets, chopped
  • 1/2 cup roasted cashews, chopped
  • 3/4 teaspoon ginger
  • 3/4 teaspoon curry
  • 1/2 teaspoon garlic salt
  • 1 cup cooked brown rice

Instructions

  1. Heat olive oil in a pot on medium high heat. Add onion and broccoli and stir for approximately 5 minutes, until onion begins to soften.
  2. Add cashews and chickpeas and stir for another minute. Pour in coconut milk, ginger, curry and garlic salt. (You may add additional spices if desired or increase the amount of spices to taste.)
  3. Allow to cook on low for approximately 20 minutes. Add brown rice to pot and stir.
  4. Scoop rice mixture into bowls and enjoy!

    Coconut and curry are two peas in a pod. They are just amazing together. This dish looks super tasty. Definitely saving it.
    Surprisingly coconut milk is good in chili. Sounds weird, but I added a bit for my last batch and it tasted so good!

    Ooh, nice. My fiance and I are both vegetarians, and we’ve been talking about making a dish with coconut milk. And something like this would be perfect.

    Anyone know if Trader Joe’s still carries a light coconut milk?

    I madecilantro lime rice with coconut milk last week and omg…it is so creamy and delicious! I’ve been meaning to try it out ever since seeing you use it quite a bit lately. I’ll have to try this one out as well!

    I have to say that light coconut milk is too watery for me. I’m hooked in the regular stuff and it makes for a killer Tom Kha soup, give it a whirl if you never have!
